I checked and it looks like this sake is exclusive to the Japan Famous Sake Association.
I don't think Mitsutake has participated before, so maybe the lineup is from this year?
I haven't had a spell recently, so it's been a while...

It's a single-stage brewing using Aizan, with a sake degree of -30 and an acidity of 3.0, which is a sharp spec, but not too sweet. It is fire-aged, but the microbubbles give it a freshness. The acidity is impressive. The bitterness is strong at the end.
The sake shop's social networking site says it has a Sake Degree of -30, but the Meimon Sake Kai website says it has a Sake Degree of -7. I think -7 is reasonable. I think -7 is reasonable. I don't think -30 is appropriate for this flavor.
I think raising the temperature would increase the sweetness and amplify the lingering flavor.
