I left my employer to start my own business and celebrated with my family. A grade I usually don't buy for myself. Just for today, I will spoil myself. It starts with a clean fruity aroma like apples. Tasake's fruity, moderate sweetness, sharpness and balance are as stable as you would expect. The acidity is a little stronger than the other wines in the year-round lineup. The higher the temperature, the stronger it is. However, it is not unpleasant, and in fact, it enhances the versatility of the sake, which can be used as a food sake as well. It is not so much that it is a jun-dai sake (laugh), but that it is a very tasty sake in general. It is also strong enough not to be defeated by sukiyaki. It's a very satisfying and drinkable bottle of sake. Now I can work hard again. Purchased at Kamata Honten (Ishikari City)

It is a hazy sake. I imagined it to be silky sweet. It's quite dry, with a strong schwash that makes you think it's sparkling! The slight sweetness you feel in it is nice. As the temperature rises, it becomes a bittersweet adult flavor. Personally, I think it is easier to drink when it is crisp, as it has a good balance of sweetness and sharpness. It can be used as a food sake. A refreshing sake perfect for summer. Purchased at Sakuramoto Shoten (Sapporo City).

My daughter's 3rd birthday. She wants to grow up as soon as possible. Then it is my father's dream to have a drink with her someday. We happened to come across this in the store, stocked since March. There is no better time to open it than today. (Even though the star of the show doesn't drink. lol) Sweet and sour aroma. The taste is also very acidic, followed by moderate sweetness and occasional bitterness. The aftertaste is short. Before I drank it, I had an image of a lactobacillus drink type taste, but in fact, it is not so. As expected of a Daiginjo-class sake, it is easy to drink without any unpleasant taste. (I finished it in one night). The entrée was fried chicken and strawberry cake, as requested by my daughter. It was the first time I served cake as an entrée. I tried it and it was just like champagne, so it didn't feel strange! It goes rather well with it. I buy Niimasa when I can find it, but I don't really like it as a sake for the price. However, I think it is a sake that makes a dinner table more exciting and colorful. I would buy it again if I could find it. Purchased from Doi Shoten (Asahikawa City)

Celebrating my 2 year old daughter's successful buttoning. I'm sure I'm not the only bad adult who will use anything, even a child, as an excuse to drink. I'm sure I'm not the only bad adult who does that...lol This is my third bottle of seasonal sake, following Shinshu and Aizan. The aroma is not so prominent, but it has a fruity aroma. The sweetness and bitterness on the palate are well balanced. The aftertaste is stronger than the sharpness, and overall, it is very drinkable. Personally, I prefer Aizan.... But it's still a great sake, and still a winner! I want to go for Omachi next, but they don't sell it.

It's been a while since I had a drink outside with friends. When we were young, we never imagined that we would be drinking sake at a soba noodle restaurant. It is a hana-yosu. It was hidden in the back of the cellar, but my eyes cannot be fooled. I no longer know what the label says. The top aroma is pineapple...pear...anyway, it is a dark fruity aroma. The taste is sweet and bitter, with a great drinking experience, and it is a beautiful sake that goes down smoothly. As expected of a rare sake, this is everyone's favorite. It went well with tempura. I want to drink it again.

According to a friend of mine who is a sake tasting master holder "You should drink the special honjozo of Isobojama first! So, I went right ahead and tried it. I had an image of a big-boned, crisp, zero-sweet sake. It was a delicious all-around sake with a subtle, gentle sweetness, a refined sake taste, and a refreshing sharpness. It also goes well with sashimi and cutlets. Isohajime is a bit expensive, but it is still a great sake. It is very satisfying to drink. Purchased at Doi Shoten (Asahikawa).

I buy it every time another one comes out. But this one is too basic for me. It can be used as a food sake or a solo saké. It tastes great cold or warmed. (I know it sounds like a waste, but I think Tokujun tastes best when heated.) I am very grateful that I can buy this sake consistently. Purchased at Kamata Honten (Ishikari City).

We received this at an event in Higashikawa, the home town of Sanzen Sakura. It is not available at retail stores, as it is a tax return gift. It is made from 100% Higashikawa-grown comet. Recently, the evolution of rice produced in Hokkaido has been remarkable, and sake rice is no exception. I like the pattern of clear, crisp and clean with an elegant sweetness. It is at a level that I would like to see it distributed normally. TOUSEN is a title that is a phonetic reading of Higashikawa.

I got a call that said, "Hey, I got something you don't usually get to drink." I went to a friend's restaurant. Oh, it's you, isn't it? It's true that I don't see you very often. This is the first time for me to meet you. He thoughtfully poured it into an expensive looking chirico glass. At that point, the rich texture and gorgeous aroma are obvious. In the mouth, you are greeted with unexpected sweetness and rice flavor. I don't usually drink old sake, but I enjoy the slow lingering and deep sweetness. There is not much acidity, and the sake kicks in nicely as you enjoy the occasional sake-like sensation, just like a brandy. This one... can't be helped (even if it is expensive lol). This restaurant is a yakitori restaurant, so the best entrée is the jidori-yaki (grilled chicken). Personally, I think the trendy hruchi sake is delicious but not so good with meat, but this sake wraps all the fat and aroma together deliciously. This is delicious. I was similarly impressed when I had the Ishidaya from Kuroryu. The taste and the price are in balance. The balance of the receipt is not balanced, though. This... can't be helped lol.

