In the mouth, there is a slight gasiness and a fresh, fruity sweet flavor that spreads in the mouth with a clean finish and a pleasant bitterness. It has more sharpness than expected, but it is easy to drink.  With stuffed crab shells. The texture and umami of the crab meat, inner and outer eggs bring out the smooth, rich sweetness and umami of this sake, and the crisp sharpness at the end refreshes the palate. Natural yellowtail looked so good I had to buy some 😄I have to drink this 😅.  Let's start with the standing aroma. The moment I smelled it, it was sweet and gorgeous, as if a flower had opened.  When you put it in your mouth, it has a fresh and fruity aroma with a pleasant acidity and a refreshing taste. Delicious. ❗️😋  I had it with yellowtail sashimi and Tororo konbu jime. Today is the first Matsutake mushroom festival of the year🙌Iwate Matsutake mushrooms 🍄‍🟫 finally got them at a reasonable price 👏.  But aside from that, let's start with the standing aroma. It has a slight ear of rice feeling, a slight apple-like sweet and sour taste, and a soft rice sweetness.  In the mouth, a smooth sweet-sour and apple-like flavor also spreads on the palate. Refreshing on the palate. Now, let's try it with grilled matsutake mushrooms. The aroma of the matsutake mushrooms and the acidity of the vinegared fruit bring out the flavor of this sake even more, along with its crunchy texture and subtle sweetness. Finally, with the soup. It has a sweet aroma with a hint of peach and malted rice. When you put it in your mouth, it has a gaseous and smooth mouthfeel with a cleaner aftertaste than expected. It also has a champagne-like taste.  Serve with okonomiyaki. Yesterday, I came back to Morioka from my parents' houses in Saga and Fukuoka, respectively✈️ anyway, it's a long way 💦Too much for a first generation 😅I chose this tonight to relieve my fatigue💁‍♂️  Let's start with the standing aroma. It is fresh, cloudy, and has a unique fermentation feeling, along with a hint of rice sweetness and a green, youthful, melon-like aroma. In the mouth, you can feel the sweetness of rice and the natural vitality of the brewer's yeast in the smooth mouthfeel, followed by a faint bitterness.  Serve with Tempura of Koshibara & Kogomi. Ja jaan❗️ opened a bottle of Tojo today 😆 I'll do a taste comparison with Yoshikawa later. Let's start with the standing aroma. The aroma is slightly sweet and sour. In the mouth, it is juicy, soft and sweet, with a citrus-like acidity and a slight bitterness at the end. The taste lingers for a long time. Yoshikawa is less sweet and has a smooth, clean taste. If I had to say, I would say that the Yoshikawa is more suited for a mealtime drink. With fish paste. The sweetness and umami of this sake is enhanced when paired with octopus paste. It may go well with ingredients that are not too sweet. Next, with fried burdock root. The sweetness of Mita is moderate here. Personally, I think Tojo is better on its own, and Yoshikawa is better as a pairing. Both are delicious, though. Rice: 100% Yamada-Nishiki from Tojo, a special A district rice produced in Hyogo Prefecture. Yamadanishiki 100%. Polishing ratio] 35%. Oh, I've never seen Bida before😳I couldn't help but ask the guy at the store and he told me that only 5 or so distributors in the whole country sell this 😍I actually bought another Tojo as well (lol)Be careful not to drink too much⚠️ Let's start with the standing aroma. The aroma is more subdued than I imagined. In the mouth, it has a beautiful and elegant sweetness, just like a junmai daiginjo. The acidity is more pronounced than expected, and there is a light bitterness. The mouthfeel is clean and light. It is easy to drink and is a great sake. Next, I served it with new potatoes croquettes. The sweet and delicious flavor of this sake increased. The acidity and bitterness cut through the oil in the croquettes and helped to improve the flavor. Yes, it is good as a food sake👍.
