First nigori of the year✨ The cage at the bottom of the bottle is about 1.5cm 60% polished domestic rice, 15% alcohol by volume Twist the aluminum cap tight and you'll hear the sound of the bottle being opened. The sound of the bottle being opened is "Psi" in mp. After a little while, small bubbles appear and Automatic stirring start ‼️ Fun 😆. The aroma of the top is rumney, muscat, and Japanese pear. The bubbles are bubbly when poured into a glass. When you drink the supernatant, it's fresh 😆 ‼️ Gas pops in the mouth Sweetness and lactic acidity spread This year's wine is a little sweeter and has more umami! More delicious than expected 😆. If you stir it and drink it with a bitterness The full-bodied taste is enhanced. The graininess comes to the fore. This one is delicious too 😋. Hirotogawa's nigori is still delicious!

It's an ordinary day. I'll be drinking at Shinsei's house. ❗️ I was on a business trip, so I didn't have time to go to the liquor store. I didn't have time to go to the liquor store. I opened the fridge. I opened the fridge and found that it's hard to open I had only liquor... There happened to be two bottles of Ashe So I decided to open this one! This is the one I was able to buy at the New Year's Shinsei event! Kame-no-o 50% polished, 13% alcohol When the aluminum screw cap with a built-in stopper was opened, the sound of the stopper being opened was "pusu"! The top-tasting aroma is of a sake yeast yeast strain with a slight twang immediately after opening the bottle. When you drink it The zingy aroma changes to a sweet and sour apricot aroma. At the same time, it has a complex aroma of sweet fragrance like kumquats with a hint of wooden vat. The taste is very fresh and has a sourness that is typical of a sake brewer's yeast yeast yeast. It is very fresh and there is nothing sticking to the palate. My family, who don't drink sake very often, commented "This is the best sake I have ever tasted. I wanted to enjoy the sake itself. I was right to enjoy the boiled tofu... I enjoyed the delicate taste 😆.

Hi WOM 😃 Sake that can't be bought is a waste of money disease and results in root snow: ❄️ Maybe the great thing about Shinmasa is that people who don't normally drink it can say "it's delicious" 😉.

All-you-can-drink at the manager's discretion The last five, please, Jyushiyo Honmaru I got this one by mouth too 🥹. 55% polished domestic rice, 15% alcohol by volume It's been a while since I've had Honmaru. It's not as flamboyant as the Jyushiyo, but it's more refreshing than I expected. More refreshing than I expected 👀. Good balance of sweetness and sourness It's easy to drink. But for a Jyushidai It doesn't have an overwhelming punch... Hmmm... I think the sweetness would be better after a little while the sweetness will be more intense... However, we enjoyed the all-you-can-drink menu again! We enjoyed a splendid lineup 😆.

We had it with beef steamed in a steamer.

The Saku was good, but the Kurakura Jungin is fruity and banana aroma is great 😆. The Kakuraku Jungin has a wonderful fruity banana aroma 😆 with a slight chilli taste. It also has a slight chili flavor. It's also fresh and good❗️ It's been a long time since I've had it. It's a bit of a fruity banana aroma 😆 It's fresh, it's chili, it's good

December is here. Year-end party season in ❗️ The usual manager's all-you-can-drink Started with Koryu Ichiyorai! Gohyakumangoku 55% polished, alcohol 15.5 Soft and gentle ginjo aroma The flavor of the rice is well balanced with the gentle ginjo aroma. The flavor is not flashy like Gohyakumangoku. It is perfect for the first drink!

I ended up drinking another one: ❗️ Ihyakumangoku 60% polished, 19% alcohol 😳 Pour it into a glass You can easily see it's quite yellow! Anyway, the aroma is unique ‼️ At first, it smells like a mixture of sweet jasmine-like flowers and kumquat. Gradually, a full-bodied aroma like freshly cooked rice is added. When you drink it, it tastes very rich and mature. ‼️ Various flavors spread out in the mouth. I can't describe it well 😓. It's not sweet and delicious, but the way it expands is unbelievable! Lastly, there is a long aftertaste of bitterness. It was a great taste!