Cherry blossom label. For the consecutive holidays. I heard that 140 comes from the sake rice, not the yeast number. This sake has a gorgeous, fruity flavor that belies the atmosphere of the label. It has a smooth texture on the tongue, with moderate sweetness and rice flavor leading the way. Even so, the sake is not heavy, as expected of Tasake. After that, it quickly cools down. I think this balance and cycle is the reason why it is so easy to drink. As the temperature rises, the acidity can be felt, and it goes well with meat and fish. This is one of my favorites among the under 2,000 yen Tasake. Just leaving this bottle on the table makes me feel like I'm at a cherry blossom viewing party! (Just to feel good...) Nabeshima is brewed with Kitashizuku, a good sake rice produced in Hokkaido. As a Hokkaido native and Nabeshima lover, I feel as if a Hokkaido-born player has made it into the starting lineup of a top-notch team, and I am selfishly very proud of it. As someone who got to know Nabeshima through the purple label Jungin It may not be Nabeshima-like, but it's still insanely delicious! I was very impressed with the fruity ginjo aroma. The fruity ginjo aroma is strong, and the light mouthfeel is dry and quite sharp. The light mouthfeel is dry and quite crisp, but the subtle sweetness is very beautiful. It is not boring to drink at all. It can be served with a wide range of dishes. It will be in great demand in the coming season. It is a bottle that can be recommended to those who want to broaden their palate from the popular sweet and juicy type of wines. Purchased at Doi Shoten (Asahikawa City).

This is the 10th anniversary version of a local sake brewed entirely in Asahikawa, including the rice, brewing, and label design. Jungin Nama-zake has not been widely distributed to the public, but the brewers felt that it was too good to waste, so they released this bottle with full anticipation. As Asahikawa is my second hometown, I am deeply moved by this sake. As for the taste, let me tell you... It has a fruity ginjo aroma and a smooth, light, slightly modern taste. It has a sharp bitterness and sharpness, perhaps due to the characteristics of comets, and it is not too heavy, so it is suitable for everyone. It has a crisp bitterness and sharpness that is characteristic of Hokkaido sake, and it is not dull, so it is suitable for everyone. As mentioned in the review by the liquor store, I hope this sake will become an annual tradition for the locals to enjoy, just like Nemuro's Kitanokatsu! I've laid it down for almost 6 months and I'm still sure of the crop. The floral and sweetness are firm and moderate. The alternating wavelength of bitterness is just right. It has a sharpness and is not dull. On the second day, it tastes a little more mature and twice as delicious. I want to give a name to the phenomenon that just the name "Aizan" stimulates my desire to buy it.

I let it lie for six months, but ended up opening it on my birthday (not a happy age at all). It was a lucky bottle that I happened to hunt for just stocked at the liquor store. It has a fluffy ginjo aroma that is not too loud. It has a clean, refreshing mouthfeel with no cloying flavors typical of junodai. It was a perfect match for my favorite pattern of slightly sweet, fruity, low acidity, mildly bitter, and sharp, and I was able to drink it easily. The balance is perfect without being heavy, and it is beautifully delicious. Tobiroki is often reviewed as a mediocre sake that doesn't match its rarity or price, not a trend, not as good as one might expect... I personally feel that I have found a good match! Although there is some bias due to the brand's strength, I still think it is worth drinking if you consider it to be a strength as well. Well, everyone's tastes are different. According to the wholesaler, Jun-Dai is more readily available at retailers than Jun-Gin or Toku-Jun. From a restaurant's point of view, jun-dai is a bit expensive in relation to the purchase price, so it is more likely to flow to retailers. At about 3,000 yen, it's hard to make it a daily drink, but I'd probably buy it again if I could find it in the store. Thanks to my iPhone for the predictive conversion of "Tobiroki". LOL!

I think I'll open the best sake on the best day, but everything in my stock is a keeper. I was looking forward to this light nigori sake. We opened the bottle at my wife's grandmother's US-jyu celebration. The aroma is immediately fruity. The mouthfeel starts out tangy, with apple-like sweet and sourness, rice flavor, and a nice sharpness at the end. Compared to other Tazake Jungin class, it seems to have more body, and in particular, it has a strong sense of sake or bitterness, which makes it very drinkable. Tasake is definitely the best. Comparing the year-end and New Year's sake series, I preferred the New Year's special pure sake, but this one is quite tasty as well. This should make my grandma live even longer lol. See you next year!

When I went back to my wife's parents' house, they had prepared it for me. I am very grateful for that. Asahikawa Otokoyama Sake Brewery's standard early-summer draft sake. I don't know if it is still available in this season or if they kept it in storage, but either way it is a delicious sake. Although it is a special junmai sake, the rice polishing ratio is 55%, which makes it as clean to drink as a ginjo-shu. Although it is labeled as dry, it is a well-balanced sake that is both mellow and refreshing. The family instantly killed the 500ml bottle. There are still many local sakes that I don't know about. I'll buy it when 2022 comes out in May.

Kanagawa sake. When I hear the word Kanagawa, I first think of Slam Dunk. I am of that generation. (Whatever) A little sweet, like a white wine from Germany. Sweet and sour, with a berry-like fruitiness. The acidity becomes stronger in the second half and lingers until the end. It is relatively refreshing, and although it is sweet, it can be enjoyed with food. Perhaps it is because it is a low-alcohol wine, but there is almost no bitterness or alcohol taste. This may be the difference between likes and dislikes. As a person who drinks from noon on the middle day of a consecutive holiday, it is very comfortable.
