Jikon is the specialty of this store. I had to drink it with a glass of Jikin ❗️ So I chose Jungin-Senbon-Nishiki from memory. This was the first Jikin I ever bought! At the liquor store I sometimes go to for point accumulation. I haven't bought a jackpot in a while: ❗️ The specs looked good 😆. Dewa Sanzan 50% polished, 15% alcohol by volume Sake degree: -5.6 / Acidity: 1.5 / Amino acidity: 0.6 / Yeast: M310 You can feel the sweetness and deliciousness just by reading this! When the aluminum cap is opened, you can hear the sound of the bottle being opened. The sound of opening the bottle is "pusu" in mp. The top aroma is melon. Sweet aroma Spit in the mouth! When I drank it It's still sweet and juicy. It also has a little malted rice flavor. Then comes the chili sensation that can only be found in nama-shu. The last is a bit of bitterness. Delicious as expected 😋. After drinking it, I thought... I think it might have a similar taste to Eikoufuji. I think so, and the label looks like Eiko-Fuji too 😉.

The love for Yamazan never stops🤍🤎. I saw the announcement that Yamazan's first sparkling was in stock. I went to buy it the next day and it was the last bottle 😳. I heard a lot of people were buying in bulk. It was bad😅 The bottle is now thicker because it's sparkling The stopper also changed to a screw cap. It was the first time to have white letters on the bottle Yamae-Nishiki 55% polished, 15% alcohol by volume The sound when the bottle is opened is "mf". I thought the gas was relatively mild. When poured into a glass, there are a lot of big bubbles Lots of big bubbles 🫧. Oh, it's a little bit cloudy. The upper aroma is muscat-like. It has a little bit of a twangy feeling due to the gas. When I drank it, I found it to be Yamazan ‼️ Not too sweet, but quite dry. The balance of sweetness and sourness is typical of Yamazan. But you may feel a strong bitterness due to the gas... Compared to Kinmon Nishiki 🤎 on the 3rd day 🤎 has more graininess, 💛 is more elegant and classy When I drank it. Quintessential, great sweetness, acidity and a bit of chili - = no complaints ‼️ In comparison, the highly polished Kinmon Nishiki 🤎 has a stronger sweetness and a surprisingly koji-like flavor. In contrast, Yamadanishiki💛 is elegant and sofisticated I noticed that the Kinmon-Nishiki was a bit more peculiar, so I decided to pair it with Parmigiano-Reggiano, which is a very good marriage 😉. I can't stop loving the three mountains 🤎. Since it comes out twice a month I have 3 bottles of Yamasan in the fridge for a moment 🤣. This time you polished it up! 35% polished Kinmon-Nishiki from Yaebaru, Nagano Prefecture❗️ Alcohol 16%. When the black plastic cover is removed and the crown is opened, the sound of opening the bottle is an mp and a pish! Even if it's the same fire-brewed sake, it doesn't have the same vigor as the last Hitogokochi Light Nigori... The aroma is clearly honey apple. I think this may be the first time I've ever had this much honey apple in a Yamazan Kuchibiri. The flavor is sweet with a gorgeous ginjo aroma, and it's a daiginjo ✨. There's no gas, but there's a subtle chili sensation. It has a great balance with the acidity that is typical of Yamazan, not quite sweet and delicious👍. Considering the taste and the price of 30.5 percent, it's no wonder it's 2,750 yen including tax. ‼️

The fourth cup is Gakky's Junjo. I chose it because I saw the label and wanted to drink it for the first time in a long time! The second glass was an undrinkable summer sake from Koei Chrysanthemum! Since it is an unfiltered unpasteurized sake from Koei Kiku I thought it would be fresh. I found it to be surprisingly sweet and honey-like rather than acidic. It has a voluminous mouthfeel. I warmed it up by lentil and served it with I served it with tsukune (sauce) and negima (green onion) as a side dish. I sipped it down and moved on to the next drink!
