I went to the Ayu Masamune Fair starting today. I ordered a very limited set of sake to compare.
Junmai Daiginjyo Nama Sake "Ayu" is indeed a junmai daiginjo, and I can only describe it as delicious. It has a mellow mouthfeel, mild flavor, and a bit of acidity.
The next sake, unfiltered junmai nama sake "AYUMASAMUNE" is as delicious as the jun Dai. It is mellow, acidic and full-bodied, with the difference being the junmai's lack of over-polishing.
Then there was the junmai nigori sake "Sakororo," an alcoholic amazake with a refreshingly sour taste. Of course it was delicious.
Finally, I ordered a separate Junmai Ginjo "Hatsuayu" that I wanted to try from the standard set. It was both sweet and sour, and had a refreshing taste like a junmai ginjo.
After that, we visited Hankyu Umeda, Hanshin Umeda, Daimaru Umeda, Yamanaka Sake no Eki Marche, and also visited Edion Sake Store and Sake no Yamamoto!
Whity's Niigata Okome had a lineup of Sake-no-jin limited edition junmai and junmai spring-fermented sake. I would have brought him home if I had less stock at home....

My first brand name. I thought it was "Drunken Whale" from the label design on the bottles lined up a bit far from the fridge in the standing room, but it seems to be a brand from Niigata. Grateful for this coincidence, I ordered it.
At the entrance, the aroma is like a thick sweet syrup. In the mouth, it is full of sweetness from the rice, but the sweetness does not spread too much on the clean and elegant mouthfeel, and in the latter half, it finishes crisply with dry acidity and a little bitterness.
It is very interesting - a very classical Niigata sake with plenty of sweetness in the second half.
A bottle that reminds me again how interesting sake is. Delicious 🍶.

Founded by Emperor Jinmu, Japan is the oldest country in the world since February 11, 660 BC.
Ayu, the king of freshwater fish, is also mentioned in the Chronicles of Japan and has a connection with Emperor Jinmu. The banzai banner used in the coronation ceremony of the emperor depicts five ayu fish and a jar of sake, according to a legend that Emperor Jinmu told himself that if a fish floated down from a jar of sake, he could rule the country, and ayu fish floated up.
