Serve with grilled chicken wings. The crispy chicken further concentrates the sweetness of this sake, creating a duet of bitterness and umami. Delicious 😋.

Let's start with the nose. The nose has fermented acidity and a hint of fresh fruity notes.
The mouthfeel is clean and refreshing, with citrus-like sweetness and acidity, with a hint of ear of rice, and after the umami, a slight bitterness tightens the taste and gives it a final sharpness.
First, with salted red clams 🦪. It is almost raw. The strong individuality of the flavor seems to be slightly overpowered by the sake. I also paired it with tuna meat that had been stripped of its threads, and this one is the best 😊(*I didn't take a picture of it, but it's great 💦).
Next, I paired it with beef tendon oden. The sweetness of the beef tendon gives sake a sharp and clean taste that turns it into a crisp dry sake. This is a good sake as a food sake.

In the mouth, there is a hint of rice and banana-like sweetness before it ripens, followed by a refreshing acidity. Finally, there is a pleasantly clean umami and bitterness along with a sense of koji.
Serve with braised chicken wings. The tenderness of the chicken wings and the collagen further bring out the umami of this sake, making it rich and mellow to drink. I think the taste of rokusyu might be a little bit stronger than the other sake. But it is delicious, though (laughs).
I also paired it with peanuts, which went well with the sake 😊The strength of the sake's flavor is balanced out just right 🆗.

Fried shrimp with tartar sauce. The tartar sauce makes the drink more smooth and the fermented taste is mixed with the umami and spiciness to make it richer. It's delicious 😋 but it also goes well with fried food. For example, fried oysters 🦪.

The nose has some acidity and alcohol. The mouthfeel is smooth with a hint of sweetness from the rice, and the taste is full and full with a good acidity.
I immediately paired it with grilled matsutake mushrooms. The crispy texture of the fibers and the unique aroma of matsutake mushrooms that escapes through the nose, as well as the sweetness.
