Today I found fresh abalone and toshiro (abalone liver), so I bought it along with slices of sashimi. Here is the combination: 💁‍♂️ Let's begin. The aroma is sweet with a hint of grain. When you put it in your mouth, it has a beautiful mouthfeel, followed by an elegant acidity that is refreshing. First, it is served with slices of sashimi. The sweetness of the sake and the umami taste increase together. Next, I paired it with raw abalone and toshoro. It has a little bit of the peculiar taste of the shellfish but it is delicious without bitterness 😋It also goes well with Tenmei 😋It removes the smell of fish 👍If anything, it is more suited for a food sake 😃. Today I went to the Aomori Fair ❗️ Oirase and then bought Hachinohe fish and Toyobai at the Hachishoku Center😄Fun 😋. So let's get started. The first aroma is apple. The first thing you notice on the palate is a slightly sweet and soft mouthfeel. Then the sourness spreads and the finish is crisp and tight. I have a feeling it will go well with fish. I served it with grilled hokke (dried hokke). The fatty hokke is delicious ‼️ and this sake washes away the fat in a good way and refreshes the mouth. Nice 👍😍. The nose has a slight ginjo aroma and some alcohol. In the mouth, there is a fruity sweetness at first, followed by a long lingering taste of umami and bitterness. We paired it with a Western-style sea bream Nanban. The sweetness and umami of this sake increased when combined with the spiced and acidic white snapper meat. The nose has a hint of koji, perhaps because it is freshly squeezed. In the mouth, there is a slight gasiness and a good acidity. After that, a pleasant sweetness and umami spread out, and there is a slight bitterness at the end. A sake that is easy to drink 🥂☺️ I had this with sushi for the first time in a long time. Today is mushroom festival🍄There are a lot of mushrooms in Iwate this time of year‼️ and I couldn't help but buy some matsutake mushrooms from Iwaizumi because I heard they are delicious😅I'm looking forward to it😋To go with it, here is 💁‍♂️ First, at room temperature. The aroma is fresh and lychee-like. The aroma is fresh and lychee-like. It is smooth with a hint of sweetness, but a little acidic. The aftertaste is crisp. Next, it was warmed to human body temperature. The nose has a hint of alcohol and acidity, but it is smooth and easy to drink. Finally, warm it up to the full strength. The aroma changes to a lactic acidity, and the acidity eases as it enters the mouth, leaving a crisp aftertaste. Now, let's try it with mushrooms baked in foil with butter. The crunchy texture, bitterness, and somewhat wild flavor of natural mushrooms go well with this heated sake. ☺️ Next up was the matsutake mushrooms from Iwaizumi and 🍄‍🟫. The aroma was amazing👍It also had a strong crunchy texture and a hint of sweetness. I was looking forward to coming to Iwate and found the matsutake mushrooms from Iwate🍄‍🟫 finally found some reasonably priced ones at a produce shop‼️I'll have a bowl of this today🍶😁. The nose has some acidity and alcohol. The mouthfeel is smooth with a hint of sweetness from the rice, and the taste is full and full with a good acidity. I immediately paired it with grilled matsutake mushrooms. The crispy texture of the fibers and the unique aroma of matsutake mushrooms that escapes through the nose, as well as the sweetness. The matsutake mushrooms themselves were also more flavorful. Best with ‼️ and my new favorite salt made in Noda village in Iwate: ❗️☺️ Rice polishing ratio】60%.
