Arrived from a certain hanpukai along with some Shine Muscat. I googled the specs and found that it smells like 4mmp, so it's a pairing with grapes. The most recent 4mmp I experienced was Makiki, Niida Zenshu Meron, and KURAMOTO SE. Clear lactic acid and 4mmp aroma. Medium-bodied, with a smooth, understated sweetness, and a hint of grapes in the nose as it quickly slips away without a lingering aftertaste. Refreshing, refreshing, and delicious.

Today's comparison is Masayo's. The white malted rice one reminds me of Flax Cat, and 1401 reminds me of Kamo Nishiki's mellow and well-balanced taste, but what do you think? The white koji one is just as I imagined. The sweet and sour taste is rather mild, and the coolness of the acidity and low alcohol makes it delicious while feeling the end of summer. The No. 14 was not what I expected at all. It is sweet but has a pleasant equilibrium with a rough hardness. It has a nice sharpness and is also delicious.

On Sake Day, we participated in a go-around and enjoyed listening to the stories of Ina and Agave (president), Shirakikyu (brewer), Kaiharu (toji), and Ryusei (president). This is a kijo sake, so it is sweet, but it has a strong acidity and low alcohol content, so it is light and intoxicating. It seems to go well with fruits.

I have been drinking it lazily for more than half a year since the bottle was opened, and summer is over. At the time of opening the bottle, I thought it was "much sweeter" but I compared it with Takasago. The Jikin is obviously softer and smoother on the palate. Did time make an ally of Jikin? I opened this bottle thinking it would be carbonated in summer, but it was a winter sake. It is highly carbonated, but the alcohol content is a moderate 15.5% and the rice polishing ratio is 60%, so the flavor is robust. I will drink it as long as I like the balance of sweetness and carbonation. Takasago was added as a relay, which was refreshing and luxurious. The closer is Taka Asahi. I left the batting to Otani Betts Freeman, and the pitcher who is connected to the local brand, and before I knew it, we had a complete game victory.

This is my first experience with it and it is too good. When you open the bottle and put your nose close to the mouth, you can smell a slight apple aroma and strong lactic acidity. As it warms up in the mouth, the elegant sweetness is very smooth. The rice polishing ratio is 45%, as expected, and it has a good impression without any cloying taste. The bitter taste and acidity at the end give it a nice finish.

I have home-aged this flagship in ice for three years and was amazed at how fresh it was at first sip. I was surprised by its freshness at first sip. The first sip reveals a silky center with a good body and gasiness that gives it definition. As the temperature rises, the smoothness and sweetness increase, but the bitterness on the back end gives the wine an excellent sharpness, and the whole flow is too elegant. It is delicious.

It's lightly sweet and chili, and because of the 16% Alc, it has a strong bitter aftertaste that is sharp. It is delicious. The bottling is done in a vacuum barrel at a directly-managed store, and the bottles are thin and the sake is poured just to the edge of the bottle mouth. It is nice to see that they take care not to oxidize the sake as much as possible.

On my way to get today's vacuum cask sake at Mikotsuru direct sales store, I stopped by Yamanashi Meizo-san. After returning home, I immediately opened a bottle of the store's limited edition sake. It is delicious. It is sweet but clean, a little gassy, and sharp with bitterness, which gives a good impression. The aroma is moderate and apple-like. In Suwa, where Mikotsuru is located, the Chuo Highway between Suwa and Okaya was closed due to an accident, which caused traffic jams on all major roads in the Suwa area.

If my senpai told me it was a "high alcohol ecru," I would want to drink it at all costs. The first impression of the aroma is sweet banana. I doubt my senpai is really allowed to call it "Shinsei". Today we opened two bottles at the same time and compared the Yamadanishiki 2-no-no-nozo and the Hozu 4-no-nozo! I can't tell the difference (lol). The sweetness and gasiness are the main flavors, and the bitterness, alcohol stimulation, and other bandwidth seems to have been cut with an equalizer, so the taste is simple. In any case, there is no doubt that it tastes good, so I would like to enjoy it slowly.

Today, I compared it with Garakudai Sasu, which was opened yesterday. Rokka is sweeter than Sasu. Sasu is a little less sweet, but has acidity and bitterness, giving it a juicy citrus flavor. Both are fire-aged, but they are fresh and have a gaseous taste. Both yesterday and today were so delicious that I am completely addicted to Masayo.

The first Gagakuyo was obtained at the brewery. I learned about the history of Sado Island and drove around the island from east to south and west to get a sense of the geography, and this was the drink that I remember from my trip. It is light, moderately sweet, and has a slight gaseous taste. It has a bitter aftertaste, but it fades out quickly because of the low alcohol content. I am happy to have found a good sake.

A hermitage nestled in a back alley in the big city. With countless antique boxes and a large collection of books piled up next to each other, we left the quiet room and searched for a nearby liquor store. In the intense heat, I was impressed by the first shot beauty I came across at the end of a climb up a hill that made me weak in the knees. No matter how many other bottles of sake I may have had on the shelves of this liquor store in the past six months or how many other bottles I may have had in my possession, I was determined to bring it home the moment I encountered it, and I hope that my strong will will be demonstrated on other occasions as well. Today I was satisfied just looking at the enthralling labels.

At the Japanese Sake Information Center in Toranomon, we compared aged sake and kijoshu. From left to right: Mature Rouko Daiginjo 10 years old, Kidoizumi Junmai 5 years old, Hanahato Kijoshu 8 years old, Manjusen Kijoshu aged in oak barrels. My favorite of the day was the Manjusen. The aroma is very sweet, but not at all heavy. The final refreshing oak aroma that lingers in the nose is also very nice.

If we compare it to Junmai Nigori Hatsushibori, which is released every December, this one has a softer impression with a little less gas and more sweetness. The bubbles are stronger than those of the Ippouki nigori and weaker than those of the Hirotogawa nigori. The aroma is of banana and green grass, and it is delicious.

This is a Tochigi sake that makes you want to shout "wonderful" from the depths of your heart. The sweetness that fills the mouth with the slightest hint of gas lingers and quietly fades away.
