A hidden izakaya that happened to catch my eye and sucked me in with the sake on the signboard menu. Sake from Sado Island, which I had longed for! 😻 The menu said YK35, Yamada Nishiki, Kumamoto yeast, Polishing 35, but what came out was 🌾Gohyakumangoku rice / Polishing 45 Texture is melt-in-your-mouth mellow Soft and gentle LaFrance juice Mild acidity, clean, light and umami mouthfeel Delicious 😋like seafood seems to go well with it! I enjoyed my favorite yuba yam with chopstick rest 👏.

🪿 Yamada Nishiki / Polishing 35 / Kumamoto Yeast The texture has a core that makes you wonder if even the brewing water is different from that of the Hokusetsu you just had. The standing aroma is a mild ginkoku with a graininess. When served cold, it has a bitter and pungent taste in a good way. At room temperature, the deep sweetness and deliciousness fill the mouth, and the aroma is gorgeous and delicious. The "SAKE ISLAND" on the label is also nice 🩷. I ordered Hokusetsu YK35. What's that? Well, I thought it was okay, but the manager gave it to me as a free gift! Thank you very much! I'll have to go back! The sake selection is just as good as the shochu!

Home-aged 🧀. Yamada Nishiki / Polished 55 Cheesecake on the nose! At room temperature, there is also a scent of gin. The mild acidity from the lactic acidity and the richness of the umami flavor are complex and round with a short, clean aftertaste. The alcohol lingers moderately in the throat. We are grateful to have the blessings of Mt. Fuji in this sip! It goes well with Hakoneze's rich tomato cream sauce! I would love to pair it with Tom Yum Curry or something like that! I want to have it again after climbing Mt. Fuji. ⛩️ It's a little bit strong, but I like Laphroaig's aging as well, so it's interesting and delicious 😋.

When you put it in your mouth, the sweet and umami taste of rice spreads out and it is not too dry. It is not too dry, but has a good acidity that quickly disappears. There is almost no bitterness, and it has a balanced light and umami taste. It goes well with meals, and one chopstick after another and one cup after another will not stop. 🌈 Yamada Nishiki / Polished 35 Very mild ginkoku Like ramune Easy to drink like a summer sake Much cleaner and clearer taste than I imagined 😋 Like a clear stream. Fudo is also not a hassle: ❣️ Sonar beer for toast 🍻. A problematic 😸Nyan Sawasumuji's 🍹. Smoother than the previous berry! It's thicker and subsequent drinks are still fruit on your face. LOL!

🌹 Ehime 🌾 Shizuku/Polished 55 I was drooling and waiting for the opening of the bottle when I saw the review by Wan Wan: ‼️✌️ I happened to be on my way home from a golf lesson and saw the words "Rose Garden" 😇. I stopped by and had a soft-serve ice cream with roses 🍦Pic3 I was lucky enough to see the Princess Michiko plant🌹Pic.4 It tasted especially good after all the exercise🌹😋. Standing fragrance elegant🌹. The flavor of the Shizuku Ehime is a delicate rose 🌹Lingering clean and floral😍. Hints like a lush florist's fridge at the beginning of the drink, and a beautiful floral aroma with a sweetness like lily in the middle: ❣️ Flower yeast seems to be more sharp, but it tasted as gentle as Empress Michiko: ❣️ Happiness!

GW Expedition 🚘. First time to see a storehouse near our destination temple. When I saw the sign, I confused it with Tsuki no Katsura in Kyoto💦. The brewery is not registered with Sake-no-Wa. Yume Issen / Polishing 60 Apple-like ginkoku (gin aroma) with a hint of sake spirit Slightly thick texture. The first day of opening the bottle, it was very sweet and sour with a gaseous taste. Mellow sweet and sour like acerola or apricot. The aftertaste is refreshing 😋. Personally, I find the sweetness of the wine tiring to drink, so I drink it in small sips. Aged sake but delicate 🤔. Pic.3 Near the brewery, there is a temple called "Nyoirin-ji" (temple of frogs) where wind chimes look very nice. The red seal also has a cute frog hand-drawn illustration: ✍️ Pic.4The sake brewery's handmade popsicles are crispy and refreshing! So delicious 😋! The main distribution is in the local Ogori area. 2nd step 👣Drinking comparison of different yeast Yamada-Nishiki / Polished 60 / No.9 Yeast The standing aroma is like custard cream. On the third day, the aroma became a little more floral, like a cake shop aroma, and like the No. 7 yeast, it was full-bodied! But when served cold, the sweetness overlaps the umami of the rice 😋. I thought I wanted to match it with Nagoya meal, but it is very satisfying on its own 🥰. New koji room was built from R4BY. The second step is the woody aroma on the koji rice, which is also enjoyable, according to the brewer's brother. I remember the 1st step was more rugged 🤔, maybe due to the sake rice. ...I wonder if the new sauna room has improved it 🧖I'm looking forward to more and more of this revived brewery 😊.

