It's been a while since I've had a Niimasa.
I wanted to continue drinking some more of the traditional sake, so I bought a bottle.
I bought a bottle of Sogape's new sake
Miyamanishiki 59% polished, 14% alc.
The alcohol is 1 degree lower than last year's.
Popped the cork and poured it into a glass.
No ginjo aroma 😅.
Slightly tinged aroma like a sake yeast yeast yeast yeast.
This twang will go away after a few days.
When you drink it, you will notice
Strong acidity as expected
The taste is dry with a hint of sweetness.
Still, it's a bit hard.
It doesn't open up the flavor.
I can't taste much of Sogape.
Decided to keep it in the fridge for a while without going too far. ❗️

1 week later to warm up -> ehh 😭 still hard 😭
2 weeks later→The taste finally opens up 🤩.
The sweetness and umami are now firmly on top of the acidity, and it tastes like Sogape, including a bit of bitterness at the end: ❗️
I'm glad I finally got to enjoy it 🥹.
