I miss snowy mountains and mountain sake. So, Mt. Ena, one of Japan's 100 most famous mountains. The aroma of steamed rice is plump, the ginjo aroma is mild and banana-like, and the taste is crisp and clean while expressing the flavor of the rice well. The sake is from Mt. Ena, but we climbed Mt. Yatsugatake on the weekend. Yatsugatake, while freezing for the first time at -20℃, we enjoyed the spectacular view! However, at an altitude of 2,750 meters, with only 100 meters to go to the summit, the crampons on my right foot broke down! I had to go down the mountain in tears💦.

The only winery making muddy sake in Yamanashi Prefecture Agricultural Production Corporation Suzuran Sake Brewing Industry Co. The name of the brewery did not appear in the new registration. The brewery is in the process of making sake. We couldn't visit the brewery at this time of the year because they were in the process of making sake. I bought it at "Sato no Eki Ichinomiya". The open-air bath with a view of Mt. Yatsugatake was great! And a traditional set meal at a traditional set restaurant! The winery uses only Koshihikari rice produced by JA Nashikita in Yamanashi Prefecture and carefully brews it from rice malt to produce the finest muddy sake! Nigorozake, also known as "doburoku Made from 100% Koshihikari rice with a milling ratio of 70% and brewed using the modern brewing method for Sake. The sweet taste is created by using soze, chu, tome, and shidan (four steps). The fermentation period is 20 days, and the sweet taste and alcohol content are full of Yamanashi koshihikari rice, yeast, and enzymes, and it is a cloudy sake with a rich flavor without being strained.

The last day of work I received this as a surprise from a junior colleague of mine at work. He said, "I've always taken care of you. But I haven't taken care of him that much... We always exchange information about sake and never talk about work... But I'll take it gratefully. Thank you. When I heard "Eiko Fuji", I thought it would be a sweet and tangy sake, but it was surprisingly sharp! It was the perfect sake for a meal! From the following website Collaboration of Yamagata Prefecture's "Eiko-Fuji" and Kumamoto Prefecture's rice rice "Morinokuma-san"!　Kumamoto Castle was severely damaged by the Kumamoto Earthquake that occurred in 2016, and the total damage is said to be worth about 63.4 billion yen. A portion of the proceeds from this Eiko-Fuji Morinokuma-san will be donated directly to the Kumamoto Castle reconstruction efforts!

Miyazumi Nigori Sake once a year I was able to get it again this year ✨! The moment I opened the seal, the lid flew off with a dry pop! Dangerously easy to drink! Nigori Sake that is as white and fluffy as snow! The aroma is fresh and sweet, like a waft of rum. When you put it in your mouth, the sensation of popping bubbles fills your mouth, and each time the bubbles pop, a slight sweetness, a juicy citrus acidity, and a refreshing slight bitterness explodes to bring them all together nicely! When swallowed, it disappears unexpectedly quickly, and the aftertaste is surprisingly dry and sharp. It is delicious and makes you smile. Tanzawa, my hometown in Kanagawa Fuji and a helicopter greeted us at the top of the mountain!

2022 World Cup. My favorite country, Argentina, won the World Cup 🏆! Driving to Yamanashi Prefecture We went to the Yoro Sake Brewery, which we were a little curious about. I really wanted to have a meal, but I didn't have time, so I went to a café. I had a sake-based parfait 🍶. It was very alcoholic at the first sip! But as it went on, it mellowed out. I've been drinking a lot of sweet sake lately, so dry sake is a new experience for me! From the website There is no sweetness, just a hint of sourness, and a lightness that is made to look like a strong alcoholic drink. It leaves a tingling sensation on the tongue like the spiciness of grated daikon radish, but the acidity is not that much. There is a slight astringency that comes to both ends of the tongue, but it is a bit gentle.

I happened to find this sake at a local liquor store. I had originally been following the winter moon, but the rarity of this sake made me buy it immediately! It's a 2 year old sake, so it's deep and good 🎵. From the website The "Winter Moon Reprint" reproduces the first year (21 years ago) of the Winter Moon series, which is known by those in the know as the start of a new history in the series' 21st year. For this edition, the brewing procedure and formula were reproduced by unraveling a book that describes the sake brewing process at that time. The label is also a reproduction of the original label. Please enjoy "Fuyutsuki", which has a stronger flavor and a thicker, sweeter taste than today's sake, while thinking about the 21-year history of the brewery.
