We took a break at Bida's before 🦷extraction and today, two days later, we are back on the road to revival ❗️ Cheers with a bottle of Bida's and a new set of teeth🍶 (laughs).  Let's start with the standing aroma. When the bottle is opened, it releases a sweet and gorgeous pear-like aroma. Nice aroma 😄.  In the mouth, the fruity and sweetness of the rice combine to create a freshness with a crisp acidity. The final taste is more sharp than expected with a good amount of bitterness.  Serve with soy sauce koji topped with boiled tofu. The fermentation of the koji and the smoothness of the tofu bring out the rich flavor of this sake and the pleasant bitterness and clean taste spreads 😋👍There is a bottle of this sake, so let's not drink too much today 😆. I was able to buy 🦀 of seiko crab shells, so I rushed home and had dinner 🍶 (laughs).  Let's start with the standing aroma. It has a sweet aroma reminiscent of pale pears and peaches. In the mouth, there is a slight gasiness and a fresh, fruity sweet flavor that spreads in the mouth with a clean finish and a pleasant bitterness. It has more sharpness than expected, but it is easy to drink.  With stuffed crab shells. The texture and umami of the crab meat, inner and outer eggs bring out the smooth, rich sweetness and umami of this sake, and the crisp sharpness at the end refreshes the palate. Natural yellowtail looked so good I had to buy some 😄I have to drink this 😅.  Let's start with the standing aroma. The moment I smelled it, it was sweet and gorgeous, as if a flower had opened.  When you put it in your mouth, it has a fresh and fruity aroma with a pleasant acidity and a refreshing taste. Delicious. ❗️😋  I had it with yellowtail sashimi and Tororo konbu jime. Both are tasty, but the yam kelp flavor brings out the best balance of this sake, as the flavor of the kelp suppresses the unique aroma of the blue fish👍. Rice polishing ratio】55%. Yesterday I participated in a standing drinking event at a liquor store and drank sake to my heart's content, and now I'm drinking it again😅.  But that aside, let's start with the standing aroma. Unusually for Morishima, there are hints of rice and alcohol. It is juicy in the mouth with a hint of rice sweetness and a beautiful mouthfeel. The aftertaste is dry and sharp. Finally, you can feel the swelling of the rice characteristic of Omachi.  Serve with cod roe with crow's feet. The crisp and salty flavor, different from mullet, enhances the sweetness of the rice in this sake and gives it a mellow taste. Seems to go well with heating sake 😄. Rice polishing ratio] 50%. Today is the first Matsutake mushroom festival of the year🙌Iwate Matsutake mushrooms 🍄‍🟫 finally got them at a reasonable price 👏.  But aside from that, let's start with the standing aroma. It has a slight ear of rice feeling, a slight apple-like sweet and sour taste, and a soft rice sweetness.  In the mouth, a smooth sweet-sour and apple-like flavor also spreads on the palate. Refreshing on the palate. Now, let's try it with grilled matsutake mushrooms. The aroma of the matsutake mushrooms and the acidity of the vinegared fruit bring out the flavor of this sake even more, along with its crunchy texture and subtle sweetness. Finally, with the soup. The aroma of matsutake mushrooms leaves your nose. The aroma is number one ☝️ Personally, I think the grilled matsutake mushroom was the best match 😄. The aroma is typical of sake, with a hint of rice sweetness and acidity. The smoothness and slight sweetness on the palate is complemented by a light sourness and bitterness. It may be easier to drink than yesterday's Sasanishiki 🤔.  With grilled conger eel. The thick, fatty, light meat overlapped well with the moderate acidity and umami of this sake, creating a harmony of deliciousness. It is getting a little colder. I finally put on a fleece in my room 😨.  Here's what I chose for such a day: 💁‍♂️ This time it's sake🍶 which is limited to one bottle.  Let's start with the standing aroma. Because I can't remember the name of the fruit even if it comes out to my throat 🤔I'll go for the sweet and refreshing fruit aroma. In the mouth it is juicy and crisp, yet very easy to drink with a good balance of pleasant sweetness, acidity, umami, and bitterness. It has a sweet and umami flavor that is typical of Machida. The sweet and umami taste of the pork and Chinese cabbage combined with the sweet and umami taste and slight bitterness of this sake makes it a perfect food sake👍. It has a sweet aroma with a hint of peach and malted rice. When you put it in your mouth, it has a gaseous and smooth mouthfeel with a cleaner aftertaste than expected. It has a unique character reminiscent of natural white wine, but with a hint of refreshing acidity.  In the mouth, there is a sweetness and acidity like muscat, and finally a tangy pungency and bitterness. It is like a white wine even though it is a sake 🤔The alcohol content is low and it is easy to drink👍.  Serve with spring rolls. In the case of the minced meat sauce, this sake brought a refreshing calmness with sourness, and in the case of the cheese sauce, it increased the flavor of each. Finally, natto & shiso & cheese gives a well-balanced flavor. In conclusion, this sake is easy to match with ingredients 😁.
