I thought what would go well with corned beef and sausage from Iwate Prefecture🤔I knew it would be sake from the same Iwate Prefecture! So this time I chose 💁‍♂️👍 Let's start with the standing aroma. It doesn't have such a characteristic aroma, but you can feel the coolness. It is smooth and juicy in the mouth with a good sweetness and a strong umami and richness with a slight bitterness at the end. This sake gives the impression of spring 🌸 after the melting of the snow. Serve with German potatoes and sausage. The slightly tangy flavor of the corned beef and cheese and the crunchy texture of the potatoes enhance the flavor of this sake, making it crisp and mellow. Next, with sausage. I wondered what would go well with the combination of sardine simmered in ume plum and shime saba (mackerel) 🤔This time, I chose this one that came back with me from my recent business trip to Aomori. This is a newly launched brand after the disappearance of "Jyobari". I don't know if nigori sake and blue fish go well together, but as the name of this sake suggests, I gave it a try 😁. Let's start with the standing aroma. It looks and smells like a refreshing lactic acid bacteria drink. It has a crisp aftertaste with a fair amount of sourness in the mouth. It tastes like nigori sake as I imagine it. I started with sardine stewed in ume plum paste. The combination of the fatty sardines and the sourness of the ume plum with the nigori sake made it smooth to the palate. Delicious🙆. Next, the shime saba (mackerel). According to Hoshikawa Fish Restaurant, where I usually go, the fish is not vinegared, so the sashimi is almost raw. The tokoro has a strong flavor that does not lose out to the unique flavor of blue fish, and their respective tastes overlap to create a synergistic effect. This is also good👍. I guess it depends on the type of nigori sake, but I think this sake goes well with habitual ingredients 😘. The mouthfeel is clean and refreshing, with citrus-like sweetness and acidity, with a hint of ear of rice, and after the umami, a slight bitterness tightens the taste and gives it a final sharpness. First, with salted red clams 🦪. It is almost raw. The strong individuality of the flavor seems to be slightly overpowered by the sake. I also paired it with tuna meat that had been stripped of its threads, and this one is the best 😊(*I didn't take a picture of it, but it's great 💦). Next, I paired it with beef tendon oden. The nose has a nice citrus sweetness and acidity with a hint of ginjo aroma. In the mouth, there is a hint of rice and banana-like sweetness before it ripens, followed by a refreshing acidity. Finally, there is a pleasantly clean umami and bitterness along with a sense of koji. Serve with braised chicken wings. The tenderness of the chicken wings and the collagen further bring out the umami of this sake, making it rich and mellow to drink. I think the taste of rokusyu might be a little bit stronger than the other sake. But it is delicious, though (laughs). The standing aroma is mildly sweet with a hint of lactic acid and koji. The aroma is not as strong as I expected. In the mouth, there is a strong sense of gas and a moderate sense of koji, and the sweetness is more subdued than the sake degree and Machida's image. It has a crisp finish with umami and a hint of bitterness. Serve with spiced curry. The aroma and taste of spices create a refreshing sweetness, umami and richness of this sake and make me feel tropical. 🏖️🌊It was able to reconfirm that it goes well with nigori sake👍. I thought 🤔 what would be good to pair with seared white meat and grilled mackerel 🤔 and chose this one👍PB sake from Washinoo and Sakamoto Sake Shop in my hometown of Iwate 🍶. Let's start with this one. The first aroma is sweet with a hint of sourness and graininess. In the mouth, sweetness, sourness, and bitterness are all in one. The sweetness and flavor are thick, perhaps because the alcohol content is a bit high. It is a sake for a mealtime drink. I served it with sea bream first. The sweetness and umami of the sea bream is well balanced and brings out the richness of the Kurowashi. I think the tartness increased with the sea bream. The sea bream 🐟 has the upper hand: ❗️ The tartness became stronger when it was lukewarm, so it was a better match with fatty grilled mackerel than with seared mackerel. Rice polishing ratio] 70%.
