I paired it with homemade dried Oirang Flounder from a fish store that I have always been a fan of. Enjoy😊 The nose has a clean, grain-like aroma. In the mouth, it has a smooth texture and a slight sweetness of rice, and the acidity gives it a crisp aftertaste. Serve with dried flounder. The unique flavor of the fish combined with the acidity made for a refreshing aftertaste. I heated it up afterwards, and it became even more like sake, with more sweetness and spiciness. We had friends over from Okayama on Monday and Tuesday, so we had a lot of drinks. It was fun. ☺️ It's been a while since I drank at home today 🍶😁. Let's start with the first saké. The nose has a hint of alcohol and a hint of banana🍌. It is quite crisp in the mouth while retaining the sweetness of the rice. I wonder if there is a little bit of banana in the aroma. I paired it with grilled pork with ginger. The slightly sweetened sauce increased the acidity and alcohol content of this sake, giving it a smooth yet refreshing taste. I wanted to drink a refreshing sake, so I chose this one after reading the comments 📝 of the members of Sake no Wa👍. So let's get started. The aroma is apple vinegar 😳It might be the first time for me to smell it. It has a slight fruity flavor, but the acidity is very characteristic. The aftertaste is clean like a naturals white wine. First experience with abalone and shiro, a delicacy. Looking forward to seeing what it tastes like😊. This time with this sake 🍶: 💁‍♂️ The aroma is sweet and more fruity than expected. In the mouth, it is full and soft, with a hint of rice sweetness and plenty of umami. There is a slight bitterness at the end. The taste is milder than the usual image of Kenkunichi. Delicious! First, I paired it with natural mushrooms. The crunchy texture and rich flavor of the mushrooms (see 🍄‍🟫) bring out the flavor of this sake even more and give it a richness. They go well together. Next, we had abalone and shiroro. The abalone's crispy texture and the liver's slightly bitter and unique flavor together mellowed the taste of Kenkunichi and increased the sweetness of the sake. Continuing from last week, I went on a business trip to Towada 🚙 to my latest favorite restaurant 🍶😁😁. I asked the owner to warm up the sake and he recommended this one: 💁‍♂️ So here it is. The nose is pleasantly alcoholic and tickles the nostrils. The first thing you notice in the mouth is the acidity, which is followed by a nice sweetness that spreads slowly. It is perfect for a slightly chilly night like today, which reminds me of autumn 👍 Next, I served it with grilled sardines with koji. The fat of the sardine and koji go well with this sake. It makes the sake go down well. ☺️ But that's all for today since I have to work tomorrow 🙅I'll come back tomorrow (lol) 🚶. Rice: 100% Ise-Nishiki from Iga Polishing ratio: 60 Alcohol content: 15%. Today my wife is back home in Fukuoka for my niece's wedding, so I'm alone and open a bottle of this sake that I love: 💁‍♂️ Let's get started. The nose has an aroma of rice ears and a touch of alcohol. In the mouth, it has a soft sweetness, a moderate citrusy acidity that escapes through the nose, and finally an umami and slightly bitter aftertaste that leaves you with a clean and refreshing finish. It is a sake that reminds me of autumn 🍶🍂😁. With sashimi of tuna. This time I tried the sashimi with Iwate dashio (salt). Delicious❗️😳The flavor increased‼️ and also the mouthfeel of this sake itself became smoother and sweeter while balancing the acidity. Best 😊🎇. Rice polishing ratio】60%. The nose is fruity with a hint of acidity. In the mouth, there is a sweetness with a refreshing acidity reminiscent of grapes, a pleasant umami taste, and a hint of bitterness at the end. Today was supposed to be a rest day, but after watching the floats at the Morioka Autumn Festival 🎇, I felt like drinking 😅I chose this one this time👍. Let's start with this one. The aroma is slightly sweet on the nose. It has a refreshing acidity in the mouth with a soft umami and a good bitterness. I think it is suitable for a mealtime drink. I paired it with three kinds of snacks. The first is sanmasuzuke (a local dish of Hokkaido and Tohoku. I think it is best paired with sanmasuzuke, a local dish of Hokkaido and Tohoku, in which green chili peppers, soy sauce, and koji malt are pickled one by one. The flavors were integrated and the sweetness of the rice was enhanced. Surprisingly, it also went well with olives. The saltiness, acidity, and bitterness brought out the flavor of this sake. Thinking about what would go well with corned beef & liver paste 🤔I looked back at the comments 📝 from the last time I drank it and chose this one that I had bought 2 bottles👍. Quickly. The nose smells like apples. The sweetness in the mouth is like honey on apples, with a sourness and bitterness at the end. The sweetness seems to have increased because the weather has cooled down a bit. It is interesting that the taste is different even though it is the same sake 😄. Now, let's have it with corned beef and liver paste. This corned beef has a strong flavor due to its lean meat, which increased the sweet and savory taste of this sake. ❗️ Next, with liver paste. The mouthfeel has a refreshing aftertaste with a hint of acidity and umami. Easy to drink 😄. I paired it with grilled chicken marinated in salted koji. Today I went to Kakunodate in Akita. It was a nice place to visit, with the samurai residences still standing and the atmosphere of the townscape still very much alive😄But it was hot☀️💦and to be honest, the humidity was so high that I thought I might suffer heat stroke🥵. I thought I might get heat stroke 🥵. Let's get started. The nose has a hint of alcohol, ears of rice, and sourness. In the mouth, there is a citrusy acidity and bitterness like summer tangerine, and the taste is refreshing, just like summer sake. ❗️ Serve with a salad with Shotsuru dressing. My junior at work came to Morioka for a visit, so we went here to do a tasting together. I saw that the price was lower on the 10th for Father's Day, so I checked the date and found that it was exactly on the 10th ❗️ and I knew I had to buy it. ‼️ It tasted good too 😄. Above all, it has a lingering soft umami taste. ☺️ Next, fried horse mackerel and cod 🐟 with tartar and lemon 🍋. I think the fried cod is a little too light and the taste is lost in the impact of this sake. On the other hand, the fried horse mackerel has just the right amount of flavor unique to blue fish. The horse mackerel is the winner. ❗️😋 If anything, the more acidic or more umami taste would be a better match than the bland ones🙆. Rice polishing ratio: 70%.
