With Aomori Festival eve 🎇Aomori food 🦑🦪. Let's start with the standing aroma. Sweet cemedine smell. It's been a long time since I've tasted a cemedine ❗️. The sweetness of the rice comes first in the mouth, followed immediately by a sharp, full-bodied acidity, and finally a crisp aftertaste and umami that spreads out in a jiffy. The taste has a strong core, but is also gentle. It's a cemedine type sake, but it's a clear sake that doesn't feel old 🍶I personally like the taste 😊. First, with homemade squid meatballs. The combination of the flavor of the squid meatballs and this sake makes it easier to drink as the acidity mellows out while the cemedine taste remains. It's a great drink! Ja jaan❗️ opened a bottle of Tojo today 😆 I'll do a taste comparison with Yoshikawa later. Let's start with the standing aroma. The aroma is slightly sweet and sour. In the mouth, it is juicy, soft and sweet, with a citrus-like acidity and a slight bitterness at the end. The taste lingers for a long time. Yoshikawa is less sweet and has a smooth, clean taste. If I had to say, I would say that the Yoshikawa is more suited for a mealtime drink. With fish paste. The sweetness and umami of this sake is enhanced when paired with octopus paste. It may go well with ingredients that are not too sweet. Next, with fried burdock root. The sweetness of Mita is moderate here. Personally, I think Tojo is better on its own, and Yoshikawa is better as a pairing. Both are delicious, though. The aroma is more subdued than I imagined. In the mouth, it has a beautiful and elegant sweetness, just like a junmai daiginjo. The acidity is more pronounced than expected, and there is a light bitterness. The mouthfeel is clean and light. It is easy to drink and is a great sake. Next, I served it with new potatoes croquettes. The sweet and delicious flavor of this sake increased. The acidity and bitterness cut through the oil in the croquettes and helped to improve the flavor. Yes, it is good as a food sake👍. Today's version is a nigori version of Machida's 😊. Looking forward to it😋 Let's start with the standing aroma. Fresh sweet pear🍐 with some malted rice. In the mouth, there is a fresh gasiness, a refreshing sweetness, and the umami of rice slowly spreading out, with a good bitterness at the end. It is more refreshing than expected. It has a stronger and rougher image than the Miyamanishiki straight kumi that we drank last time. Next, we paired it with a kinchaku tamago (deep-fried egg). The broth-soaked deep-fried tofu and half-boiled egg brought out the umami of the sake even more, and the sweetness was reduced to a rich and thick flavor. Good as a food sake 👍😁. I thought what would go well with corned beef and sausage from Iwate Prefecture🤔I knew it would be sake from the same Iwate Prefecture! So this time I chose 💁‍♂️👍 Let's start with the standing aroma. It doesn't have such a characteristic aroma, but you can feel the coolness. It is smooth and juicy in the mouth with a good sweetness and a strong umami and richness with a slight bitterness at the end. This sake gives the impression of spring 🌸 after the melting of the snow. Serve with German potatoes and sausage. The slightly tangy flavor of the corned beef and cheese and the crunchy texture of the potatoes enhance the flavor of this sake, making it crisp and mellow. Next, with sausage. I wondered what would go well with the combination of sardine simmered in ume plum and shime saba (mackerel) 🤔This time, I chose this one that came back with me from my recent business trip to Aomori. This is a newly launched brand after the disappearance of "Jyobari". I don't know if nigori sake and blue fish go well together, but as the name of this sake suggests, I gave it a try 😁. Let's start with the standing aroma. It looks and smells like a refreshing lactic acid bacteria drink. It has a crisp aftertaste with a fair amount of sourness in the mouth. It tastes like nigori sake as I imagine it. I started with sardine stewed in ume plum paste. The combination of the fatty sardines and the sourness of the ume plum with the nigori sake made it smooth to the palate. Delicious🙆. Next, the shime saba (mackerel). According to Hoshikawa Fish Restaurant, where I usually go, the fish is not vinegared, so the sashimi is almost raw. The tokoro has a strong flavor that does not lose out to the unique flavor of blue fish, and their respective tastes overlap to create a synergistic effect. This is also good👍. I guess it depends on the type of nigori sake, but I think this sake goes well with habitual ingredients 😘.
