It's getting a little colder. I finally put on a fleece in my room 😨.  Here's what I chose for such a day: 💁‍♂️ This time it's sake🍶 which is limited to one bottle.  Let's start with the standing aroma. I can't remember even if it comes up to my throat 🤔Sweet and refreshing fruit aroma. In the mouth, it is juicy and crisp, yet very easy to drink with a good balance of pleasant sweetness, acidity, umami, and bitterness. It has a sweet and umami flavor that is typical of Machida. Delicious 😋Be careful not to drink too much. ⚠️  With simmered Chinese cabbage. The sweet and umami taste of the pork and Chinese cabbage combined with the sweet and umami taste and slight bitterness of this sake makes it a perfect food sake👍. It has a faintly sweet and fruity aroma of koji rice. In the mouth, there is a fresh and smooth sweetness and a gaseous feeling, and at the end, you can taste the bitterness that tightens the taste.  Serve with potato gratin. If anything, the bitterness of this sake seems to have increased a little. When I put some salmon roe on it, well, it's strange😳The saltiness of the salmon roe and the deliciousness of the fish roe match with Megane's, which gives it a nice accent and spreads the flavor👍. You can taste a hint of rice sweetness and matured, calm acidity. When you put it in your mouth, the smooth acidity and the sweetness of the rice overlap with the umami, and the mouthfeel is clean at the end.  Serve with seiko crab. The aroma of the crab, the sweetness of the finely textured meat, and the texture and umami of the inner and outer roe of the roe further brought out the sweetness and umami of this sake and increased its deliciousness. ☺️ Oh, it's great👍! It has a sweet aroma with a hint of peach and malted rice. When you put it in your mouth, it has a gaseous and smooth mouthfeel with a cleaner aftertaste than expected. It also has a champagne-like taste.  Serve with okonomiyaki. The sweetness of the flour, sauce, and cabbage, and the smooth, gassy mouthfeel of this sake go well with the texture of the fluffy yam and its sharpness 😁👍. Polishing ratio】50%. It is smooth on the tongue with a hint of sweetness while retaining the original flavor of sake.  Serve with beef wrapped with vegetables. The sweetness of the beef and the crisp texture of the vegetables bring out the sweetness of the rice in this sake, mellowing the overall flavor and creating a delicious wrapping 👍. It has a unique character reminiscent of natural white wine, but with a hint of refreshing acidity.  In the mouth, there is a sweetness and acidity like muscat, and finally a tangy pungency and bitterness. It is like a white wine even though it is a sake 🤔The alcohol content is low and it is easy to drink👍.  Serve with spring rolls. In the case of the minced meat sauce, this sake brought a refreshing calmness with sourness, and in the case of the cheese sauce, it increased the flavor of each. Finally, natto & shiso & cheese gives a well-balanced flavor. In conclusion, this sake is easy to match with ingredients 😁. I paired it with the sashimi platter I had requested at my usual Hoshikawa Fish Store🐟😁.  Let's start with the standing aroma. The sweet and pleasant aroma of rice spreads. When you put it in your mouth, the crisp acidity along with umami gives it a clean aftertaste. It is more crisp than last year's.  Now, let's try it with sashimi. Tuna, swordfish, scallops, and salmon went well with this sake, and the sweetness and umami of the rice increased 😁The swordfish and shime saba (mackerel) themselves were very tasty, but the unique taste of the blue fish won out a little 🤔. When you put it in your mouth, it is richer than you expect, with a banana-like sweetness and a refreshing feeling at the end. When you drink it in a glass, you can taste more acidity and a crisp aftertaste. The taste is totally different depending on the vessel 😳  With Yoshitsugu Open Fish (🐟). It was very sunny today too. ☀️😅I could buy vinegared kohada (konoshiro) at Hoshikawa Fish Store, so today I paired it with sake from here 💁‍♂️.  Let's start with the aroma. It smells like steamed rice and has a good alcohol taste.  In the mouth, it has a fruity flavor with a characteristic acidity. The mouthfeel is clean and the aftertaste is sharp and goes down the throat smoothly.  Serve with vinegared kobata (konoshiro). The slightly fatty kohada and the vinegar are well matched, and the sweetness and umami of the rice in this sake increases and the acidity mellows out. Manachie-san I used Harumi Kurihara's recipe as a guide 🧾 I sliced cucumber thinly, lightly rubbed it with salt and pepper, mixed it with melted cheese, wrapped it in spring roll skin and deep fried it. I'm not a fan of cucumber, but this was delicious 😋.
