The sake I bought back from Tottori. Oh... it's a Junmai Ginjo, but it doesn't have a Ginjo aroma... Aged scent? Yes, it's actually a sake that's been aged for 3 years. Aged sake usually has a harsh aroma for me, but But this one has a gorgeous aroma and a soft taste. It's an excellent product for beginners of aged sake.

Koikawa Shuzo Junmai Ginjo Kamejikohi 720ml Rice : 100% Kame-no-o produced in Yamagata Prefecture Rice polishing ratio : 55 Alcohol : 15.3 My wife entered this sake in a CS historical drama program and won it. It is said that this sake brewery is related to the writer Shuhei Fujisawa. This is also some kind of fate. Now, what does it taste like? It is quite classical. My wife said it was just fine. It is best to warm it up a little.

"Believing in something is a responsibility. Even if the result of believing is not as you expected, it is your responsibility. "I don't recommend it as a liquor store. But if you're buying it for yourself, you might want to keep it at room temperature before drinking it, even though it's raw sake. Even if it fails, it is my responsibility to make the right choice, so don't worry. It's been one month since I stored it. The color is yellowish and reminds me of a strong taste. The aroma is fermented and ripe. In the mouth... the taste is juicy and complex, a true taste of rice! The initial specs are that it is a little dry, but as it ages, the sweetness is brought out and it is very Tsuchida-like. It has the flavor of a dense, rich, umami flavor that brings out so much of the rice flavor, and the flavor deepens more and more to the point that it cannot be described in a single word." This flavor!" The taste develops further from the point where the tongue catches it. On the other hand, if you put it in your mouth and drink it right away, you will be surprised at how easy it is to drink. This is too good to be true... I'm glad the drinker believes in the drinker... Next year, I'm going to try drinking it refrigerated. I wonder what it will taste like. PS...After another month of opening the bottle, a nice fermented aroma comes out. This one's good too!

The name is Motooi no Matsu. It doesn't say it, but the rice is Miyamanishiki. The sake shop's website says the sake content is -11, but I didn't feel it was that sweet. It's clean and clean, with a slight honey-like sweetness. It has an excellent balance of umami and acidity. It's a bit light for a raw sake. It says "light" on the back label. The label on the back says it is light. Is it a strong sake that can withstand aging?

ume (plum) unripe plum blossoms boiled in soy sauce with mirin Delicious. Sweet aroma of grape type + yogurt. Numb but soft on the tongue. The flavor is strong, yet not cloying. Purchased at Mikiya, a direct sales store near Umeichirin Sake Brewery. They sell Ume-Ichirin sake, sake cups, and other goods, but they also sell boxed lunches and other items, just like a convenience store. I bought this one, which had a pop-up sign saying it was the most popular. I found out about this place at a bar in Matsumoto the other day, and since it is a sake brewery in Kujukuri, I went there since it was the GW season and Kangiku was close by. The back of Cheeba-kun's head. Umeichirin Sake Brewery is doing quite well for a local sake and is expanding nationwide. I heard from another nearby sake brewery (Moriya Sake Brewery) that they are expanding their business nationwide.

I see that it is read as "Sekepikozan". If I had not drank this sake, I might not have been able to read it correctly for the rest of my life. The taste is fresh and quite rich. The bitter bitterness comes out in the back of the mouth, and the taste is sharp and clean. The sweetness is modest for Aizan, and although it is not the modern type of sake, the umami flavor is very well conveyed. Not bad!

I've been wanting to try this one for a while...they use 1801 yeast. It's gorgeous and fruity. It's also quite sweet. I think it's the most gorgeous of all the Yukihikosan brands. This was over 2,000 yen at Asano Sake Shop, but at a local liquor store it was 1,980 yen🙄. I wonder what it is? I heard some breweries and stores add on shipping costs 🤔.

Sake opened at a remote off-line meeting (3) I was asked "What is the best sake you drank this year? I answered "Aozora", but later I remembered that it was the future of sake from Akabu newborn 🤣. By this time I couldn't even remember what it tasted like, so I checked again the next day. The rice used is 100% Benkei. It is a kijoshu, although there is no description. As it says, it has a thick sweet taste. Sweet and sour. I can only drink a little at a time because kijo-zake is so thick. A neighborhood liquor store owner told me that they make sake in a 200-year-old building. He said that the equipment is also old.

I bought it by weight the day after the Hankai Train Off-line Meeting. I took this opportunity to buy it because Miyakotsuru's draft sake is rarely distributed. This is an annex of a store in Fushimi that sells all of Fushimi's sake in Nihonbashi, Osaka. I wonder if the sake brewers' association is involved? The bottles come in various sizes and labels, and you buy the bottle you want and pour it. You pour the sake yourself, but since I was right on the 300 ml mark, I received a sake cup as a "Pitari" prize. The taste is melon-like with a clean mouthfeel. The long, thin and extended acidity is impressive. It is a little light and has a sweet and spicy flavor. After about a week, the flavor seems to have opened up, or rather, the flavor profile has become more defined.
