I have a new impression of Ehime sake 😁. I had never had much Ehime sake before, but I had an image of it being somewhat mellow and dry. This sake is completely different, it is light and slightly acidic, and together with the bitterness in the aftertaste, it is somehow like grapefruit 😊. It also has a bit of a fizzy feel and is very easy to drink as there is no unpleasant spiciness that lingers in the throat 😋. If it were a little more sour, I think I would find it too sour for me, but this level of sourness is just right 😄. I'm only one bottle away from the nationwide domination of the four-gouple bottles or more limited edition. The last one is in Osaka, when can I achieve it? 😅

Souvenirs of Iwaki I didn't know there was a sake brewery in Iwaki city😇And some delicious shiso maki (shiso rolls) ‼️ Shiso rolls are usually wrapped in miso, but this one is wrapped in takuan (pickled radish). The aroma is a typical one-cup one. The aroma of the bottle is a bit tangy 🫙. When you drink it, the stimulation to the throat is tsuyomi. The mouthfeel is not sticky and easy to drink though, The sweetness is heavy on the back of the tongue. The alcohol taste, bitterness, and a mysterious stimulation hits the throat as if to drown it out. I don't know how much it costs, but I think it is good for one cup! This shiso maki is so good 🤤. When you combine this with one cup of shiso maki, the stimulation to the throat is lessened and the sweetness is emphasized. The spiciness of the shiso roll neutralizes the sweetness. This is a pairing full of the feeling of a popular izakaya (Japanese-style pub) 🤣. I'm an uncle who is happy with this pairing 😭

The dry, light flavor and the richness of Junmai are well balanced on the palate, giving it a slippery sensation. The acidity also makes it taste slightly citrus-like 🍊. It smells like ginjo, and in a good way, it is not like Junmai! The aftertaste is also refreshing and easy to drink from start to finish👍. Yahiko Sake Brewery in Yahiko Village, Niigata Prefecture. The main brand was "Echino Hakusetsu," but it appears that "Yahiko" will be the main brand from now on. This Junmai Ginjo is also made from Yamadanishiki produced in Yahiko Village, and is a good sake, not fruity, but calm and soft. Yahiko Village is where my mother is from, and I spent a lot of time there as a child when I was sent to my mother's home, so it is like a second home to me. Yahiko Shrine, the first shrine in Echigo, is located there.

This is the fourth bottle of the accumulated contributions! As I poured, bubbles danced through the gulp, and those bubbles quickly disappeared. It smells sweet and spicy. Bon appétit! I thought it smelled acidic, but when I put it in my mouth, I felt almost no acidity and it is a gentle, soft drink. I don't feel any corners at all 🙂. The assertion is somewhat moderate sweet and spicy, and the light sweet and sourness spreads from the tip of the tongue to the middle of the tongue, but then disappears. Among the sake I've had recently, the drinkability is outstanding, and it doesn't convey much of the intoxication, making it quite a dangerous sake 😇.

Shishimai Fuunroku Part 3 The next point of rest and ga-in is Tenjo Yumegen This label commemorates the 100th anniversary of Maruka Kensetsu, located in the same area as Nakayu Sake Brewery. The contents are probably the same as the regular Tokujun, but it is only at local festivals that this kind of sake is served as a sacred sake. However, I am not sure if this label is "Yamato" or "Taiwa". It has been a long time since I have tasted Tenjo Mugen, and while it has a dry base, it is slightly sweet, has a strong umami flavor, and has a nice acidity and bitterness. Once again, I realize that it is a local sake. Thank you very much!
