Purchased at a local liquor store for heating. Warmed to lukewarm 43 degrees. The aroma is of sweet rice with a hint of matured acidity. A sip reveals a gentle sweetness that fills the mouth, followed by sourness and a slight bitterness at the end. The sweetness does not linger and has a good sharpness. It is made with Yamadanishiki from Hyogo Prefecture, and the rice is delicious and even elegant. Another delicious heated sake.

A friend of mine gave it to me and I put it down for a while. The jacket is really cool and austere. When I poured it, I was surprised at the color. The color was like plum wine. The aroma is mellow and mature. The taste is exactly like plum wine, with a good balance of sweetness and sourness, and it has a nice sharpness, so you won't get tired of drinking it. It is a versatile drink that can be served as either an aperitif or an in-between-dinner drink. It is very tasty.

It was still cold, so I went to a local liquor store and got a bottle to heat up. It was a hot sake, but even if you drink it cold, it has a tangy, slightly sparkling flavor. I set the temperature to ❗️45 and heated it up. The gentle sweet aroma of the rice confirmed its deliciousness even before I drank it. The sweetness is balanced with a hint of sourness and bitterness. This quality for a little over 2,000 yen per bottle is too good to be true. It's a must-have sake.

Opened this one, purchased at New Year's. Warmed at 45°C. The aroma is like freshly cooked rice. In the mouth, it has a gentle sweetness of rice, sourness, and a pleasant bitterness with a nice sharpness. Tonight's accompaniments are meatballs and thick fried bean curd. It is the best!

Purchased at a passing liquor store. The recommendation is to drink it cold, so I started by drinking it cold. It has a fruity aroma, a gentle sweetness, sourness, and bitterness, and while complex, all are well balanced and quite tasty. There is a reason why it is so popular. I prefer it hot, so I set the temperature at 45°C. The aroma is of gentle rice. The aroma is of gentle rice. The taste, which was well balanced, is now more sour, but not unpleasantly sour, and the sweetness is refreshing. Junmai sake tastes good even when heated, so it can be enjoyed in a variety of ways. This is not the case with junmai ginjo or junmai daiginjo. It is a good sake that can be served both cold and hot.

Purchased at a liquor store I stopped by on a whim. Saga has many kinds of delicious sake. Today it was served at room temperature. It has a pronounced acidity in the mouth, like a white wine. It is not sweet and goes well with New Year's sashimi. I tried heating it up. The aroma is faintly of rice. The taste is still sour and bitter, with a hint of sweetness, The taste is still sour and bitter, but there is a hint of sweetness. It is crisp both cold and hot, does not interfere with meals, and goes well with food. Tonight, I will have Sawan as a snack.

Every winter, I buy snowmen ⛄️ Since it is sold out at the end of the year, I bought it early in December and put it in the fridge. To drink on New Year's Eve. First of all, I turned the top and bottom of the bottle and let the cork to spread all over the bottle. Immediately after opening the bottle, gas started to climb up, but because the bottle was opened without gas, it did not overflow. On the palate, there is not much sweetness, but a good balance of bitterness and acidity, with a nice gasiness and a nice sharpness for a nigori. I will probably buy it again next year.

I purchased a sake shavings produced by cookery researcher Ryuji-san online. I took the liberty of deciding that it would be black to drink hot, and set the temperature at 45°C. The aroma was not so much the sweetness of the rice, but rather a complex sourness or strawiness, and it did not lean either way. In the mouth, bitterness and sourness come first, followed by a gentle sweetness, with a nice sharpness and a short aftertaste. As the concept suggests, it goes well with all kinds of food. It is dry and seems to go well with dashi soup stock. As expected, produced by a culinary researcher. It is an impeccable sake that can be enjoyed by all.

I bought this one, which can be served both hot and cold. Today, I served it hot at 45℃. The aroma of rice spreads in the mouth. In the mouth, the sweetness of the rice and a moderate alcohol taste are balanced by a gentle bitterness and spiciness. The sweetness is also sharp and lingers there. We served it with a bowl of rice topped with grilled meat and grated enoki mushrooms. It is a pleasant sake that does not interfere with any dish, yet has a strong presence.

Purchased at a local liquor store. There were many Kirinzan dry sake, but I chose the soft one. It seems to be delicious warmed up, but I first had it chilled. The aroma is of wood, like that of a barrel. The taste is alcoholic, with little sweetness. The bitterness and acidity stand out. It tastes like a Japanese sake. It is dry enough, but I wonder what would happen if it were even drier. Next, we tried it warmed. It was still dry even when warmed, but I could taste the umami of the rice. It has a strong alcoholic taste, like a man's sake.

