The fourth one is Nechi-Osan. This is my first time to visit this brewery. I always thought it was "KONCHI". Sorry locals! The taste of rice is well expressed, but the overall taste is clean and dry. The aftertaste is a bit peculiar, but it is good in its own way. Thank you!

OSAKA SAKE&FOOD EXPO 2024⑳ Lastly, we went to the Komatsuya booth again. Nechi from Nechiozan, which is not seen very often. There were many different rice varieties, but we chose the Koshitanrei 1st class rice 2020. Nechi is only available at authorized dealers. It was easy to drink with a beautiful taste and a hint of sweetness. The review of this event was a bit of a mess, so please refer to Nechi's post later on 🤣.

I saw it on a liquor store's installment and was completely unfamiliar with the brand, so I searched for it on Sake no Wa and found that Greissinger19 was drinking it, so I bought it. Strong gasiness. Dry, clean and sweet. Cider-like with peach and lychee flavors. Lightly sweet as written. The acidity is beautiful and the bitterness at the end is pleasant. A better sake than expected.

The Osato Sake Brewery is located in Kama City, Fukuoka Prefecture. I didn't know about this place until I came to Fukuzo. I checked and there is a Kanbokuto Brewery nearby ✨. The first aroma is faintly sweet. In the mouth, there is a refreshing acidity and juicy sweetness typical of white malted rice. It is followed by a slight astringency that finishes it off. The refreshing acidity is quite delicious.

The rice used is Gohyakumangoku and Nihonbare. If I had to describe it in one word, I would say it's "Omnivorous Japanese Sake Partridge". It has an old-fashioned flavor and an aged feeling like a hiyaoroshi. Spicy and sweet in equal measure, with a long finish. It's a sake that should be served warm. By the way, it's "Hiyaoroshi", but it's shipped all year round.

I learned of the existence of this sake through non non's post. It was a little difficult to go there because you can only buy it at the direct sales place which is open only on weekdays.... It was a nice homey sake brewery 😊. It was limited to 100 bottles and they were the last 3 bottles. It's shwashy, sweet and sour. It may be a daiginjo, but it doesn't taste like yamahai and is easy to drink.

I was curious about this one and received it for the first time. Clear crystal silver. Melon, pear, and banana predominate, and ethyl caproate is also present, but the main flavor is isoamyl acetate. The attack is strong, with a hint of sweetness, but the acidity spreads horizontally, and there is a bitter aftertaste. The flavors and tastes are multi-layered, perhaps due to the odd assemblage. Aizan sake, still stocked but a little interrupted for refrigerator reasons😅. Shochiku Ume, but brewed in Nada, not Fushimi. There's a big building that looks like a factory near Sunshine Wharf. The bottle and cap have a unique design. The aroma on the nose is quite gorgeous, with a slight nuance of peppermint. In the mouth, it has a gorgeous sweetness and a bitter spiciness. It is refreshing but has a strong personality, probably because it is an unfiltered sake.

Yahiko Sake Brewery in Yahiko Village, Niigata Prefecture. The main brand was "Echino Hakusetsu," but it appears that "Yahiko" will be the main brand from now on. This Junmai Ginjo is also made from Yamadanishiki produced in Yahiko Village, and is a good sake, not fruity, but calm and soft. Yahiko Village is where my mother is from, and I spent a lot of time there as a child when I was sent to my mother's home, so it is like a second home to me. Yahiko Shrine, the first shrine in Echigo, is located there.

Yahiko's regular sake, Aozae, by Yahiko Shuzo Sake rice is Koshibuki produced in Yahiko village. Aozae has a refreshing, watery quality. Aozae is a perfect evening sake without any peculiarities. Yahiko Shrine is the largest shrine in Echigo Province.