It is a flying tavern! There are two brands of sake I decided to have a Nichinichi, which I've never had before! Yamadanishiki from Tojo, 13% alcohol by volume It has a soft aroma It has a sweetness that is typical of low-alcohol sake. It has a sweetness that is typical of low-alcohol wines, but the umami of the rice can be felt well. The freshness with a sense of chili is also great👍. This is a must drink on land: ❗️

The second one I got on my recent visit to Ueda. When I heard that dinner was oden My child asked me if I had any sake. he said. I'll open it. Kinmon-Nishiki 55% polished, 15% alcohol by volume The sound of the bottle being opened is the sound of a bubbling sound in mp. As soon as it is opened, the bottle opens up with a delicious aroma of honey apples! Microbubbles 🫧 in the glass though it is fire-aged It's still delicious when you drink it 😆. Sweet but not too sweet. It tastes like Kinmon-Nishiki. Just the right balance. Even the kids loved it! If people who are not used to drinking it say it tastes good I think it is really delicious. I must go to Ueda again!

I can't stop loving the mountains 🖤. What a surprise! The last of the 2024BY was waiting for us before the new sake! (The liquor store said the next one is new sake. I'm sure this time 😅) Hitogokochi 50% polished, 15% alcohol by volume This is my first Hitogokochi Jun Dai! The black label was a nice finishing touch. The sound when the bottle is opened is mf and bhush bhush ♫ I like this feeling even when it's fire-aged! Microbubbles when poured into a glass. The top aroma is citrus 🍋 with a little honey apple 🍎. Drinking. Fresh piquancy and acidity with a slight effervescence. The aroma gives a good impression: ❗️ The sweetness and umami immediately after opening the bottle are moderate. The refreshing part is Yamazan style. ☺️ The bitterness in the last part is really Hitokochi-like. The proof of Yamazan love that started with drinking outside 2024BY including 2022 vintage 14 bottles for drinking at home‼️ We drank almost all of them ✨✌️

The winding machine ran out so fast. One more. I tried a brand I didn't know, Yamatan Masamune. Matsuyama Mitsui 60% polished, 15% alcohol by volume Sake degree -2 I was told it has a strong umami taste. Fruity aroma Banana to rumney type When I drank it The taste is rather dry and dry. You can drink it neatly. The umami of the rice spreads when it leaves on the tongue. It doesn't disturb the wheat-scented, glossy hiyamugi. It was a good combination 😆. (The curry rice bowl with motsu (motsu is a Japanese delicacy) was also delicious 😆.

We are having a lunchtime drink at Hiyamugiya today: ❗️ Kanji label of Takachiyo sake brewery First time to use a winding machine Flat polished rice from Niigata Prefecture, 14% alc. The top-tasting aroma is fruity, with a hint of rummy banana. The mouthfeel is a bit dry. It has a sourness that is typical of nama-shu, but it is fruity and easy to drink. but it is easy to drink because of its fruity taste. Serve with simmered deep-fried tofu and motsu tempura. The lovely Chirori was empty in no time! It became empty in no time 🤣.

I bought one last year and it was so good that I bought another one this year. It's a 11/7 sake, so it's been two days since it was squeezed. You can find the new sake here: ▶️ Hooray for sake nouveau! 50% polished Fushigokone from Chiba Prefecture Alcohol 16%. The sound of the bottle opening is almost silent. When poured into a glass, it is full of microbubbles. The aroma is of gorgeous ripe honey apple + melon. What a nice aroma 🥹! When I drank it... The chili flavor is intense and fresh. The aroma is sweet and fruity The taste is not so sweet, but the flavor of the rice is full of flavor. You can tell right away that it is freshly pressed. It's really delicious 😋❗️ The season of new sake has arrived! I can really feel the new sake season is here!

The fire-brewed Ichi Shiki was so good that I bought a bottle of Nama Shiki Zero! I also bought a bottle of the zero type of raw sake! Yamadanishiki (unknown rice polishing), 13% alc. The only sound when the bottle is opened is a "p". It's a nama-shu, but it's very graceful! When poured into a glass Well, there is not much microbubbles. A little bit of upfront aroma, but it's a little rummy. There is also a bit of sweetness. Sourness sourness sourness in the mouth. ❗️ It's really a traditional sake. And it is clear like water. If it is asked whether it is spicy or sweet, it is sweeter. but I have a strong impression that it is lighter than that. The last taste is slightly bitter. Compared to I-Shiki, it is very light. I think I prefer the flavor of Formula 1. I heard that they also have a bubbly sanshiki. I'll try it if I can buy it😊.