The season for this has come again this year. When it gets chilly, I always buy this one. The temperature is set at 50 degrees. The aroma is warming, and when you put it in your mouth, it has a sweetness and gentleness like milk. There is a moderate acidity afterward, and it is not too sweet. The aftertaste is like freshly cooked rice in a junmai sake. I like it very much. I wonder how many bottles I will buy this year.

Purchased at a nearby liquor store. The aroma is subdued and the aftertaste is sharp. It has a clear dry taste with no peculiarities, just like water. There is not much alcohol taste, so even those who do not like sake can drink it. We drank it with unaju, a type of rice topped with eel, and it refreshed our palates without destroying the taste of the ingredients, so it can be drunk with any meal and on any occasion. The lack of peculiarities may make it a bit lacking for sake lovers.

This is my first time to drink Aichi sake. The aroma is melon-like and greenish. As the label on the back says, it tastes exactly like many things. At first, as the aroma suggests, it has a melon-like subtle sweetness, with an unbiased and well-balanced taste of sourness and bitterness. It has a nice sharpness and does not seem to tire one's palate. It goes well with all kinds of food, but it would go well with oden with dashi broth. The flavor of bonito and kelp seems to be more easily felt.

I had a sudden urge to drink cold sake, so I went to a local liquor store. It is a well-known sake. The aroma is slightly fruity and fresh. It is slightly cloudy and tastes firm rather than clear. It has a good balance of sourness and sweetness, and the aftertaste is not too strong. It is a good sake to drink in a relaxed atmosphere.

This is a repeat purchase. I bought it before and when I heated it up it tasted like amazake, but has the taste changed somehow? Is it just me who thinks it tastes different? It has more acidity and the sweet and sour taste stands out. This is delicious. It is unique in that it is sour whether it is cooled or heated. It is like a hot wine. As I mentioned before, I would like to pair it with spicy food. It would be great with grilled chicken with a lot of black pepper. Or, take it to a BBQ and serve it with peppery steaks. Tonight I don't have such a great snack, so I'm going with the Baby Cheese Black Pepper flavor.

As I thought, I bought it online toward the end of the year. I bought it as a hot sake, so I heated it up. The aroma has a gentle scent of rice, typical of junmai sake. When I drank it, I felt the umami of rice in the center of my tongue and acidity on both sides of my tongue. Yet, it also has a crispness to it, making it a well-balanced sake. With Matsumaezuke pickles as a side dish, it is truly Japanese to the fullest. It is also a great cosmopolitan sake. You won't find it at liquor stores, so if you buy a few bottles online, you can use them to warm up your sake!

I bought some mildly sweet hot sake online for the New Year's holiday. First, I warmed it up to 35 degrees Celsius. There was not much aroma, and it smelled like THE sake. In the mouth, there is a lingering taste of alcohol and acidity, followed by a sweet taste. Just as the label says, it is a mellow sake. It even has a sense of maturity. Tonight's side dish is pork and burdock in a Yanagawa style with plenty of sansho sprinkled on top. It is the end of the year, and I feel relieved.

After all, Hakkaisan is a local staple when it comes to Niigata. It was cold, so I went for the hot sake without hesitation. The aroma is of rice. It is a little dry on the palate, but you can really taste the rice. It is a perfect "food sake" that goes well with all kinds of food and does not interfere with it. This is the level of sake that makes me want to keep a bottle of this sake at home. The price for this taste is truly the best in terms of cost performance. I can't help but envy the residents of Niigata Prefecture who can get this at a discount price at the supermarket. It is definitely one of the best sake representing Japan ❗️.

Continuing on my business trip to Niigata, I bought Shijikizuru (snow) at a supermarket. The price is cheaper than in Kanto. I was worried about the price, but I chose the top-ranked sake "Yuki". It was extremely cold outside, so I had no hesitation in heating it up. The aroma is sweet from the rice, but not fruity, but refreshing. In the mouth, it is light and easy to drink with a gentle sweetness and sourness and a clean aftertaste. It would go well with Niigata's delicious seafood and crab🦀. Tonight's accompaniment is Niigata's famous kaki no tane (persimmon seeds). Wasabi flavor and dried firefly squid.
