I bought one last year and it was so good that I bought another one this year. It's a 11/7 sake, so it's been two days since it was squeezed. You can find the new sake here: ▶️ Hooray for sake nouveau! 50% polished Fushigokone from Chiba Prefecture Alcohol 16%. The sound of the bottle opening is almost silent. When poured into a glass, it is full of microbubbles. The aroma is of gorgeous ripe honey apple + melon. What a nice aroma 🥹! When I drank it... The chili flavor is intense and fresh. The aroma is sweet and fruity The taste is not so sweet, but the flavor of the rice is full of flavor. You can tell right away that it is freshly pressed. It's really delicious 😋❗️ The season of new sake has arrived! I can really feel the new sake season is here!

The fire-brewed Ichi Shiki was so good that I bought a bottle of Nama Shiki Zero! I also bought a bottle of the zero type of raw sake! Yamadanishiki (unknown rice polishing), 13% alc. The only sound when the bottle is opened is a "p". It's a nama-shu, but it's very graceful! When poured into a glass Well, there is not much microbubbles. A little bit of upfront aroma, but it's a little rummy. There is also a bit of sweetness. Sourness sourness sourness in the mouth. ❗️ It's really a traditional sake. And it is clear like water. If it is asked whether it is spicy or sweet, it is sweeter. but I have a strong impression that it is lighter than that. The last taste is slightly bitter. Compared to I-Shiki, it is very light. I think I prefer the flavor of Formula 1. I heard that they also have a bubbly sanshiki. I'll try it if I can buy it😊.

I can't stop loving the mountains 🧡. Yamazan used to release new products about every other week. After the vintage ones came out, it just stopped... I'm sure the vintage was just a replacement for the hiyayoshigoshi. That means new sake is next, right? But I can't wait for the new sake! I'm done saving sake right before my physical exam. I can drink it, can't I? So I opened a bottle of Jun Dai that I had in stock: ‼️ Yamadanishiki 39% polished, 16% alc. I took off the plastic cover and opened the bottle. The sound of opening the bottle was a short pus in mp. Microbubbles 🫧 in the glass The top-tasting aroma is soft and floral sweet for a moment The ginjo aroma is subdued, but Citrusy with a little twang when you look for it When you drink it, you can taste the crisp acidity and and a clear piquancy. and a grape-like sweetness. and at the same time, it finishes with a clear bitterness. As I recall, this Yamada-Nishiki As I recall, this Yamadanishiki is one that develops sweetness as it grows. I thought I'd limit it to a little on the first day, but it was so good but it was so good that I drank too much 🤣.

This time I picked up a bottle of I-Shiki Modern I asked my home liquor store I asked the home liquor store for one with a sour taste he recommended it to me. A reminder for myself: ✍️ [Zero Shiki] Nama Shu [Hi-iri [ORIGAMI [Sanshiki] sparkling unpasteurized sake and so on Yamadanishiki, 13% alc. When the aluminum screw cap is twisted tight, the opening sound is silent. The top-tasting aroma is very rummy. ‼️ There is a little bit of seme aroma. Modern and I really like the aroma. When you drink it, it's citrusy .... Sourness from the ✨ I really like the sake with a little bit of sake yeast and yamahai And then I wonder if it's because of the low alcohol content, but it's fresh and watery. I'm impressed by the way it goes in so smoothly. The lightness is also modern. As the temperature rises, the sweetness is easily felt. After a few days of drinking, I tasted it again... The impression is less intense and a little ambiguous. A little bitterness. It's tasty enough, but it might be better to drink it earlier... It's a taste that makes you want to support it. The fifth last house It was past the last order time of the event, but we were warmly welcomed (happily)! The last one was the familiar Yamori. I've never seen this label for sake! 55% polished domestic rice, 16% alcohol by volume It was almost the end of the event The event attendees are going-around! Everyone was ready and in high spirits. We drank outside with a lot of excitement! I don't remember what it tasted like 😭 But the event was so much fun! I hope to buy a batch and join next year 😆.

