In no time at all, the four-pack was empty! If this quality is this good for junmai sake, I wonder what junmai ginjo would be like? I'm sure I'll be back for more! Today's snack was... Pork loin Milanese style (homemade) Kiwi and radish salad (homemade) Antipasto of turnip and salami (homemade) It was a snack! It's more like a meal than a snack! Sake Shop Shichikura (Sapporo) When opened Almost no gas Slight pineapple and melon-like top notes The same fruity aroma, soft rice flavor and fresh sweetness spreads with lactic acidity, and the weak alcohol is spicy and slightly bitter, and it finishes quickly. The first half is fruity and you can taste the delicious sweetness of the rice, but the second half is interesting in how quickly it clears up. It is a good match for a meal as it finishes quickly, but it is also delicious on its own. It went well with pasta with shrimp, scallops, and mushrooms in tomato sauce and Andopan's focaccia. Moderate gassiness Slightly pineapple-like top note The same fruity aroma as the first sip, moderate sweetness and umami of rice spreads with a gentle but assertive acidity and slight gassiness, and the sweetness of the rice is retained while the slight bitterness and spiciness of a little alcohol make it easy to finish. Overall, this sake is well-balanced and gives a beautiful impression. It is delicious on its own, but also goes well with a meal. It has a modern tendency, giving the impression of being mellow, but the aftertaste is rather refreshing. The aroma is somewhat similar to that of Shinmasa. It has a deep sweet flavor, but the acidity and bitterness that spread together make the second half of the bottle dry and refreshing. It goes well with meals and is also delicious on its own. It is slightly cloudy, but if you look closely at the bottle, you can see a little bit of it. It is a little sweet, but the bitterness and acidity harmonize with each other, giving it a fresh and well-balanced flavor. It is good as a stand-alone sake or as a mid-meal drink. Slightly gassy Slightly pineapple-like top note The same gentle aroma as the first sip, the firm umami of rice, and the moderate sweetness and acidity spread out with a touch of tanginess, and then it quickly fades away with a hint of bitterness. It is mellow, but the moderate acidity gives it a refreshing impression. It can be enjoyed on its own, but it is also easy to pair with a meal. It went well with kawara soba (my wife's favorite Yamaguchi specialty, which we often buy at the local fair in Aeon) and a recipe for men's rice: oysters with hash browns. It also went well with grilled kipper with salt and chilled tofu with yose-tofu.
