It was very sunny today too. ☀️😅I could buy vinegared kohada (konoshiro) at Hoshikawa Fish Store, so today I paired it with sake from here 💁♂️.
Let's start with the aroma. It smells like steamed rice and has a good alcohol taste.
In the mouth, it has a fruity flavor with a characteristic acidity. The mouthfeel is clean and the aftertaste is sharp and goes down the throat smoothly.
Serve with vinegared kobata (konoshiro). The slightly fatty kohada and the vinegar are well matched, and the sweetness and umami of the rice in this sake increases and the acidity mellows out. It is so easy to drink that you forget that it was dry 😁.
100% Hitanishiki rice is used.
