Sumiyama Sumiyama Junmai Ginjo, opened 40 days ago, is made from local contract sake rice, "Saganohana" from the Sumiyama district. It seems to have become drier than when we first drank it. The sweet and sour aroma is still there. The gassy feeling is gone. It seems to have changed to something else, but this may be a good thing. We are rearranging the fridge to secure new sake...

I like the name of the secret sake.
It was a little fizzy, probably due to the first opening.
This one is also light and easy to drink.

Sweetness: Medium, Rice: Koji: Yamadanishiki, Kake: Saga no Hana, Rice polishing ratio: 60%, Alcoholic strength: 15%.
It has a light, easy-drinking aroma and taste with sweetness as its main flavor. It is the type of sake you would want to drink casually on a regular basis. It is typical of Saga sake, which is developed around a full-bodied sweetness. Toward the end, the sweetness fades out and acidity and astringency begin to appear in its place.
I drank it at Hizenhama during the day and drank it at night.
It feels similar to the flow I drank before, slightly effervescent and refreshing, but I prefer this one to the flow.
