The nose has a clean, grain-like aroma. In the mouth, it has a smooth texture and a slight sweetness of rice, and the acidity gives it a crisp aftertaste.
Serve with dried flounder. The unique flavor of the fish combined with the acidity made for a refreshing aftertaste. I heated it up afterwards, and it became even more like sake, with more sweetness and spiciness. If anything, I think it goes better with warmed sake.
