Today, I compared it with Garakudai Sasu, which was opened yesterday. Rokka is sweeter than Sasu. Sasu is a little less sweet, but has acidity and bitterness, giving it a juicy citrus flavor. Both are fire-aged, but they are fresh and have a gaseous taste. Both yesterday and today were so delicious that I am completely addicted to Masayo.

The first Gagakuyo was obtained at the brewery. I learned about the history of Sado Island and drove around the island from east to south and west to get a sense of the geography, and this was the drink that I remember from my trip. It is light, moderately sweet, and has a slight gaseous taste. It has a bitter aftertaste, but it fades out quickly because of the low alcohol content. I am happy to have found a good sake.

The characteristics of this lot are rare and "now is the time to drink". That being said, it has a soft taste. I bathed in it since I came to Saitama.

A hermitage nestled in a back alley in the big city. With countless antique boxes and a large collection of books piled up next to each other, we left the quiet room and searched for a nearby liquor store. In the intense heat, I was impressed by the first shot beauty I came across at the end of a climb up a hill that made me weak in the knees. No matter how many other bottles of sake I may have had on the shelves of this liquor store in the past six months or how many other bottles I may have had in my possession, I was determined to bring it home the moment I encountered it, and I hope that my strong will will be demonstrated on other occasions as well. Today I was satisfied just looking at the enthralling labels.

Izumo Gassan Special Junmai, Koshi Raikou, and the apple type followed, and finally, Kokuraku. It has a very beautiful aroma and a rich banana flavor. The balance of sweetness and acidity is refreshing, and I like the scent of Collage in the nose afterwards. The last part of the bottle has a bitter alcohol finish and a slight freshness that is perfect. The sweetness of this Aizan is a little stronger than the others in the lineup.

White koji x high temperature disorder x heat of this evening = I met a refreshing cat. It is delicious, with a sense of sweetness in the center and the coolness of the acidity dominating the entire flavor. A friend of mine who is a Masa-sama geek told me, "If the description of this lot says "let it rest," drink it sooner rather than later. I hesitated for a moment, but as the saying goes, I opened the bottle early and was satisfied.

Beautiful golden color. It's delicious. It tastes just as I imagined I wanted this sake to taste, and it is perfect. It is sweet and soft, with a slight bitterness in the second half that gives it a nice kick and a good amount of acidity.

The first Genmai was an orange labeled special junmai Yamadanishiki unfiltered raw and Mari special enclosed unfiltered raw. The orange was very sweet, while the orikarami Mari was surprisingly refreshing.

At the Japanese Sake Information Center in Toranomon, we compared aged sake and kijoshu. From left to right: Mature Rouko Daiginjo 10 years old, Kidoizumi Junmai 5 years old, Hanahato Kijoshu 8 years old, Manjusen Kijoshu aged in oak barrels. My favorite of the day was the Manjusen. The aroma is very sweet, but not at all heavy. The final refreshing oak aroma that lingers in the nose is also very nice.

If we compare it to Junmai Nigori Hatsushibori, which is released every December, this one has a softer impression with a little less gas and more sweetness. The bubbles are stronger than those of the Ippouki nigori and weaker than those of the Hirotogawa nigori. The aroma is of banana and green grass, and it is delicious.

It is an unfiltered, unpasteurized sake of R05BY brewing No. 25. The color is fairly yellow and green, and surprisingly there are no bubbles, probably because it has been aged. It seems to have a different flavor from the strong carbonation of Izumo Kojiya. The aroma is a little heavy with isoamyl alcohol rather than the banana aroma of isoamyl acetate. The taste is full of sweetness. The taste is sweet with a hint of gas, minerality, and bitterness, and the final taste has a sharp alcohol finish.

This is a Tochigi sake that makes you want to shout "wonderful" from the depths of your heart. The sweetness that fills the mouth with the slightest hint of gas lingers and quietly fades away. The sequence of flavors is very beautiful. The elegant sweetness is sometimes described as being like that of Wasanbon, and that is exactly what it is. This is the best wine of the year, served cold in a wine glass right after opening the bottle.

