Seasonal sake at every Red Takeshi I was also interested in the new collaboration sake Nakamichi. But it was a little bit expensive (price that AIR can buy 2 bottles... actually AIR is 1 bottle per person 😅), so I decided to take the day off and bought this one. Domestic rice 60% polished, 12% alcohol by volume The sound of opening the bottle is a little smoke 💨 at the mouth of the bottle. A little smoke 💨 on the bottle mouth The top aroma is rummy, greefruity, and a little pear-like fruity. When you drink it, it's still refreshingly fresh. No bubbles or chili, but the acidity is the main flavor. The sweetness is also present, but the bitterness is nicely balanced by a good amount of bitterness. It's light and easy to drink with low alcohol content, so you can't help but drink it. When the temperature rises a little, the sweetness comes to the fore! In the mouth, this is THE sweet delicious juicy 😍. The slightly gassy acidity is also pleasant. The taste is perfect for those who love sweet! This is delicious ‼️ I love you and want to drink more and more, forgetting that the alcohol is 17 degrees As expected, it has maximum Kirameki! I've decided to have 1.5 gong for lunchtime drinking. The third and last drink I ordered was Jyushidai secret sake, which I had never had before. I drank a secret sake at New Year's, so I was curious about this one with a similar name. (There was also Hakuun Korai and Ryuzuki, which I love, so I was really worried 😅) I found out by looking at the label I found out from the label that this is an old sake. Domestic rice 35% polished, 15% alcohol by volume The aroma is that of a Jyushiyo, but slightly more subdued. On the palate The corner of acidity has been removed, which is typical of an aged sake. The sweetness and umami are well-defined, but but its assertion is restrained by the passage of time. The gorgeousness of Jyushi-Daiyo is evident in the first sip, I don't have a strong impression of sweetness and acidity. Personally, I prefer fire-brewed Jyushi-Dai to unpasteurized, but I think I prefer regular fire-brewed Jyushi-Dai to old sake (secret sake and secret sake were completely different). While thinking selfishly I enjoyed a luxurious lunchtime drink with excellent sashimi. I enjoyed a luxurious lunchtime drink 😊.

I ordered No.6, thinking it would be the X-type because it's a bit expensive... But... what a surprise... It was No.666. ‼️ Where did the owner get this stuff from? ⁉️ Akita koji rice 55%, kake rice 60% polished, 12% alcohol by volume I saw on the label that it is a kijoshu! When I drank it, I was a little surprised to find a mix of No.6-like flavor and the sweetness of kijo-shu 🫢. No.6 has an image of being fresh, sweet and sour, and light, but this one gives a very different impression. It's No. 6, but it's a sake with a robust flavor of sweetness, fullness, and a bit of astringency. It's not as dense as Yonotori, but it's still No.6 and delicious. ‼️ I was lucky to get a rare one while eating cooked conger eel. I was lucky to get a rare one 😊. (By the way, last time I visited No.6 was Kamikuni Ryou type, and this time it was the beast type 😳)

I have had Ouroboros, a noble sake, from Tenryohai Shuzo before, but this is my first time to try Garakudai, which has been talked about a lot lately! It's not even a draft sake 😳. When you pour it into a glass, fine bubbles appear! The aroma is similar to that of Shin Takachichiyo, which I was drinking until the other day. I thought it would taste modern, but when I put it in my mouth, I found it to be quite dry, The taste is unexpectedly quite dry. ❗️ It has a fresh acidity with a gaseous taste. It has a dry mouthfeel with little sweetness and umami. It's a "gassy, light, dry, modern and sharp". The aim of this wine is clear. I'd like to try the other flavors as well!

I've had Takachiyo, 59Takachiyo, and Takachiyo (I haven't submitted hiragana), but this is my first attempt at katakana after reading the reviews! Katakana is low-alcohol and "exclusively for hirsake", according to the brewer's chart. According to the brewer's chart, it is positioned as sweet, floral, and mellow. 65% domestic rice, flat polished, 12% alc. When the screw cap is twisted, the opening sound is silent. The top-tasting aroma... this is unique... It is never as gorgeous as 🍍. It's not long before I felt a slight tingling aroma. The main aroma is similar to that of wooden bucket incense Kun-kun 🤔kun-kun 🤔 I repeated the process and arrived at the fig. The taste is light and light. acidity>sweetness>slight bitterness, well balanced. My first impression is a sourness like Greffl, but there is also a sweetness that is very Takachidai-like (combined with the fig flavor, it's like a sweet bean paste). The low alcohol content makes it easy to drink. My son said, "This is delicious! I see...it's Shin. ❗️ The second day, the fig taste is gone and it's just greeful! Not as strong as Kameizumi, Not as strong as Kameizumi, but moderately juicy and pineapple-like. Yup, it's delicious too! Looking back, here's what we've done so far Yamahai -> white yeast -> red yeast -> CEL24 yeast and low al acidity was the hidden theme 🤔.

Same day logs. We received many others (Hana Yokuyo, Imi, Gokotsuru, Akabu), but we have carefully selected them here. I don't think I've ever had this Jyushiyo. Tojo Yamadanishiki 45% polished, 15% alc. Aside from the perfect balance of sweet aroma and acidity that is typical of Jyushidai daiginjo, The pitchy freshness of the gas that is dissolved in the sake is wonderful. ❗️ I drank a little too much, but I thoroughly enjoyed it 😊.

I realized I hadn't checked in yet for Association 7 yeast Masumi, so I bought it late! It's a light nigori (light cloudy) unpasteurized sake. 55% polished domestic rice, 16% alcohol by volume. When you open the simple aluminum screw cap, the sound of the bottle being opened is an mp sound. Microbubbles appear after a short time when poured into a glass. The top aroma is citrus to melon. I didn't know yeast No. 7 could have such a ginjo aroma! I was surprised! When you drink it, the balance of moderate sweetness and acidity is superb👏. The umami of the rice also spreads softly. The finish is just a hint of bitterness. I was not so impressed with Masumi when I drank it before at an izakaya, but the sealed bottle was better than I expected, in a good way 😋.
