I was able to buy the fishmonger's thickly baked eggs you posted on X, so I opened them two days in a row 😆. Let's get right to it. The nose has a fresh melon-like ginjo aroma. In the mouth, it tastes more like ripe melon and has a nice sweetness and a clean flavor that spreads in the mouth. It is delicious enough on its own. Served with a thickly baked egg. First of all, the lees are amazing 😳The aroma is fresh and fermented, with a hint of sakekasu (sake lees). The mouthfeel is crisp with a feeling of petit gas. It is more refreshing than I had imagined. ❗️ It is drier than most of the Toyo Sake cups I have had recently. ‼️ Fried shrimp with tartar sauce. The tartar sauce makes the drink more smooth and the fermented taste is mixed with the umami and spiciness to make it richer. It's delicious 😋 but it also goes well with fried food. The nose is sweet with a hint of acidity and graininess. In the mouth, it is juicy with a slight gassy feeling, and has a good balance of sweetness, umami, and acidity. There is a lingering taste of malted rice and a hint of bitterness at the end. The sake goes down well. With seafood rolls. It goes very well together 😁It has a slightly sweeter taste and you can even feel a sense of unity. The aroma is alcoholic and reminds me of bananas. In the mouth, there is a hint of banana-like sweetness, with sourness and umami spreading out, and finally, there is a tangy stimulation on the tongue. As you continue to drink, a moderate bitterness also comes out. It has a banana-like flavor that is easy to drink even though it is very sake-like 👍I heated it up, but I personally prefer it cold or chilled. I served it with simmered cod. I wondered what would be good to pair with the first anglerfish I bought at my favorite Hoshikawa fish store 🤔 and chose this one👍. Let's start with the first sip. The nose is fresh and lightly acidic with a hint of citrus. The sweetness in the mouth is refreshing, and the sourness is reminiscent of mikan 🍊 and the bitterness of eating the peel. I first tried it with anglerfish and tomo-aye. The tomo-ae itself was very tasty, but the combination with the sake was so-so. I think heated sake would be a better match. Next, I served it with the sakekasu-marinated musuko (fish roe). The salty taste of the musuko and the unique flavor of the sake lees matched well with the Hatsushibori Ona 😁.
