This is another brand I've been wondering about that I haven't tasted: ❗️ Misato Nishiki 50% polished, 17% alcohol. The label says Junmai, but it is Junmai Daiginjo. When I tried it, I found it to be sweet and fruity. It was in the same family of sake. Relatively speaking, it is a little less sweet.

I had my favorite Machida sake brewery. Here is the second drink 55% polished Omachi from Okayama Prefecture, 16% alcohol by volume This one is also sweet and fruity with a chili-like taste It's a sweet-tart, fruity, chili-like mouthfeel that is unmistakably delicious 😊. However, it's not as good as the freshness of Yamazan, which is a mouthful 😅.

I closed one of my projects. I launched with my colleagues 🚀. Some of us can't drink and some of us drink. We came to "Meat and Sake". When I looked in the fridge of the all-you-can-drink bar I found my first Yamasan! And it's still unopened! Yay! 40% polished Yamae-Nishiki from Nagano, 15% alcohol by volume. Remove the plastic cover. The opening sound of the crown is "pshhhh"! When you drink it, you will find Sweet and very fruity! I guess it's a bit like a honey apple. And yet it has a clear acidity and a little bit of chili. Super fresh as it should be unfiltered raw sake. ❗️ This is delicious! (I drank a lot after this, (I drank many after this, but this was the first one I drank and the last one I drank again 😆) I drank it again at the end 😆)

I drank the Sogape straight up and the Sogape after it had been laid down. I found that I like it somewhere in between. I'm going to open the last bottle I bought this year! (For the first time in a year, the stock of sogapé in my fridge is zero!) Miyamanishiki 59% polished, 16% alcohol Ilya Thornton is a mixed fermentation of #1 and #2 yeast. Pop the cork. Sogape is a sake to be drunk for its flavor, not its ginjo aroma. Sogape is more classical than Senkori Organic Naturale, which is made with a forced classical method. However, it is different from heavy sake yeast! It still has enough freshness. It still has enough freshness, but with a thicker umami and acidity that is typical of the traditional sake making method. which will spread more and more in the future. while feeling the signs of dense sweetness. We enjoyed the perfect balance between the freshness of the sake and the sense of maturity at this moment 😊.

Tochigi sake continues: ‼️ I bought this one because of the sparkling 😊. It's a bottle of organic naturals with a very ancient method, no yeast, no additives, no sake yeast, wooden vats........ Kame-no-o 90% polished, 14% alcohol It's a hot and humid day for sparkling 👍. I was caught off guard by the simple aluminum cap and opened the bottle. A true sparkling 🫧🫧. The glass was full of bubbles and sooty! The aroma is rummy, muscat, and Japanese pear type. Contrary to my expectation that it would be dry and sour since it is a Senkyoku, my first impression was sweet and delicious. It is fresh and is wrapped by strong gas, but it has a nice flavor of sake yeast and lactic acidity. The second glass was a different impression, and the astringency and sharp bitterness of the wooden vat came to the fore! The change in flavor is fun! It was more delicious than I expected.
