We drank the Takacho cedar cask stored version the other day.
It has a hint of cedar aroma and a sweet and thick taste with a volume of Bodhi Hashiro. It has a voluminous sweet and rich taste.
Mizuhata 1568 x Kofukuji Tamonin Temple
A gem usually sold at Kofukuji Temple
The brewing water is not the usual ultra-hard water, but spring water from the Kofuku-ji Temple.
The taste is a little lighter here.
1355 Water end
First time in the Mizuhata series
Like the Takacho we drank the other day, it has a unique sweet and thick taste.
It tastes more like Shaoxing sake than sake.
Kouei Kiku's first year-round product!
A light touch of rice flavor and sweetness spreads from the palate.
The acidity is mild for a Kouei Kiku, and I personally feel that it is quite light in flavor along with Bikun.
I hear that the sake rice used changes depending on the time of year, so I am looking forward to the future!
Gorgeous ginjo aroma reminiscent of bananas.
The clear and smooth mouthfeel is followed by the umami of the rice, which is tightened with a refreshing acidity and bitterness. The fullness of the flavor, typical of Omachi, is a little subdued.
It was the recommended brand at the restaurant I was taken to, so I ordered it after a long time!
The soft taste of rice with a touch of fruity flavor spread from the mouth.
Unlike the impression I had expected, the slightly fruity rice flavor spread from the soft mouthfeel and was very tasty. I was pleasantly surprised to find that it was a stoic, classical type.
Personally, I liked it the best among all the Mimuro Sugi varieties we compared today. Compared to Takanaga's Bodhi Hashiwado, it is more refreshing, but I could taste the umami of rice.
