Long time no see Kokugon, a low-alcohol summer sake Swallow Label. The aroma is modest and refreshing. The sweetness is moderate and the light acidity spreads. Although it is low in alcohol, it still has the firmness that is typical of Kokugon. In fact, it has such a core that one wonders if it is really low-alcohol. It has a core. I really like Kokugen.
Kunigon Junmai Ginjyo Fukunoka Yamahai-brewed

Rice : Fukunoka, contract grown in Fukushima prefecture, Polishing ratio : 60%, Sake meter : -2, Acidity : 1.5, Amino acidity : 1.3, Alcohol content : 15%.
Junmai Ginjo-shu made with 100% Fukunoka and brewed in Yamahai. It is a refreshing Yamahai. Light, with an elegant sweetness, but converging with a slight lactic acidity, it has a slightly complex texture and is good as a mid-meal sake.
Fukunoka has the characteristic of not producing a lot of acid and amino acids, which makes this sake soft and full without any stinginess.
The yeast used is "F7-01" to take advantage of the sake's elegant flavor without using aromatic yeast. It makes for a slightly sweet sake.
The sake brewer was formerly known as "Hosoi Brewery Honpo" and produced sake brands such as "Nanko" and "Kame-no-i." It is said that one day a monk who was preaching on the street stayed at the Hosoi family and gave the name "Kokugon" to the sake.
The sweetness, acidity, and spiciness are perfectly balanced, so you will never get tired of drinking it, and you will find yourself down to 1/3 of a cup.
