I have a few bottles at home but "I must drink the first sake of the season," so I went to my first liquor store and chose this second bottle. Recently, I bought a book on Ienchuukan by a Japanese who has lived in China as an expatriate for a long time, and I am looking for sake to go with it. I was inspired by the idea that Kouji's Hatsu Shibori might go well with it ⁉️ and the result was a great answer ....... ‼️ It is perfect for light Chinese home cooking. I'm going to try a variety of light, fruity, apple-like types for a while 😋.

I wanted to drink a current-style, slightly sweet, slightly sparkling Shiboritate, so I chose this one at my first liquor store. I was lured in by the liquor store's careful explanation of the pop-up. It was well-balanced, light, and easy to drink Miyamanishiki, not too sweet with apple flavors. I was curious about the mandarin-flavored doburoku from the same brewery that was also on the shelves. I should have bought it!

The Christmas label of Takachiyo, on the far left, is just like the label image, apple-like, fresh, fruity, and light, and is a good choice for sake beginners. Sakazukin-chan is also cute ❤️ The liquor store I go to doesn't have Takachiyo, so I finally got to drink it at home ✨.

The second bottle from the left, the heaviest and most robust of the five at 17% alcohol by volume, goes well with strong-flavored meat and fish dishes. It is a bit old-fashioned and typical Japanese sake. It is also delicious when heated. I drank Ehime's most popular sake before, but it is still an old-fashioned sake, and you can enjoy the feeling of rice sake 🍶 It will be exceptionally delicious if you drink it at a hot spring ryokan in Ehime. ♨️

Second bottle from the right: Kikuhime This is the sake brewery that made me fall in love with sake when I was young ✨. The BY is a freshly bottled daiginjo with a youthful and refreshing taste, with a fruity base and the classic rice flavor that is typical of Kikuhime spreading elegantly. It is of a quality that makes you want to continue drinking it slowly with just the sake, even without any snacks.

Shimane Sake (5) I went to a home party of sake-loving girls. We brought a total of 5 kinds of sake. We started with a champagne toast and drank for 8 hours, ending with a chocolate cake 💓. On the far right is the Tamasakura I brought. The balance of light umami, acidity, spiciness and sweetness. It is delicious at room temperature, but when warmed to lukewarm, the umami of the rice spreads out plumply and the food goes along with it. It is a perfect match for "simmered small potatoes, dried shiitake mushrooms, and thinly sliced deep-fried tofu" cooked in a broth carefully made from kombu and bonito. Sake from Shimane goes well with bonito soup stock and light soy sauce.

Shimane Sake (4) It tastes great cold, but it's quite heavy and I give up😅 So I tried heating it up. I tried lukewarm, then hot, then cooled, and my favorite was the warmed version. Shimane's classic sake is perfect for the coming season: ‼️ I have 4 more bottles left from my trip to Shimane, bought in bulk. I'm looking forward to it 😊.

I was hoping to try other types of Harushika, which I got as a gift in the spring, because it was so delicious ✨ A Harushika salesman visited my neighborhood liquor store over the weekend and let me try most of the types they brought for tasting, from Junmai Ginjo to Junmai Daiginjo Harashu. ✌️ I wanted to try the Namo Hashimoto Tsukuri, but in the end I bought this one. It is a limited time only super-harakuchi sake with an appealing aftertaste that is less cloying and more umami than the regular super-harakuchi sake. Tonight we had simmered flounder and various Japanese side dishes to go with it. The strong seasoning goes well with it. If I have a chance to drink it next time, I would like to try it with crab miso or ankou nabe. I am sure it will go well with it. ❗️

Shimane Sake (3) This is the first of a group delivery of 6 bottles of Shimane sake from Hitoshizuku, a local sake shop in Tamatsukuri Onsen. This is a sake shop that Sakegawa users will absolutely love: ❤️ You can really enjoy Shimane sake at this sake shop. You can do tastings and have a real drink too: ‼️ Gassan Innovation Series Yellow Malted Rice 4-Step Brewing. It has a beautiful sweetness and gentle rice flavor. Tonight we are having teppan-yaki with bacon. It goes very well with ‼️ Shimane sake has many tastes that go well with classical seafood dishes, but this one with a twist of modern taste also goes well with home-style Japanese and Western dishes. Ahh, delicious 😋 Thanks for the treat✨.

I had been drinking classical sake for a while, so I suddenly wanted to drink something modern, so I bought this on my way home. The gentle sweetness of Miyamanishiki and the rummy flavor made it easy to drink, and even though it is 16%, I drank it in gulps, and the 4-gos bottle ran out in no time. I thought to myself, "I'll drink a little bit more of the classical sake, so it's more cost-effective." I forcefully erased the poor idea from my mind and enjoyed tonight's dinner of "pork shabu-shabu" with Mikotsuru. Sake that is popular nowadays is really delicious without a doubt 😋.

