Toyooka is the name of a sake brewery, Takazawa Shuzo. It has the same sound and name as Toshimaya's Hoka, and they are from the same prefecture, Nagano, but they are different.

A slightly expensive bottle of my favorite Toyoka (when I say expensive, it's about 2,400 yen for a 4-goupe bottle, so it's not really expensive, but really a little expensive 😆)
The balance that is typical of Toyoka is more elegant. I tried pairing it with various tsumami at home, but fresh sea urchin didn't go with it, nor did cheese or olive oil Western-style side dishes, so what I ended up with was a side dish carefully cooked in dashi broth. Just fresh boiled vegetables with "walnut miso" bought in Shimosuwa fit the bill. It is a beautiful sake that is typical of Japanese sake that makes the most of quiet Japanese side dishes.
It is exquisite on the day of opening the bottle, and after a few days, a slightly sweet taste comes out in the front.

The information was unusually close to the full specs, but this is not what I would call "dry". It is moderately sweet and tasty, with a bit of roughness and bitterness, and has a nice sharpness that I like.

It was slightly carbonated, rich flavor that made you think it was sweet, and the feeling of it disappearing after the aroma made me feel like I was in the middle of summer.
