The sharpness refined by the town of Imariyaki, and the resolution of the high-resolution dry taste drawn by 901 yeast. This is a series of different yeast from the standard product "Ko-Imari Mae Junmai Ginjo". The yeast used is the Association Yeast 901, which gives this sake its characteristic mild ginjo aroma. This sake, which is carefully stored in bottles for about six months in the brewery and shipped when it is at its peak of maturity, combines a "light but robust flavor," a "refreshing smoothness," and a "crispness.
It has a light but firm flavor, a refreshing taste, and a crisp finish. Slightly firm when served cold. Warmed to lukewarm, it expands with a soft touch. Convergence is acidic and refreshing.

This is the sake we chose as a result of our agony to take the Shinkansen from Tokyo to Hakata.
It has a clean flavor design, and as a Yamada-Nishiki 55, it is "light, fresh, and clear" type.
The aroma is fruity and not too bright, and the taste has a roundness that is typical of Yamada-Nishiki, even though it is more on the light side. The aroma opens up depending on the temperature range, and while it is fruity, it does not necessarily need to be served cold, making it a useful sake for long trips on the bullet train.
Pairing
It is well-balanced enough to be drunk on its own, and was perfect with dried seafood snacks on the Shinkansen.

Sumiyama Sumiyama Junmai Ginjo, opened 40 days ago, is made from local contract sake rice, "Saganohana" from the Sumiyama district. It seems to have become drier than when we first drank it. The sweet and sour aroma is still there. The gassy feeling is gone. It seems to have changed to something else, but this may be a good thing. We are rearranging the fridge to secure new sake...

It has a light, easy-drinking aroma and taste with sweetness as its main flavor. It is the type of sake you would want to drink casually on a regular basis. It is typical of Saga sake, which is developed around a full-bodied sweetness. Toward the end, the sweetness fades out and acidity and astringency begin to appear in its place.
I drank it at Hizenhama during the day and drank it at night.
It feels similar to the flow I drank before, slightly effervescent and refreshing, but I prefer this one to the flow.
