I am finally able to post a sake from my hometown, Tajima. It is a hiyaoroshi from Konotomo Sake Brewery in Kakoya, where my great-grandfather was a toji (master brewer) during and after the war. Since I was a child, I have had amazake and kasu-jiru made with sake lees from this brewery, and I used to snack on sake lees baked on the oil stove and dipped in sugar.
I have experienced many things over the years, and have drunk wine and other alcoholic beverages, but this is the kind of sake that makes me feel nostalgic even after meeting it again for the first time in a long time.
It is soft and gentle, with a hint of sweetness that makes it very easy to drink. It is recommended to be chilled or at wine temperature of about 15°. I think it is a mountain sake in terms of location, but it is delicious with fish.
Don't let the sake travel, long live the local sake 🙌
I deeply, deeply and always believe that it is the style of a sake drinker to visit the hometown of great sake from here.
Junmai-shu (Junmai sake) x 65% polished rice x Hyogo rice...
Aroma: Moderate, natural aroma of rice. More "fullness of rice" than fruity.
Taste: More "light and umami" than dry, with sweetness and richness of rice and a crisp mouthfeel.

I had a drink at an event at Kobe Hankyu in the past.
It was sweet and fruity, but also a little matured because it had been aged for a few years, so it had a classic feel.

Very dry. There is a hint of sweetness from the rice in the middle of the taste. The aftertaste is a little spicy. It is crisp and tasty without much of a tang.
I encountered it when I went to Kinosaki.
It is said that it is not widely available even in Hyogo Prefecture.
It is true that I had never seen it even in the Yabu area.