Immediately after opening the bottle, I sensed the ethyl caproate apple aroma and the acidity on the nose at the end to be a bit strong. I chose to leave it at room temperature, preferring my own taste over drawing out the potential of the sake, and after a month, it is quite rich, with a rich sweetness and a contour-integrated acidity. The sweetness and acidity are quite rich.

I really recommend the Kaku-uchi pairing set at Tsukiya-ya. The tastes of the entrées are delicious and too much fun, such as the dashiwari sake only available here and the comparison of heated sake flavors in large-medium-small flat sake cups. The heated Shirataka Umeshu (plum wine) with dashiwari was especially delicious, and tasted as if it contained plum flesh. I challenged myself to taste that impression at home. Since Shirataka was sold out, I tried Shiraoi's plum wine, which I had on hand. I managed to reproduce the fleshy taste of plums with 80% bonito kelp broth and 20% plum wine, and I would like to pair it with tempura tonight.

Yuki no Bijin has a strong impression of "No. 6 super-harsh, forcefully rising sharpness. What is this "kijoshu" and "nigori-zake"? I couldn't suppress my excitement and got it. What is it? It was a dry sparkling sake like Yuki no Bijin without the kijoshu feel, which was quite different from what I expected. It is a cocktail of rich, sweet and delicious Shiboritate Nama-nihonshu from Shiboritate Shiboritate, which had been left at room temperature for about 2 weeks after opening the bottle, and about 1/4 of Yukinobijin, which has a rich and juicy fruitiness. This is delicious.

It has been three years since Tenmei was aged for three years in the palm of my hand. I am struck by their willingness to take on challenges, such as using Hokkaido rice and three types of yeast. Running through the middle of the rice paddies in Aizu-Sakaeshita, getting miso from Tachikawa Gombo and Meguro Koji-shop, taking a break with my favorite medium roasted mandarin, and having a set meal of fried horse mackerel at Chinese Soba Ohtsuka...these are just a few of the pleasant memories that come back to me after taking a sip of Tenmei in Aizu-Sakaeshita. It is soft and sweet, moderately full and crisp, with the astringency and roughness of the sake's tailings, a wonderful gem.

It is a perverted spec. The rice is polished to a 35% milling ratio with a sake degree of minus 100, an acidity of 6, and an Alc of 5%. It tastes great! We invited our clients over and treated them to this sake and home-cooked food (including take-out). They both said, "Is this sake?" and "Who doesn't like this sake? Afterwards, we enjoyed Yakitori, Yonotori, thick raw chocolate and strawberries (Houou Mita), etc., and everyone headed home. It was a good day to enlighten people on the deliciousness of sake.

I read a review that said the 60% polished rice ratio special junmai nigori was a little too sweet? I have seen some reviewers say that it is a little too sweet, but this is a 50% junmai ginjo-nigori. The precipitated tailings occupy about 4 cups of a bottle (lol), but I wonder if the amount of polishing will bring about the perfect balance! We have high expectations. The supernatant is wonderful. The soft sweetness is combined with a firm carbonation that keeps you from getting tired of drinking it. This is delicious. The final taste is rather refreshing, and the last one is calpis, which is also tasty.

The more you sip it and savor it slowly, the more the elegant sweetness that wells up in your mouth is the true essence of this sake. It is very tasty. The three common specs of orikarami, Alc of 16%, and rice polishing ratio of 55% make this sake a pleasure to drink at home, as you can open your mouth and compare sips with each other.

The sake pressed yesterday morning has arrived and is now ready to be drunk during the day. We are grateful for the extraordinary efforts of our predecessors in making this delicious sake. I sit on the table and chairs on the balcony, which has been abandoned since I quit smoking, and sip sake in the sun for the first time in a long while. It is a light nigori sake with an amber banana aroma, a soft mouthfeel, a moderate sweetness, a bitterness in the latter half, and a sharpness of alcohol! No doubt about it.
