After all, Hakkaisan is a local staple when it comes to Niigata. It was cold, so I went for the hot sake without hesitation. The aroma is of rice. It is a little dry on the palate, but you can really taste the rice. It is a perfect "food sake" that goes well with all kinds of food and does not interfere with it. This is the level of sake that makes me want to keep a bottle of this sake at home. The price for this taste is truly the best in terms of cost performance. I can't help but envy the residents of Niigata Prefecture who can get this at a discount price at the supermarket. It is definitely one of the best sake representing Japan ❗️.

Continuing on my business trip to Niigata, I bought Shijikizuru (snow) at a supermarket. The price is cheaper than in Kanto. I was worried about the price, but I chose the top-ranked sake "Yuki". It was extremely cold outside, so I had no hesitation in heating it up. The aroma is sweet from the rice, but not fruity, but refreshing. In the mouth, it is light and easy to drink with a gentle sweetness and sourness and a clean aftertaste. It would go well with Niigata's delicious seafood and crab🦀. Tonight's accompaniment is Niigata's famous kaki no tane (persimmon seeds). Wasabi flavor and dried firefly squid.

I bought it at a souvenir shop. Niigata is famous for its sake such as Hakkaisan and Kubota. I was torn between this and honjozo, but I chose this one to drink chilled. It has a mild aroma, but once it hits the palate, it has a firm umami and acidity, and is refreshingly clean and crisp. It makes me want to eat sashimi or boiled fish with ginger... But since I don't have any, I had the golden and silver packaged cubes of tuna as a snack. 6P cheese and tuna are the best snacks when you put them together.

It has no strong sweetness, sourness, or bitterness, and in a good way, it has no unpleasant taste. It's the type of food sake that won't interfere with any dish. For me, who likes umakuchi, it may be a little lacking 💦 I prefer a little more umami from the rice.

I bought this at Joetsu Myoko Station in Niigata. Niigata has many famous sakes, but we chose to avoid the famous ones. The recommendation was to warm it up, so I immediately set the temperature to 45°C. As the label said, it had a very elegant taste. Aomori has a strong image of rice wine, but Toyobai is famous for its hidden sake. The sake rice, Toyobai rice, is unique. I held out for it as a weekend treat. I had it at room temperature, and the aroma was exactly that-fruity, like a melon. The first attack was sweet, but it was soon followed by moderate acidity and bitterness. It has a nice sharpness and does not interfere with the taste of food, so it is very useful as a food wine. Tonight, I served it with sweet pickled ginger as a snack. It will make you happy.

I found something I had never seen before at the famous Ichinozo, so I immediately bought it. First, at room temperature. It has a strong alcohol taste, and it has a dry, refreshing aftertaste, but I don't like it myself. It is made from sasanishi rice, and I got the impression that the umami of the rice was also a little weak. I decided to warm it up and tried heating it up. The umami of the rice increased, but the alcohol did not disappear. Everyone has their own taste in sake, and this is my own judgment and prejudice. (Postscript) It has been about two weeks since the first sip. Drinking it at room temperature, the alcohol feeling has subsided, and it goes in the mouth as easily as if it were water. There is an alcohol feeling later on, but not as much as in the mouth opening and it does not bother me. As expected, the umami of the rice is weak, but as the brand name suggests, it has a gentle "tanagokoro" feeling. It is easier to drink when it has settled down, which is how I like it. This is why sake is so interesting 🤣.
