I purchased a sake shavings produced by cookery researcher Ryuji-san online.
I took the liberty of deciding that it would be black to drink hot, and set the temperature at 45°C.
The aroma was not so much the sweetness of the rice, but rather a complex sourness or strawiness, and it did not lean either way.
In the mouth, bitterness and sourness come first, followed by a gentle sweetness, with a nice sharpness and a short aftertaste.
As the concept suggests, it goes well with all kinds of food.
It is dry and seems to go well with dashi soup stock.
As expected, produced by a culinary researcher.
It is an impeccable sake that can be enjoyed by all.
