For today's sake, I chose a Junmai Daiginjo from Kuchiman 😀. We compared the tasting sakes, one brought to room temperature for tasting and one kept chilled, and this one for tasting brought to room temperature might taste better than the chilled one 🤣. The chilled one is just too beautiful to swallow without anything stuck to it😅. The room temperature one spread the sweet and delicious flavor and filled my mouth with deliciousness😇

Dokure Hiyoshi Oroshi Junmai Ginjo Shimanto River Headwaters Cave Enclosure. The aroma is a mild iso-type aroma that is a bit hard, but it seems to spread with air. The pleasantly smooth nose is followed by a strong acidity and umami, which leaves a strong impact in the mouth. The hints of bitterness and calmness in the back of the aroma are also to my liking. Kinmyo Junmai Sake 60% 15-16% 720ml Kinmyo by Negami Shuzo is my new favorite sake. The acidity is up from last year. The characteristic custardiness is almost gone, and a green apple-like fruitiness has been added instead. It also has a spiciness to it. It is a different taste from last year. It is not sake, This was delicious. ‼️ It is a blend of Kasagi's yuzu juice and "Onnajojo" ginjo sake. It is so thick and sweet that you would think it was juice, but you don't feel much alcohol. It has a nice aroma and the bitterness of the yuzu makes it refreshing and easy to drink. Not bad!

I bought it at the brewery opening in March this year. The brewer told me that the flavor would be better if I let it sit for a while, so I held back until now. I have been holding back until now 😣. When I opened the bottle, I could taste the rich rice flavor and the umami was well developed. The aftertaste is clean and refreshing.