After quickly closing the second restaurant, we headed to the third restaurant, where we were served heated Chirori sake, so I couldn't take a picture of the sake bottle 😭. (But the steamed abalone with isobe bean paste was the No.1 appetizer of the day, so I put it in pic.4) The fourth restaurant we went to was Teimatsu, which was also a first for us! The young president of Teimatsu told us that he is working hard on a Makuake project to save the sake rice "sake musashi" in Saitama! Sai-no-Kizuna 60% polished rice from Saitama, 16% alcohol by volume. Sake degree +8, but it is fruity and not spicy! It is indeed fruity and not spicy! But it's also not spicy 😆. And the sharpness is wonderful👍! This may be the first time I've been impressed by the sharpness! This is delicious 😋! It's fun to discover new things! The chicken tsukune skewers served as an appetizer were also very tasty 😃.

If you drink two drinks other than FURUMAI SAKE Secret sake is available. so I asked for it.... There was one brewed by a young man in his 20s and one brewed by a young man in his 30s, and I chose "Haikara" by the one in his 20s! Is it like a challenge sake? 🤔 50% polished domestic rice, 13% alcohol. A little low alc. When you drink it The sweetness of the low alcohol taste is very strong! I participated in the sake go-around: ❗️ This is a collaborative event between izakaya and sake breweries, and if you show your purchased "SAKAZUKIN" badge, you will receive a free glass of sake from the sake brewery at each participating izakaya. ‼️ The cost of an appetizer at each izakaya is usually ¥500. ❗️ After a few drinks, walk around to the next restaurant in the area (go-around). We will start from the izakaya where you can drink tasake (rice wine) ▶️ After the special junmai sake, we drank this jungin yamahai! 50% polished domestic rice, 16% alcohol by volume We poured 4 cups of sake into a Tasake glass and drank it. Oh, Tasake's Yamahai is still very tasty! The acidity and umami are great. Denshu, Hinna ‼️

Yes, Shinshu Kamerei is like this 😃. While giving a solid taste, it has a relatively clean finish. The finish is relatively clean and refreshing. The last part is a little bitter and finishes with a kick. Isn't this 1,300 yen? It's too cosy 😳! We also got to meet Mr. Toji Miyazato (sorry for the rice wine in my bag 🙏 ) and visit the terraced rice fields of Inakura (pic 4), which is famous for Shinshu Kamerei. I'm glad I went 😆✨

I've had junmai daiginjo before, but this is my first time drinking junmai ginjo. but this is my first Junmai Ginjo. Domestic rice polished to 60%, 14% alcohol by volume. When the simple aluminum cap is opened, the sound of the bottle being opened is mp and ps🎵. Oh, it looks pretty good! A closer look at the label tells me it's a draft sake. Pour it into a glass and you can see microbubbles at the bottom! The top aroma is sweet and tasty, honey apple 🍎. A little malted rice taste is different from Jun Dai 🤔. When I drank it, it was different from my expectation of sweetness. What jumped out at me was the acidity ❗️ I think it's partly because of the chili sensation. Compared to Jun Dai, which has a strong sweet taste, Jun Gin has a particularly strong acidity. Of course, it is sweet. There is also a moderate bitterness in the finish. I can drink it without being over-sweetened. I think I like it a lot. You'd think the Jun Dai would be better. That's not true. They both have different personalities and are both delicious.

For my sixth and final drink, I decided to try craft sake: ❗️ It's not often you get a chance to drink it! This is made by brewing regular sake. They brew sake normally, add hops at the end, and press it. I was told that you either love it or hate it! What is it like? Alcohol 15 degrees Celsius Brown in color, a bit like beer? When I drank it, I found Oh, this is an inexperienced taste 😳. The hop aroma comes to the forefront. Sake flavor is not so strong. But it's interesting and this is it: ❗️ I fully enjoyed the dawn of the younger generation 😉.

