This sake was tasted along with the Junmai Ginjo I posted earlier. We were there when the store opened on the first day of tasting and sales, so all the sakes were unsealed, so we were able to sample them in fresh condition. I recommend going on Wednesday when the store opens 😆. It is Rokumaru with 60% rice polishing ratio. It is the same as Shinomine. It has more richness and umami than Junmai Ginjo. It is suitable for warming up.

Tottori, Tottori Prefecture, Japan. Nakagawa Sake Brewery Co. Inabatsuru Junmai Sake, Namahashige, Strong. I don't remember where I bought this at the department store. I don't remember, but I tried it, liked it, and bought it. I drink it cold at room temperature. The color is clear with a slight yellowish tinge. The top aroma is a citrus aroma surrounded by a dignified alcohol aroma. The mouthfeel is clear and slightly yellow. On the palate, acidity and a slight astringency spread across the tongue, and after swallowing, one senses citrus and yogurt-like acidity, with a creamy, orange-infused yogurt-like taste. The aftertaste is sharp, lively, and pungent, with a short finish. I like the interesting yogurt-like creaminess of the unique sourness of the sake's raw yeast yeast yeast. I thought it could also be served heated, but I'll have to do it soon, it's already spring. I thought it would go well hot, but if I don't get it warmed up soon, it will be spring already. The sake is made and labeled in a way that takes advantage of the climate of Oarai, Ibaraki. It is refreshingly dry when served cold. When heated, it becomes more floral and friendly. I'd like to try it with sea bream or flatfish from Oarai.

Kumamoto's local sake, Sanzanmura Slightly sweet ginjo aroma A light, sweet mouthfeel with a soft acidity. Like drinking fresh green apple juice I drank too much and my memory is fuzzy I'm not even sure of the notes I wrote at the time😅. Anyway, it's delicious! Sake brewed with sake rice grown by a pesticide-free method called "Koi Farming" in Sanzan Village! Using the carp farming method, carp are released into the rice paddies 🌾🌾 to get rid of pests. A few years ago, I drank Manbo from Kumamoto Kameman Shuzo, which was a sake made using the duck farming method🦆! There are many people in Kumamoto who practice natural farming methods 🫶.

I have had a little Mutsu Hassen, but Mutsu Otokoyama is completely new to me! A while ago, I had the impression that Mutsu Hassen lost all its flavor after the second day, but recently it has been able to keep its flavor quite well. What do you think of Mutsu Otokoyama?
