The palate has a refreshing, light acidity and a sake-like umami flavor that spreads and finishes with a slight bitterness. Perfect for a lingering summer day like today 😁.  Serve with cabbage rolls. The cabbage, minced pork, and consommé flavor complement the sweetness and umami of the rice in this sake, and the light bitterness at the end gives it a refreshing aftertaste. Delicious 😋. I just got home from Towada 🚙 and had a drink here on a day like this 😁.  Let's start with the standing aroma. It's like banana🍌 or cemedine, which is it?  In the mouth, there is a slight banana-like flavor and a crisp, yet sweet and umami taste of rice, followed by a good bitterness. There is also some gasiness.  Serve with sashimi of tuna. The perfect balance between the umami of the tuna and the moderate umami and bitterness of this sake increases its deliciousness👍. I paired it with the sashimi platter I had requested at my usual Hoshikawa Fish Store🐟😁.  Let's start with the standing aroma. The sweet and pleasant aroma of rice spreads. When you put it in your mouth, the crisp acidity along with umami gives it a clean aftertaste. It is more crisp than last year's.  Now, let's try it with sashimi. Tuna, swordfish, scallops, and salmon went well with this sake, and the sweetness and umami of the rice increased 😁The swordfish and shime saba (mackerel) themselves were very tasty, but the unique taste of the blue fish won out a little 🤔. I opened a bottle of this one 💁‍♂️ because I'm having a fish-centric snack today 😁.  Let's start with the nose. The aroma is faintly reminiscent of banana🍌. I think I can also smell some cemedine. When you put it in your mouth, it is richer than you expect, with a banana-like sweetness and a refreshing feeling at the end. When you drink it in a glass, you can taste more acidity and a crisp aftertaste. The taste is totally different depending on the vessel 😳  With Yoshitsugu Open Fish (🐟). I know it said be careful opening the bottle, but the moment I removed the outer lid, the plastic inner lid blew all the way to the ceiling 😳I'm glad I didn't put my face close to it 💦I was really surprised😱I don't think I've ever seen it fly like that before🤯Please everyone be careful when you open ⚠️ ‼️  Now let's get back on track. The nose is sweet pear. When you put it in your mouth, you can feel the gasiness and the taste is sweet with a good amount of bitterness.  Serve with grilled chicken wings. The rich collagen flavor of the chicken wings is in perfect harmony with the smoothness and sweet umami characteristic of orikarami. It was very sunny today too. ☀️😅I could buy vinegared kohada (konoshiro) at Hoshikawa Fish Store, so today I paired it with sake from here 💁‍♂️.  Let's start with the aroma. It smells like steamed rice and has a good alcohol taste.  In the mouth, it has a fruity flavor with a characteristic acidity. The mouthfeel is clean and the aftertaste is sharp and goes down the throat smoothly.  Serve with vinegared kobata (konoshiro). The slightly fatty kohada and the vinegar are well matched, and the sweetness and umami of the rice in this sake increases and the acidity mellows out. The aroma reminds me of passion fruit and a little bit of alcohol.  It has a sour taste on the palate, but it also has a refreshing sweetness that reminds me of fruit. Manachie-san I used Harumi Kurihara's recipe as a guide 🧾 I sliced cucumber thinly, lightly rubbed it with salt and pepper, mixed it with melted cheese, wrapped it in spring roll skin and deep fried it. I'm not a fan of cucumber, but this was delicious 😋.

The first Gentai ❗️ I could buy Gentai in Iwate, which I couldn't drink until now 😁But from reading your comment 📝, it seems that the taste has changed since this Yamae Nishiki? Well, what kind of taste 🤔  Let's start with the standing aroma. It has a sour aroma like yogurt. On the other hand, there is also an aroma that reminds me of pickles. In the mouth, there is sweetness and sourness of rice in a unique taste of fermentation, and at the same time, bitterness spreads in the mouth. This sake has an interesting flavor.  With chicken wings with garlic and shiso cheese. The garlic flavor brings out the flavor of this sake and leaves a pleasant bitterness and sourness at the end. I recently visited Oga in Akita and Furofushi Onsen in Aomori ♨️ 🚃 both were nice places👍 especially Akita where the rice and fish were personally delicious 😋 and of course the local sake😆.  The stone-grilled natural sea bream hot pot I had in Oga, the fourth one on this trip, was very tasty, with a simple flavor that had a depth to it 🎶.  But I digress from the standing aroma. The aroma is soft, with a hint of apple. When you put it in your mouth, you can feel the strong gas and taste a little sweetness reminiscent of malted rice and apples, almost like champagne. The bitter taste spreads slightly at the end, and the finish is refreshing.  Serve with sauteed sea bream. I opened it again today, probably because I was released from the course 😆.  Now, let's start with the standing aroma. It smells like calpis with sweetness and sourness. When you put it in your mouth, you can feel the gasiness, and at the beginning of the nose, there is a hint of bitterness after the LaFrance-like aroma.  Serve with sunfish sashimi. It looks like squid sashimi🦑. It tastes light and has no habit, and the texture is like scallop. Interesting 😄I paired it with this sake, but since the sunfish has no characteristics, it is not bad, but I can't feel the synergy with sake 🤔What would it go with? Today I finished submitting all my course assignments 🎇🙌 I made it to the top 🏔️💪 so I opened this bottle in honor of the mountain🥂.  Let's start with the nose. The aroma is slightly muscat-like. In the mouth it is juicy and slightly gassy, with a taste of muscat and a light acidity, along with a bitter accent at the end. Easy to drink and delicious 😋 and also soaks up all five organs🫠.  with the duck with tomatoes🦆. The taste is rich and gentle when combined with this drink. I returned safely to my home in Morioka from the Hachinohe, Aomori, Hirosaki route. In a way, I felt like I had circled Aomori in a roundabout way. In such a case, here's a shwack: ☺️  Let's start with the standing aroma. It has a koji (malted rice) taste and a sake-kasu (sake lees) aroma, which is characteristic of muddy sake. When you put it in your mouth, it has a gaseous feeling and is like calpis with a moderate sweetness. Easy to drink 😁.  Serve with fried shrimp. I wondered what would be good to go with vegetable tempura 🤔I chose this one👍.  Let's start with the standing aroma. It has a unique malted rice flavor that is often found in ogara-mi. When you put it in your mouth, it is smooth with a gaseous feeling, and it is more refreshing and clean than I expected. There is a slight bitterness at the end. Perfect for hot summer 😁.  Served with tempura of wild vegetables and summer vegetables. I think the zucchini with grated natural wasabi was the best match. The freshness and the fresh aroma of the wasabi went well with the smooth taste of this sake😁.