The fifth drink is 99 from Tsuchida Brewery. When I visited the brewery before I drank a special version when I visited the brewery before. From the color in the sake cup I have a feeling that it has a strong flavor. When I drank it, I knew it would be sweet! And yet, it has a sourness like pineapple! The third drink was at a booth of a manufacturer called Sake Bowl Wine glasses and sake bowls? Sake bowls? The project was to compare the same sake in a wine glass and a sake bowl. You could choose between two types of sake. I chose Abe 😉. Alcohol 14 degrees But..., I was concentrating on the different sake cups. I don't really remember the taste of the sake 😅 I don't remember much about the taste of the sake 😅. (But with 2 stickers, I could drink a lot 😆.)

The second cup was the same Nagasaki Fukkai, which I've been thinking about lately. I drank this brand because it said "flagship"! It is made from Yamada-Nishiki and has an alcohol content of 14 degrees (subtly low alcohol?). It has a sourness that is typical of a sake made from the traditional sake brewing method. It has an impression of a classic and solid taste, but it's quite delicious! Next time I find it, I'll try it in a sealed bottle!

Here we go again this year! Young Dawn 2025! Looking at the map and the sake exhibits carefully The first one I chose was Sparkling sake, after all! I looked at the sales counter and thought, "How expensive for 6 stickers! I looked in the sales area and saw that the price was about 5,000 yen. Low alcohol content of 10 degrees Celsius! It was poured into a cup at the event. When I drank it, it was sweet and sour and shuwa shuwa shuwa. It has a grapefruit type citrus aroma with a bit of bitterness at the end. The taste is so delicious that you can't help but smile 🤩. The longest line that day was for Hiran. I guess it's really popular!

Before my business trip, I found a 4-pack of Hanamup at a liquor store I sometimes go to, so I bought it for the first time in a while! After a business trip that forced me to cut out sake for a week I'll open it right away😃. 50% polished Omachi, 16% alcohol by volume When I remove the aluminum cover and open the bottle, the sound of the bottle opening is... silent 😅. The sound of opening the bottle is... silent😅 The top aroma is melon to peach. What's that? It may be surprisingly subdued. When I drank it, I found it to be sweet and delicious. Like Kamitachika, it is not too gorgeous, but just the right amount. The umami flavor is well developed, just like Omachi. I would like to try drinking it warmed. The acidity is very restrained. Today we paired it with pork marinated in miso. The sweet umami matched the sweetness of the miso🙆 Sake was good after a week's absence 😆.

I can't stop loving the mountain three 🩶‼️ Just when you thought the new products seemed to have stopped since the sparkling, two 2 year olds from the first vintage (Hatsuyuki <Hitogochi no Jungin> and Yamasumi <Yamae Nishiki no Jun Dai>) have come out😳. But it seems there were only a few bottles and I was only able to buy one of the Yamae Nishiki Jundai 😭. Yamae Nishiki 50% polished, 15% alcohol by volume I took off the plastic cover and thought I'd replace the stopper..., Wow! With a popping sound of "ff", the stopper came off by itself. the plastic cover and the bottle stopper came off by itself! Is this really fire-aged for 2 years? 😳 The top aroma is rummy to green apple 🍏. When you pour it into a glass, you can't believe that it's fire-aged for 2 years 🫧. The bubbles are finer than the sparkling I had the other day and this one has a better gas quality. (If you're interested, compare it to ymdaz's past check-ins) The drink. Mouthfeel is sweet and full. Wonderfully rich for a Yamasan😍. And yet it's also very carbonated. It has a fresh sourness The bitterness you feel at the same time is good ❗️ really good ‼️ Don't get me wrong. In ymdaz's opinion, it's the strongest of Yamazan's ‼️ I should have bought another bottle of this one‼️
