This is the first bottle of Akita Shun Ginjo. I've never met this brewery before, but it's a good omen❗. The second day, the aroma of the nama-moto has receded into the background, and the taste becomes light and clean, but the nama-moto structure gives it a moderate depth, as if it is producing the flavor from a step back. This sake has become my 💓.

This is the first time I've seen this warehouse. The rice used is Maikaze. As the name suggests, everything, including the yeast, is from Gunma, and it seems to be an annual event. After a few drinks, it was quite late, so I headed home while eating a golden dharma bento commemorating the 140th anniversary of Takasaki Station. I will close my Gunma trip with "Akagisan" and "Funao Taki"! Sweet and sugary aroma like sugar. The taste is smooth and silky, and while it has a Gunma sake-like quality, it tastes more like a sweet sake derived from brewer's alcohol. There is nothing outstanding about it, but it is a perfect match for ekiben (boxed lunches), with its unobtrusiveness, slight sweetness, and crispness!

I'm going to try a popular version that I haven't had very often at this restaurant. The smell of rice is strong, like cooked rice. The sweetness is quite moderate, as indicated by the dry description. The texture is tight. Aromatic rice flavor and sharp acidity. The rice flavor is not quite dry, but it has a voluminous flavor. Somewhat amino acidic flavor, almost filmy. Grain aroma at the end. It would go well with miso cucumber, or pork stewed in square cubes because it has a good slice of fat. (I ordered a highball first. I ordered the curry flavored chicken cutlet, it doesn't go well with it. A high-cost, spicy and tasty food wine. It may be served at different temperatures. A gift from Sawanoizumi The Jun Dai I drank before was a Miyagi sake, beautifully light and dry, and I felt (selfishly) the earnestness of the toji (master brewer). I had an image of a modest, but firm, light, dry Kura. And then there is this special pure Sawanoizumi. It does not have much of a topping aroma, but the mouthfeel is surprisingly sweet and umami! OSAKA SAKE & FOOD EXPO 2024 (2) Gindagawa, which I have had a cup of special honjozo or something before. Was Gintagawa sold in Niigata? I thought it was a classic type, but unlike the image on the label, the acidity was noticeable and it was a bit modern? It looks like it would go well with Western food 🍴.

Honjozo 🍶 JR East Kyun ♥ Pass one-day trip to Niigata 🚃. First, we took the Shinkansen to Niigata. Go to Aomi shopping center in Honmachi 🚌. Much darker. The sake 😅. Match with Cod Milt Tempura 👍. Today I am Beian Daikoku Anniversary😇. This sake is a project with Hata Sake Shop and the sake brewery 😀. I saw the brewery's installment and even though I didn't know which brewer's sake it was, I pre-ordered it 🤣. Rafa papa has already written about the detailed taste, so I'll skip it, but anyway, it was a very round sake with no curd at all😇. I guess when you let it sit in the snow slowly, it becomes such a round and beautiful sake😇. It was delicious 😀.
