Opened a bottle of this one 💁‍♂️ that I was saving for the wife's birthday 🎂🍾.  Let's start with the aroma. The slight sweetness, acidity, and fermentation make it seem like a natural wine. When you put it in your mouth, you can feel the gasiness, richness, and umami, and the fresh taste spreads. Overall, this sparkling wine is a bit sweet. The taste is delicious, though 😋.  With steak 🥩. Among the sirloin, ribeye, and ichibo, the ichibo was the best, as it combined well with the rice flavor of this sake, and I could taste it with the deliciousness that is typical of sake👍😁. Jade from Akamu ran out early, so here's another bottle to open: 💁‍♂️  The aroma is sweet with a hint of ear of rice. It is juicy, slightly sweet, rich, and has a strong umami flavor. Maybe it's because I drank the Jade 🤔.  I had it with baked yam with butter & campagne. The combination of bread wheat and baked yam with butter makes the flavor of this sake stronger. This goes well with 👍By the way, corned beef went well with Hana Oup 😁It might be easier to understand if you think of it as a pairing with rice 🍚. Maybe jade is similar to wine🍷. I went to the fish shop I always go to and the sea urchins were so beautiful I couldn't resist buying some 😁.  First of all, from the standing aroma. I came home after a business trip from Aomori to Akita. On such a day, here is 💁‍♂️ Koei Chrysanthemum after a long time 😁.  Let's start with the standing aroma. The aroma is reminiscent of cider with a hint of malted rice. The taste of apple with a touch of gas and sweetness in the mouth spreads, and the mouthfeel is clean and refreshing. Morioka was raining again today, wah wah wah ☂️ not Nagasaki 😆 so I opened this one 💁‍♂️ you just want to drink (lol)  Let's start with the standing aroma. It has a full-bodied sweet aroma with a hint of sourness and some ear of rice flavor. In the mouth, there is sourness and bitterness reminiscent of grapefruit, as well as a good amount of sweetness and cleanness.  Serve with wakame seaweed stir-fried with garlic and sesame oil. The slightly sticky and crunchy texture, sesame oil and garlic flavor create a harmony with the sweetness and sourness of this sake, resulting in a nice salty taste. Delicious! Today I found my first sea urchin and rock oyster, so I paired it with this one I bought when I went back home: 💁‍♂️  Let's start with the nose. It has a mild sweetness with a hint of citrus 🍊 acidity. Good aroma. ☺️  The sweet and delicious aroma in the mouth reminds me of mikan (mandarin orange) with its sourness and bitterness. Saga is a good place to get 🍊mikan. Also, you can feel the fullness of the rice characteristic of Omachi.  Next, we had some snacks. The sea urchin and rock oyster both had a seaside aroma, which increased the sweet and sour 🍊 flavor of this sake. The sweet egg omelet with dashi broth increases the acidity, making it a good mid-meal drink. The last one is the soup, which gives the sake a strong umami flavor. Whew, I'm back from Towada🚙😮‍💨 tonight I chose this one that I bought when I went back to my parents' house💁‍♂️  For some reason, you can't buy this sake in Morioka, but you can buy it in Saga. What a mystery 😔.  But aside from that, let's start with the standing aroma. The aroma is sweet, gentle and subtle. In the mouth, sweetness of rice and a mellower and softer mouthfeel than I expected. There is a lingering bitterness at the end. Overall, it is a ginjo-shu, but the sweetness is reserved and the aftertaste is refreshing. I'll buy it immediately when I find it 😁.  With leek and pork with egg. The leek's unique aroma, sweetness, crunchy texture, pork flavor, and fluffy egg texture bring out the sweet and savory flavor of this sake and reduce the bitterness. Yesterday, I came back to Morioka from my parents' houses in Saga and Fukuoka, respectively✈️ anyway, it's a long way 💦Too much for a first generation 😅I chose this tonight to relieve my fatigue💁‍♂️  Let's start with the standing aroma. It is fresh, cloudy, and has a unique fermentation feeling, along with a hint of rice sweetness and a green, youthful, melon-like aroma. In the mouth, you can feel the sweetness of rice and the natural vitality of the brewer's yeast in the smooth mouthfeel, followed by a faint bitterness.  Serve with Tempura of Koshibara & Kogomi. The fresh, wild butterbur-like aroma and slightly sticky taste of koshiorabra through the nose and the light, sticky taste of kogomi go well with this sake 😄It goes very well with wild vegetables👍. What would be good to go with the tempura and sashimi of wild vegetables and asparagus? I thought 🤔 and chose this one👍  Let's start with the standing aroma. It has a matured aroma reminiscent of whiskey. When you put it in your mouth, you can feel the amino acid flavor with a matured feeling and a hint of aroma. It's been a while since I've had this sake 🍶 It has a slight sweetness and acidity of rice, and the aftertaste is smooth.  Start with sashimi. It goes well with horse mackerel and tuna 😊It further brings out the mild rice sweetness of this sake and suppresses the unique flavor of fish, making it a 👍 match.  Next, with wild vegetable tempura. The bitterness and aroma of the butterbur sprouts remind me of spring and enhance the flavor of the sake. The taste of the cod sprouts, which are not as peculiar as the udo, and the slightly slippery texture go well together too 😋Spring is the season to enjoy sake along with autumn ☺️ actually summer and winter too (lol). Like last year, the blowout was awesome😭I took the store's advice and tried my best to cool it down but... 😂.  Let's start with the standing aroma. It has a fresh koji taste with a hint of sweetness and acidity. In the mouth, there is a pleasant fermentation with a strong gas feeling, rice sweetness, light acidity, and a slight bitterness at the end, which is complex yet refreshing with umami.  Serve with paper pork cutlets. The combination of fried food and the richness and umami of this sake was just the right balance to keep the cup going. It's a good match 👍I think it's similar to the feeling in your mouth or down your throat after drinking calpis 🤔.
