It seems to be a newly relocated brewery that succeeded the closed Sanchei Sake Brewery.
The name of the brewery is Iraka Sake Brewery, which means "Iraka Sake Brewery" in Japanese.
The brewery's toji is a former head brewer at Daishinshu for many years, so it seems to be getting a lot of attention!
The president is a former banker and was born in 1988, so he is young in the industry.

It's a single-stage brewing using Aizan, with a sake degree of -30 and an acidity of 3.0, which is a sharp spec, but not too sweet. It is fire-aged, but the microbubbles give it a freshness. The acidity is impressive. The bitterness is strong at the end.
The sake shop's social networking site says it has a Sake Degree of -30, but the Meimon Sake Kai website says it has a Sake Degree of -7. I think -7 is reasonable. I think -7 is reasonable. I don't think -30 is appropriate for this flavor.
