This is also a 3-day record. Chiebijin was not enough, so I threw in a small bottle. This is the pink label of Yatsuka, which I have come to like! It feels more rounded than Chiebijin. Delicious!

The brewery is more impressive for its shochu Ginza no Suzume than for its sake. Tasted and purchased. It has a gorgeous aroma and is fruity even when drunk. 1801 yeast is used, making it a sweet and fruity sake that is easy to understand. I wish they would release a fresh sake of this one. I felt it was sweeter and fruity at room temperature than when it was chilled to the perfect temperature.

First Eagle of Koshi. Dry, clear and light. A little sweetness and acidity. The last taste is a bit bitter and lactic acidity. The impression is that it is a food sake type. Souvenirs from my husband's business trip to Fukui I have been enjoying it slowly since the weekend. I guess it is the type of drink I don't usually drink. I felt it was dry. Homecoming Series 10 I went to Nishioka Honten in Makabe, Ibaraki Prefecture, and purchased a BY6 unfiltered, unpasteurized sake. It is a true Ibaraki sake made from Hitanishiki produced in Ibaraki Prefecture. It has an unadorned flavor, as is typical of Supin's sake. It is dry, with a short, refreshing aftertaste! The alcohol content is 17 degrees, which is proof that it is well fermented. The aroma is not assertive, and as a food sake it is first class!

Souvenirs from Shinshin SY Among several souvenirs, I chose this one intuitively by looking at the label. He brought three four-packs of sake as a souvenir, which is a generous gesture for a business traveler who travels all over the country. I would never have been able to do such a thing with my own pocketbook. When I pour it into the cup, it is more yellow than I expected! Is this a matured type? The aroma is slightly fruity, but has a bitter, mature aroma. The mouthfeel is crisp and dry, with a light sweetness and bitterness, and a moderate umami, but the maturing aroma in the aftertaste is unique. The light sourness and bitterness in the aftertaste are quite a tricky thing to pull off. This strange taste is not one of my favorites, but it is something that makes me want to drink it again. It reminds me of that strange feeling I had in junior high school when I used to prank cigarettes behind my back. It's a treat!

We ordered at Benkei no weibasho, an izakaya near Niigata Station. This restaurant is operated by a local conveyor-belt sushi chain, and we were informed that their seafood dishes are sure to be good, so we made a reservation and visited. I was curious about this sake at Ponshukan, where I had wandered around during lunch. Niigata is known for its dry sake, but this one is quite fruity. It is not too sweet, so it goes well with sashimi. I mean, too much throat groyne!
