Sake from a brewery famous for Ryujinmaru. It has been a very long time since Kirakuri. After Shikishima, tkmts-san was drinking Ryujinmaru, and I wanted to try something of Takagaki-san's sake, so I chose Kirakuri. This time it was an unfiltered raw Nakadori. It has a caramelized taste with sweetness and a sense of maturity. It's just a coincidence that there is a succession of sakes with a sense of maturity, such as Washin, Shikishima, and Kirakuri.

Japanese Sake Fest @ Osaka Bay Tower (・ω・`) The effect of oak barrels, or something quite close to whiskey, but the mellowness and acidity of sake is also alive! I know it's just my imagination, but I feel it's similar to the whiskey akashi. Of course, if I didn't know any better, I wouldn't have thought so. I also had a bottle of Junmai Namae in the heated sake corner, but my memory is a little fuzzy on whether or not my brain was getting the alcohol when I got here! I do remember that it was meant to be heated, but that's about it.

Takatsugawa" Junmai-shu from Fusozuru's brewery We ordered this sake from Kotobukiya in Atsugi in January 2023, and it was commented on Kotobukiya's website as "a hidden gem for home drinking". It has been stored at room temperature for 2 years and 9 months since it came to our house, and it has further changed color and has some ooze. At room temperature, it has a matured, savory, and peculiar taste (this peculiarity is also its charm). It is still not hot enough at lukewarm temperature, but when the temperature is raised to 50℃ or higher, it is nice and full-bodied, The caramel-like sweetness spreads and attracts the taste buds. It is a great everyday evening sake, and can be kept at room temperature after opening, and is also suitable for aging.

2020/11/06 ⭐️⭐️⭐️⭐️⭐️ A subdued but green apple-like aroma. The mouthfeel is refreshing and smooth. It is followed by a rich sweetness and flavor. Spiciness and acidity are rather subdued. It finishes off nicely with a slight bitterness. It was easier to drink than the ginjo I received before.

Tonight, I'm posting my second bottle, this one I've been letting go for about 2 years to contrast with the first (Miyazumi Junmai Nigori Nama) 🍶. Actually, I bought it at the same time as the previous Junmai, but when I drank the Junmai, I took it for granted that this was a sake that should be aged for a long time 😪💤 and it has been in the bottle for a long time until now 😌. The aroma is grain-like, or Western liquor-like, or mature aroma, and the smell alone is enough to make you feel drunk. 😵💫 I think it's better to drink it at room temperature or warmed than chilled because the initial smell will disappear. Maybe I'll give it a try after tomorrow. It's good to enjoy long-aged sake sometimes. ☺️

Maruishi Sake Brewery and local farmers in Nisato This sake was brewed by reviving Manzai rice, an edible rice grown in Saida and offered to the Emperor Taisho for his coronation at the first ceremonial offering of the rice to the Emperor. I am a local, but I did not know the existence of Manzai rice! The taste of the rice makes me think back to 100 years ago!

Maruishi Brewing's Chohyo year-end festival, second bottle. This sake is made from Manzai, an edible rice that has been revived in Okazaki. It is a junmai daiginjo, and naturally it has a beautiful, fruity taste, but compared to Nitoshi, it has more robust rice flavor than acidity and sweetness...I think. Am I biased? Purchased at Yokohama Takashimaya Rice used is Kame-no-o type Koshihikari produced in Kasama City The alcohol is a little strong, but the taste is smooth and not like an unfiltered draft. It has a good balance of sweetness and bitterness and is refreshingly clean❣️. There aren't many unfiltered sake that are good all-around food sake, but this one seems to go well with all kinds of food❣️.