I received this as a gift from a sake friend in Osaka. I was born and raised in a neighboring town in Toyono-gun, so I miss it. It used to be a humble sake, but it still has a nice, clean, crisp taste with a touch of classicism. It is neither too spicy nor too sweet, and seems to go well with strong flavored dishes. I think it would also go well with fried food. Today's dinner was beef nabe with Chinese herbs. In Osaka, beef is the most popular meat, right? Wolfberries, jujubes, lotus seeds, garlic, ginger, rounded chili peppers, and other ingredients are perfect for the deep spicy soup. ‼️ It was delicious, thank you.

Shimane Sake (2) At the Tamatsukuri Onsen inn, I chose this from the sake menu. There are two types of Li Bai, and I chose the "refreshing and elegant" one instead of the "dry and crisp" one. As I prefer soft and reserved, the first glass was a bit strange to me, but my taste buds soon got used to it and from the second glass it went well with the food 😆. It was really beautifully sharp and went well with the seafood without interfering with it. It's no wonder that a sake from Shimane doesn't go well with kaiseki at a hot spring hotel in Shimane 😋 Thank you very much for the meal. After this, we were served "Oki Homare" and "Takamasamune" hot sake, but unfortunately I could not take a picture of the bottle labels because they were served with sake bottles. Both were classical in taste, and each was delicious in its own way. I would like to visit the Oki Islands: ❣️

Shimane Sake (1) Yamaichi is a little far from the center of Matsue City, but it is a popular restaurant that is full to capacity from early in the day. No matter what you order, cold, room temperature, or warmed sake, you will be served "Toyo no Aki". For cold sake, you have a choice between "dry" and "fluffy and full-bodied," and if you choose the rice flavor, you automatically get this one. Sake goes down smoothly with the first taste of "Kame no Te" and "Morogebi Sobaeri". After that, "hot sake and oden" also went well together. ‼️ Was it Toyono-Aki's Honjozo sake that was set in the commercial heater? I was too far away to check, but it was a heated sake that I never got tired of drinking. Matsue's izakaya is delicious ‼️ Thank you for the food! You can also see the sunset over Lake Shinji from in front of the restaurant.

This is the last 6 bottles I delivered in bulk at a liquor store near Aomori station. At an izakaya in Aomori City, both the person next to me at the counter and the person at the table behind me ordered this one: ‼️ I didn't have a chance to drink it there, but I was curious and made a home delivery. Tonight, I wanted to match it with a main dish of mackerel stewed with lots of ginger. It is a bit classical, but the balance is wonderful with a soft dryness and sharpness. It goes well with home prepared dishes and is safe for everyday drinking. ❤️ This is a local sake ‼️ I love it 😍.

This is the fifth bottle delivered in bulk at "Jizake Sato" near Aomori Station. It is a limited edition sake from Sato. It is mild and gentle on the throat, but quite a heavy type, and goes wonderfully with Japanese and Western home cooking. ‼️ I wanted to pair it with this tonight, so I grilled chicken skin on an iron plate. The fat from the chicken skin was used to grill the leeks and potatoes. Only salt and pepper to taste. Ahhh, delicious 😋 It was a very fulfilling time. Thank you very much.

This is the fourth bottle that was delivered in bulk at a local sake shop near Aomori Station. This is a new brand that has arrived for the first time since the Rokka Sake Brewery closed its old brewery and moved to a new location. The owner of the sake shop recommended it to us, saying that it had just arrived. It has a citrusy fruitiness that fits nicely with the flavor of Aomori rice. Tonight is a light yuzu kosho flavored nabe, but it is something different. If I were to pair it with burdock root, would it be a side dish? Or scallops grilled with miso? Maybe it's like a local sake that goes well with Aomori's side dishes. ❗️ It should be great to drink at Aomori's izakaya (pubs). ‼️ I like the type, so I'll drink a little bit and try a little trial and error this weekend: ❤️ < Postscript. After some trial and error, I think it goes well with soy sauce- or miso-flavored Japanese side dishes. From sashimi and oden to fried rice cake style okaki, soy sauce or miso is OK. ‼️

This is the third bottle I bought in bulk in Aomori. This is a basic form of Tasake, a special junmai sake. It has a consistent taste that I never get tired of, and it tastes great no matter when, where, or how many times I drink it. Tonight we are having hand-rolled sushi. It goes perfectly with sashimi and vinegared rice. ‼️ It is better to drink it with light appetizers than with strong flavored main dishes to bring out its refreshing taste. If I could find it at my local liquor store, I would buy it often. ❣️

This is the second bottle from a bulk delivery from a liquor store near Aomori station. The flavor is unbiased, does not interfere with the meal, and is quietly delicious. Today's dinner is "Chanchan-yaki (grilled salmon)", which goes well with the sweet miso flavor. I am sure that instead of salmon, squid, scallops, or swordfish tuna would also go well with the cup. ❗️ And it definitely goes well with yakitori with sauce. ‼️ Aomori sake is perfect with side dishes that are a bit strong in flavor. The big full moon🌕 on the label seems to represent hiyaoroshi.

This was one of the bottles we had delivered in bulk to a local sake shop near Aomori station during our trip. Hachisen has a fruity image, but after fire-roasting and aging, it has such a beautiful, calm, and rounded rice flavor 💓 It went perfectly with the pickled horse mackerel on rice. Hakusen and seafood is the royal road. ‼️