Junmai Ginjo 50 Sweet aroma like LaFrance on the nose Slightly slimmer than Tanaka Rokuugo, with a light sweet taste. Less bitterness than Tanaka Rokuugo, even when served cold. Mild acidity, but not too aromatic and delicious as a mid-meal drink. It is a little sweet, but it's refreshing and makes you want a glass of sake right away! Stopped by on the way to a liquor store in Itoshima 🚘. Even though it was a weekday in the middle of GW, there were a few out-of-prefecture license plates here and there. There was no special limited edition sake from the brewery. I bought this one with a retro label that you don't see at liquor stores!

I got this as a reward for 4 days of driving 🎁 at a convenience store I stopped at in Nagashima, Kagoshima prefecture, where I got off the ferry from Ushibuka port 🎁. I was hoping it would be Satsushu Masamune, but... Oh my! My first yellow cherry blossom 😍. Straw-like aroma. Smart sweet-umami flavor, like water when cooled down. I like it at room temperature to increase the flavor of the rice, and it makes me want to eat pork cubes 🤤. I want to go to Hokkaido next month, Hiroshima the month after that, and Kyoto the month after that 😊I also want to visit Yellow Cherry Blossom Kappa Country🥰.

Mellow sweet taste I thought it would be a crispy type because it's a honjozo, but it has a strong rice flavor and a light sweet aftertaste that I like more than the standard. I put the mackerel and chirimen (dried fish) that I bought as a souvenir on slices of fresh onion 😋. A photo taken on the ferry between Ushibuka (Kumamoto) and Kuranomoto (Kagoshima) 🙈A ride makes me want to drink 😋! Pic.3, Not a red seal book, but a ship seal book 😳. Pic.4, Oiki-undan (sea urchin) at Ushibuka Port! It was fun to be able to participate in the Amakusa raw sea urchin samadai 😋!

Fountain of Youth ⛲️ past one The cork blows out vigorously before it's even sealed~! It overflows 🍾💦 Sake shower is now irresistible 😂 should have emptied it before getting into the onsen😩. Aroma is lactic acid drink Taste is strongly carbonated by gas with a bitter taste. The taste of rice is taken away by the gas as it dries out the rice and the texture is mashy and coarse. It was near room temperature while I was cleaning, but it was delicious with fried horse mackerel 😋. Thanks to my cousin for running out to buy it even though it's not my favorite type 😊. We took the ferry from Nagasaki to Amakusa and stopped by the Amakusa Sonar brewery near the port ⚓. This is another hard-to-find sake, but I found it at a souvenir store along the national highway 🍹.

Craft Sake Tomato, Kiwi, and Cola Comparison Hinohikari 🌾 Rice produced in Fukuoka Prefecture Polished 92% Kake/68% Koji Of the three, my favorite is cola! Aroma of spices in the mouth! Yomeishu Sour 😋. The medicinal taste is similar to the craft cola drinks from Sapporo 🥃✨. I imagined Max🍅 to have a strong acidity like dried plums, but the juice is sweet but surprisingly dry and young🍅🥤. Kiwi 🥝 is the least assertive and easiest to drink koji sour All were delicious 😋😋.

Haneda Airport Limited Sake Classic Light The standing aroma is pear-like... it also smells like copy paper delivered from Askul lol! It is clean, sweet, spicy and delicious, with a sense of grain!
