Yesterday, I enjoyed it with carbonated soda, as recommended by the brewer, and straight. Both were delicious. And this evening, I tasted the top clear distillate. It is a multi-player sake that can be enjoyed in various ways and has a high cost performance. I can't believe it's been sitting here for almost a year and a half.

The name of the brewery is said to be a combination of "Asahi" (Asahi, Nagaoka City), the name of the place where the brewery is located, and "Yama" (mountain), which is typical of Japanese sake. The original name of the brewery was "Kubotaya" (from which Kubota was derived), and the name was changed to the current company name.