I can't stop loving the mountains 🧡. Yamazan used to release new products about every other week. After the vintage ones came out, it just stopped... I'm sure the vintage was just a replacement for the hiyayoshigoshi. That means new sake is next, right? But I can't wait for the new sake! I'm done saving sake right before my physical exam. I can drink it, can't I? So I opened a bottle of Jun Dai that I had in stock: ‼️ Yamadanishiki 39% polished, 16% alc. I took off the plastic cover and opened the bottle. The sound of opening the bottle was a short pus in mp. Microbubbles 🫧 in the glass The top-tasting aroma is soft and floral sweet for a moment The ginjo aroma is subdued, but Citrusy with a little twang when you look for it When you drink it, you can taste the crisp acidity and and a clear piquancy. and a grape-like sweetness. and at the same time, it finishes with a clear bitterness. As I recall, this Yamada-Nishiki As I recall, this Yamadanishiki is one that develops sweetness as it grows. I thought I'd limit it to a little on the first day, but it was so good but it was so good that I drank too much 🤣.

This is the first time I've ever seen Sentori that has returned to Edo! I think I can buy it anytime I want... I've been putting it off 😅... This time I picked up a bottle of I-Shiki Modern I asked my home liquor store I asked the home liquor store for one with a sour taste he recommended it to me. A reminder for myself: ✍️ [Zero Shiki] Nama Shu [Hi-iri [ORIGAMI [Sanshiki] sparkling unpasteurized sake and so on Yamadanishiki, 13% alc. When the aluminum screw cap is twisted tight, the opening sound is silent. The top-tasting aroma is very rummy. ‼️ There is a little bit of seme aroma. Modern and I really like the aroma. When you drink it, it's citrusy .... Sourness from the ✨ I really like the sake with a little bit of sake yeast and yamahai And then I wonder if it's because of the low alcohol content, but it's fresh and watery. I'm impressed by the way it goes in so smoothly. The lightness is also modern. As the temperature rises, the sweetness is easily felt. After a few days of drinking, I tasted it again... The impression is less intense and a little ambiguous. A little bitterness. It's tasty enough, but it might be better to drink it earlier... It's a taste that makes you want to support it. I will surely buy it again: ❗️😊

After quickly closing the second restaurant, we headed to the third restaurant, where we were served heated Chirori sake, so I couldn't take a picture of the sake bottle 😭. (But the steamed abalone with isobe bean paste was the No.1 appetizer of the day, so I put it in pic.4) The fourth restaurant we went to was Teimatsu, which was also a first for us! The young president of Teimatsu told us that he is working hard on a Makuake project to save the sake rice "sake musashi" in Saitama! Sai-no-Kizuna 60% polished rice from Saitama, 16% alcohol by volume. Sake degree +8, but it is fruity and not spicy! It is indeed fruity and not spicy! But it's also not spicy 😆. And the sharpness is wonderful👍! This may be the first time I've been impressed by the sharpness! This is delicious 😋! It's fun to discover new things! The chicken tsukune skewers served as an appetizer were also very tasty 😃.

From the store where we drank Tasake "Have a nice day! and we went to the second house. From here on, it's not from the brewery's point of view, but from the izakaya's. from the brewery's point of view, but from the izakaya's point of view. The second sake we had was from Tottori! I talked to the brewery owner, and he told me that when he traveled to Tottori in the spring I talked to the brewer, and he said he had been right by the brewery when he traveled to Tottori in the spring. Oh no, I missed that 💦. 55% polished domestic rice, 15% alcohol by volume When I got myself together to drink it again, I got a strong impression of umami. (But the brewer said that even in Tottori, the east is heavy and the west like ours is fruity, so maybe I have a stupid tongue.) It works 🤣! The ultimate pickled egg yolk served as a side dish was rich and It was also delicious. ‼️
