The sake rice is Gin-no-sato, developed by the National Institute of Agrobiological Sciences for western Japan. This is the third bottle of sake rice research. We were careful to open the bottle. It erupted at the same time as the bottle was opened. A sparkling toast? It is good on its own. The dryness of the sake's 15% sake level comes out in the latter half of the bottle. It is the type that disappears in a blink of an eye. I can't remember the last time I tasted it.

This is the first time I've seen this warehouse. The rice used is Maikaze. As the name suggests, everything, including the yeast, is from Gunma, and it seems to be an annual event. The mouthfeel is mild. It is bitter-sweet with a slight banana aroma. It gently finishes with a hint of umami. It seems to have a lot of depth. Well-balanced and cohesive sake. After a few drinks, it was quite late, so I headed home while eating a golden dharma bento commemorating the 140th anniversary of Takasaki Station. I will close my Gunma trip with "Akagisan" and "Funao Taki"! Sweet and sugary aroma like sugar. The taste is smooth and silky, and while it has a Gunma sake-like quality, it tastes more like a sweet sake derived from brewer's alcohol. There is nothing outstanding about it, but it is a perfect match for ekiben (boxed lunches), with its unobtrusiveness, slight sweetness, and crispness!

New Year's sake (2) - Women's tears When I went back to my parents' house, my father bought this sake. It seemed to be a recommendation from Aoki Shoten. With all due respect, I had never heard of this sake and it was unknown to me. When I opened the bottle, there was not much aroma. When you put it in your mouth, you can feel the sweetness and gradually start to feel the alcohol, and it ends up being dry. From the naming, you would expect it to be intensely dry. This is the first bottle of Akita Shun Ginjo. I've never met this brewery before, but it's a good omen❗. The second day, the aroma of the nama-moto has receded into the background, and the taste becomes light and clean, but the nama-moto structure gives it a moderate depth, as if it is producing the flavor from a step back. This sake has become my 💓.

A gift from Sawanoizumi The Jun Dai I drank before was a Miyagi sake, beautifully light and dry, and I felt (selfishly) the earnestness of the toji (master brewer). I had an image of a modest, but firm, light, dry Kura. And then there is this special pure Sawanoizumi. It does not have much of a topping aroma, but the mouthfeel is surprisingly sweet and umami! It is sweet to the level of the Hitakami, and the robust umami is also very tasty! It has a light acidity and bitterness, followed by a refreshing sharpness. It's good! This is good! The price is relatively cheap, about 1300 yen for a four-pack, but it is convincing enough! Ishikoshi Brewery. I underestimated you. Sorry about that. Sake is so interesting because there are new discoveries even at the foot of the table like this! Thank you very much!

Outside drinking. Ordered by the impact of the name. When poured, it smells moist and sweet. The taste is as expected (?). The sweetness is strong. When tasted, it has the flavor of rice. Purchased at Vinos Yamazaki in Kyoto after buying Daina at a liquor store in Saiin After this, I went back to the liquor store on the 2nd floor of the Yaichi main building and to Takimoto - Isetan 😊. I really wanted the Vinos limited edition Isoboast, but the date was a year ago, so I avoided it💦. It's also February 24 😅. I thought about how to read "kunika", "kokka", etc... but when I looked it up, it's "kokkou". Reminds me of Cocco for my generation 🤔. Drink at room temperature. It's lightly colored. It's been almost a year, but there's no sense of aging. It has a classical flavor and a little lactic acidity, but it's still light and refreshing. I'd like to try some of their raw sake, though I didn't have any this time. Like Isobojiman, I think Shizuoka sake is a good choice for me 🤔. I was saddened to hear that this brewery is already out of business 😿.
