The love for Yamasan never stops: ‼️ Just when you thought new products seemed to have stopped since the sparkling, two 2 year olds from the first vintage (Hatsuyuki <Hitogochi no Jungin> and Yamasumi <Yamae Nishiki no Jun Dai>) have come out 😳. But it seems there were only a few bottles and I was only able to buy one of the Yamae Nishiki Jundai 😭. Yamae Nishiki 50% polished, 15% alcohol by volume I took off the plastic cover and thought I'd replace the stopper..., Wow! With a popping sound of "ff", the stopper came off by itself. the plastic cover and the bottle stopper came off by itself! Is this really fire-aged for 2 years? 😳 The top aroma is rummy to green apple 🍏. When you pour it into a glass, you can't believe that it's fire-aged for 2 years 🫧. The bubbles are finer than the sparkling I had the other day and this one has a better gas quality. (If you're interested, compare it to ymdaz's past check-ins) The drink. Mouthfeel is sweet and full. Wonderfully rich for a Yamasan😍. And yet it's also very carbonated. It has a fresh sourness The bitterness you feel at the same time is good ❗️ really good ‼️ Don't get me wrong. In ymdaz's opinion, it's the strongest of Yamazan's ‼️ I should have bought another bottle of this one‼️

Here it is, KUMONOSKAVI: ❗️ The one that Shinsei sometimes uses. 2022 hanpukai no karoura was also Akita Sake Komachi 55% polished, 13% alcohol It seems to be an arrangement of Yonotori. It has a delicious sweetness and acidity that is typical of kijo sake 🥹. We waited for it to be grilled. The sweet sauce of the broiled Kansai-style eel served on top of the eel was just as good as the broiled eel! We enjoyed the marriage of this dark and rich combination! And I checked in at once. I was so impressed I forgot to take a picture of the back label 😭. 8 degrees alcohol by volume. The glass is full of bubbles 🫧! The glass was almost overflowing with bubbles I take a sip... 🤩✨ Delicious 🎉! Sparkling Yonotori with a rich honey flavor. Jikon is the specialty of this store. I had to drink it with a glass of Jikin ❗️ So I chose Jungin-Senbon-Nishiki from memory. This was the first Jikin I ever bought! Senbon-Nishiki 50% polished, alcohol 15.5 If it's not enough, I'll bring you a new one. I asked him to pour it for me and he said "I'll bring you a new one if it's not enough. It was just full of the slurries 🈵. A little disappointing 😢. The taste is rich sweetness and good umami. The contrast between the taste and the Nirvana Tortoise was very clear. Delicious 😋. At the liquor store I sometimes go to for point accumulation. I haven't bought a jackpot in a while: ❗️ The specs looked good 😆. Dewa Sanzan 50% polished, 15% alcohol by volume Sake degree: -5.6 / Acidity: 1.5 / Amino acidity: 0.6 / Yeast: M310 You can feel the sweetness and deliciousness just by reading this! When the aluminum cap is opened, you can hear the sound of the bottle being opened. The sound of opening the bottle is "pusu" in mp. The top aroma is melon. Sweet aroma Spit in the mouth! When I drank it It's still sweet and juicy. It also has a little malted rice flavor. Then comes the chili sensation that can only be found in nama-shu. The last is a bit of bitterness. Delicious as expected 😋. After drinking it, I thought... I think it might have a similar taste to Eikoufuji. I think so, and the label looks like Eiko-Fuji too 😉.

When you open the bottle, the opening sound is a mf and a shpoof 🫧. Pour into a glass and microbubbles 🫧. The top-tasting aroma is muscat Nice fruity aroma✨ When you drink it Rich sweetness and umami that is typical of special junmai sake ❗️ Freshness with a hint of chili. Light 🔦 mouthfeel with a low alcohol content. This is delicious 😋. It's a special junmai, so it's cosy too. This is a buy 😊.

I can't stop loving the Yamasan💛 I'm glad I had the heart color 🤪. Now for the Yamada Nishiki 39% polished! Alcohol is 16 degrees The sound of the bottle being opened was a "pssh~p" in mp! More vigorous than Kinmon-Nishiki! A little microbubbles at the bottom of the glass! The upper aroma is honey apple to grape. Compared to Kinmon Nishiki 🤎 on the 3rd day 🤎 has more graininess, 💛 is more elegant and classy When I drank it. Quintessential, great sweetness, acidity and a bit of chili - = no complaints ‼️ In comparison, the highly polished Kinmon Nishiki 🤎 has a stronger sweetness and a surprisingly koji-like flavor. In contrast, Yamadanishiki💛 is elegant and sofisticated I noticed that the Kinmon-Nishiki was a bit more peculiar, so I decided to pair it with Parmigiano-Reggiano, which is a very good marriage 😉. When the black plastic cover is removed and the crown is opened, the sound of opening the bottle is an mp and a pish! Even if it's the same fire-brewed sake, it doesn't have the same vigor as the last Hitogokochi Light Nigori... The aroma is clearly honey apple. I think this may be the first time I've ever had this much honey apple in a Yamazan Kuchibiri. The flavor is sweet with a gorgeous ginjo aroma, and it's a daiginjo ✨. There's no gas, but there's a subtle chili sensation. It has a great balance with the acidity that is typical of Yamazan, not quite sweet and delicious👍. Considering the taste and the price of 30.5 percent, it's no wonder it's 2,750 yen including tax. ‼️

The fourth cup is Gakky's Junjo. I chose it because I saw the label and wanted to drink it for the first time in a long time! Made from domestic rice with 60% polished koji rice and 66% polished kake rice. Alcohol 13 degrees Celsius Gakkie still likes its rummy aroma!
