100% Hitogochi rice from Ueda City, Nagano Prefecture; ingredients: rice and rice malt; ratio of polished rice: 55%; alcohol content: 17%.
This is a bottle that will tell the story of how this year's mutually successful season will turn out. It is good to enjoy the freshly-opened, lively sensation, or to wait some time after opening the bottle and enjoy the subdued flavor.
Green apple and slightly peachy aroma, fresh and slightly floral. The convergence is acidic and refreshing. The taste is dry and bitter, with a dry aftertaste.
Nanoha-san and the travel section. It was quite late.
We went to Matsumoto Castle in the evening and found it was dark. It was cold🥶 and it was too dark to see outside. We got ourselves together and went to Fukazake in Matsumoto City and tried our hand at deep drinking. 555, hahaha in Thai, right?
It was a mutual, as they do not drink locally brewed sake. Fresh acidity and umami blended together with a pleasant aftertaste. Now, let's drink 555!
After harvesting Hitogokochi rice in Shinshu Sanada, Tozawa area, we had a sake party at Tozawa community center 😅.
The lineup of the fierce people brought their own sake was amazing 😁Kutsunokake-san's sake was the best mix of "starter", "suppressor" and "hidden ball" sake 🤤 at room temperature!
Delicious!

Sake meter: -6, Acidity: 1.7, Rice: Hitogokochi, Polishing ratio: 55%, Yeast: Alps Yeast, Alcohol level: 16
Nagano C yeast (Alps yeast) is used. It has a strong umami flavor and a mild aroma. It has a heavy, robust, smoked silver-like flavor.
This is the taste of a pitcher with a suppressed flavor. It has a green apple-like taste. Slightly soft touch.
Mutou All Star Junmai Ginjyo Blended Genshu Fire-aged
Rated 4.4
55% rice grown in Ueda City, Nagano Prefecture, 16% alcohol by volume
A blend of the Muto-no-Kyuumei series, an all-star lineup of star players, starters, relievers, suppressors, hidden balls, and summer youth.
What kind of flavors will be shown, exactly a dream ball game, with a bittersweet acidity that tightens and sharpens.
White wine-like flavor with a hint of melon, strawberry, and lychee. It becomes rounded with aging. The finish is round, yet slightly dry. It will become more rounded with time.
Mutou SENSHU JUNMAI GINJO NAMAHARA SAKE
Next is Mutou!
The sharpest or solidest of the bunch.
This combination is good 🙆.
Yakitori: I shared a set of 10 with my senpai. The sake is delicious, and the sauce is strictly forbidden to be marinated twice.
The restaurant has about 8 seats at the counter only?
This time we visited without a reservation, but they said they would call me on my cell phone when a seat became available.
We waited in the waiting room of the station right in front of the restaurant, but it was not a bother at all.
Good morning @Mizuhashi🌞.
I'm actually planning to stay 2 nights in Ueda next month, and was wondering about Yakitori Bancho's sake selection, which is not like a chain restaurant.
It looks pretty good, but do you have any other Ueda recommendations?
Good evening, Matsuchiyo-san 🌆.
Actually, this is my first time to stay in Ueda, and I always stay in Tateshina or Tateshina on the way to the hotel, so I don't have much information about the nightlife in Ueda 😭.
I learned about Yakitori Banchou from President Okazaki's X information 😉.
Matsuchiyo, continued.
This time, I stayed at a rustic inn in front of the station. I felt that this is a town that is metabolizing, with many small, clean stores open at night. I recommend President Okazaki's X information 🥰.

After about four months of aging, it has a ripe, apple-like aroma. Although the acidity is moderate, it is mild and easy to pair with autumn dishes.
At the sake festival in Araki-cho Shinshu Ueda. Hiroyuki, the brewery's toji (master brewer), poured it for us. This is a banana, melon, and vinegar iso-style beautiful sake. I like this one too.
