Today we visited Shiwa Sake Brewery, which also ships another brand of Shiwa Sake 😃The brewery owner told us about the different ways of making each type of sake and we even got to taste it at the end of the tour 😋. I bought this limited edition sake from the brewery 🍶. Let's get started. The aroma is of koji and some alcohol, with a hint of rice sweetness. When you put it in your mouth, you first taste the koji flavor, then freshness and a hint of sweetness, along with sourness and umami that spreads in your mouth. It has a clear taste that only freshly squeezed sake can have. I also visited the nearby Shiwa Shrine ⛩️, where the sacred tree is said to be about 1,200 years old. It doesn't have the graininess of last year's. The sweetness spreads in the mouth, and along with the umami, the moderate acidity and bitterness are pleasant. It's been a long time since I've had Tasake 😁 but what a strange phenomenon that something that was not available in Iwate Prefecture where I live is sold in my parents' home in Saga Prefecture 🤔. In the mouth, there is a fresh and refreshing sweetness and acidity, with a good umami flavor and a good bitterness at the end that is typical of new sake.
