Souvenirs from Shinshin SY Among several souvenirs, I chose this one intuitively by looking at the label. He brought three four-packs of sake as a souvenir, which is a generous gesture for a business traveler who travels all over the country. I would never have been able to do such a thing with my own pocketbook. When I pour it into the cup, it is more yellow than I expected! Is this a matured type? The aroma is slightly fruity, but has a bitter, mature aroma. The mouthfeel is crisp and dry, with a light sweetness and bitterness, and a moderate umami, but the maturing aroma in the aftertaste is unique. The light sourness and bitterness in the aftertaste are quite a tricky thing to pull off. This strange taste is not one of my favorites, but it is something that makes me want to drink it again. It reminds me of that strange feeling I had in junior high school when I used to prank cigarettes behind my back. It's a treat!

First brand name Kita no Hana. It is a backroom deal with a sake teacher. Even if I say it is a backroom deal, he will sell me any rare sake at the same price I bought it from the liquor store, and even if I tell him I will take care of the transportation costs, he stubbornly refuses to accept it. I told them that if I sold them at a higher price, the liquor store would take me on as a reseller, and after that, they would never sell me rare sake. The fact that you can normally drink Jyushiyo at home is based on the mutual trust between the seller and the buyer. Kita no Hana, the label is very attractive. I don't detect much of the Kamitatekoso, but there is a round, unfamiliar aroma in the back of the bottle. The mouthfeel is moist, calm, and elegant with sweetness and soft umami, and the rounded aroma in the aftertaste is fruity. The acidity and bitterness are both moderate, and it has a mysterious sharpness that just flutters and closes. It is really a round, gentle and mysterious sake, and this must be one of its balances. This is also a 3-day record. Chiebijin was not enough, so I threw in a small bottle. This is the pink label of Yatsuka, which I have come to like! It feels more rounded than Chiebijin. Delicious!

The brewery is more impressive for its shochu Ginza no Suzume than for its sake. Tasted and purchased. It has a gorgeous aroma and is fruity even when drunk. 1801 yeast is used, making it a sweet and fruity sake that is easy to understand. I wish they would release a fresh sake of this one. I felt it was sweeter and fruity at room temperature than when it was chilled to the perfect temperature.

I bought a bottle of Hana-no-i special junmai sake, labeled "Thieving Cat," at Nishioka Honten in Makabe, which I stopped by on my way to the Tsukuba Rin-Rin Road on a rainy day the other day. I have had this sake before, but there is something different about sake bought at a sake brewery.

Homecoming Series ⑨ I went to Nishioka Honten in Makabe, Ibaraki Prefecture, and purchased a BY6 unfiltered, unpasteurized sake. It is a genuine Ibaraki sake made from Hitanishiki produced in Ibaraki Prefecture. It has an unadorned flavor, as is typical of Supin's sake. It is dry, with a short, refreshing aftertaste! The alcohol content is 17 degrees, which is proof that it is well fermented. The aroma is not assertive, and as a food sake it is first class!
