I had not had the pleasure of visiting Sado last year, but I found this at a liquor store in town when I wandered by. I was hooked by the power word "centrifugal separation" and decided to take it home immediately. This is a good sake. It is very soft and elegant on the palate. The rice is made from Gohyakumangoku with a 55% milling ratio, but it is beautiful, with the sweetness and flavor of the rice riding on the transparency of the 35% milling ratio. The aroma is banana-like. The taste is full of sweetness, but the gradual entry of acidity is clear and the balance of sweet and sour is pleasant.

I have followed this sake for six seasons without fail, and recently I have finally become somewhat familiar with the differences in sake quality from year to year. How about this year? It is light and cloudy. There is almost no foam and the aroma is fresh green grass. The mouthfeel is soft with the rough outline of a raw sake. It has a pleasant sweetness, but it is more like alcohol sweetness than sugar sweetness. Some people might describe it as dry. It is delicious again this year.

This is a new 14% low alcohol sake, and I was looking forward to pairing it with sashimi tonight. It was fresh and crisp, but had a nice fullness in the back, and was a good match with scallops and sea bream. This was my first Takeyuki, and it was delicious. We also got a bottle of Urasato Usunigorori (light nigori). This one has a nice shwash and a sharp body, and is very tasty on its own.

After a business meeting in Jimbocho, I discovered a liquor store from a solitary, gourmet-like stroll and this was the first thing that caught my eye as I wandered into the store. I was surprised to see no Yamori, so I immediately decided to buy it. As I was paying at the cash register, I noticed the 2025/3 imprinted on the bottle and took it home with subtle regret, thinking, "It's been a long time..." It was fire-aged, but fresh. It is fresh even though it is fire-aged. The aroma is beautiful, slightly apple-y, and delicious.

After enjoying the strongest pairing of broiled eel and Kikuhime Yamahai Junmai, here it is. This is one of the sake I don't miss every year. I love this sake. It is fresh, has just the right amount of sweetness, is crisp, and is dangerous not to feel the 20% Alc.

For the first time in two years, I prefer to drink this new sake with the tailings chilled to a crisp. The aroma is fresh and invigorating, with a green grass-like freshness. The taste is moderately sweet, moderately full, and crisp and delicious. It is a good sake full of youthfulness.

Recently, I've been into "silent harmony" - the ultimate sense of harmony between the food and the sake, with a pleasant aftertaste. Fresh sake and other reset-type sake do not suit my taste buds, so I am having a hard time with this new sake season. Tonight's dish is spring rolls. The candidates are Kikuhime, Hanagaki, Drunken Whale, Kenrishi, and Tobiroki 3-year aged sake. The Kembishi was closest to the darkest, not too dark, and I preferred it lukewarm, lower than body temperature.

It has been quite a while since I have had Hana Yuu, but it is delicious. It is sweet but refreshing. The impression I had was quite different from before, and I wondered if the specs had changed. I checked and found that the alcohol content had gone up from 15 to 16. It was bottle-fired and shipped in October, so it must have been in the cellar for about half a year, but it still has a nice freshness and softness. The aroma is moderately apple-like, with a yellow tinge. It is best served cold.

I chose Ine Mankai and this sake to go with the leftover horse mackerel nanban from last night. I tried to match the acidity level of the sake with the food. The Ine Mancai was too strong in character to match well...but the Yuri Brewing Sake was a better fit than I expected. I left a high-alcohol (17%) sweet and sour sake at room temperature for a year and a half, and when the dishes and the acidity of the sake were in sync, the sweet and savory taste of the sake that has grown through maturation swelled and became delicious.

Fried chicken breast with truffle & mayo sauce. The slightly fruity aroma is banana-like. It has a slightly rough texture when you take a sip, and the volume of sweetness is followed by bitterness and alcohol at the end, making it a good sake. I tried it with Toyo Bijin Jyundo Ittou (low alcohol) and Kikuhime Yamahai Junmai Kanzake (dark mellow), but today the Hakuryu was the best match for me. If it had been chicken thigh, it might have been Kikuhime.

We tried to see which sake would go best with mackerel simmered in miso. We tried three different sake: Eiheiji Hakuryu Junmai Daiginjo, Houou Mita Moustache Ban Junmai Daiginjo, and Kikuhime Yamahai Junmai. Kikuhime won hands down. The concentrated flavor and fatty taste of mackerel and the salty taste of miso harmonize with the rich Kikuhime. It is delicious.

After two summers at room temperature, I am looking forward to seeing how it turns out. The conclusion was different from what we expected, with almost no sense of maturity. There was no off-flavor, no condensed sweetness, and it was the usual sweet and sour Ine Mangaka. Is it tough because of the high acidity? While heating it up with Masa-san's recipe from Guts, the sake warmer, I imagined that a fermented type such as kasuzuke would surely go well with it. It is delicious.

Tanaka Rokuugo with Tempura, delicious. This sake has a soft and gentle sweetness on the palate. It has a low alcohol content of 14 degrees, so even when combined with other food, it has a pleasant finish without a hint of alcohol. Tanaka Rokuugo is especially good with red pumpkin from Aizu Kinzan and mountain salt from Urabandai.

I saw it on the street for the first time and took it home. It is made with 88% polished rice. It has bubbles and is slightly yellow in color. The temperature is high (12°C), the taste is soft and calmly sweet, and it has some body, probably due to the low milling rate. It is delicious.

It is a once-in-a-lifetime event. 1) Comparison of Banshu Yamada-Nishiki 3 years aged sake and 1 time hi-irin (same BY). (2) Nakadori Junmai, a comparison of the same brand with a different BY (1 year and 4 years of aging). (3) Comparison of Aizan and Sake Mirai (aged 3 years). We had an extraordinary evening. The owner kindly offered us a bottle of Aizan 10year old (he said it was like sherry), but we declined because we were not confident we could taste it properly since the alcohol was already advanced. Next time, I promised myself a heated bottle of Jyushiyo and a bottle of Aizan 10year old.

A drink after the party. We entertain a business partner's rep and his superior's former rep. We greeted him with a craft beer from his hometown brewer, and for his superior, who cannot drink alcohol, we welcomed him with a mango fruity non-alcoholic craft beer from Space Brewing. After that, I offered Jikin Akaban Omachi Hi-ire, which didn't get a very good reaction... I ended up emptying most of the Jikin by myself, the guests left, cleaned up, and here we are.
