We will be drinking a lot of Shinsei this month. This sake is next! Flax cat𓃠 It is ranked 15th in a certain ranking. Among the "PRIVATE LAB" series, Flax Cat has an image of being relatively easy to obtain. The name "Flax Cat" is said to be derived from the fact that it is flax-colored as a result of the use of "white koji mold" in addition to "yellow koji mold. The white malted rice has the characteristic of producing a large amount of citric acid, which gives the sake its characteristic sour taste. This is the first flax cat for 9 months! This time it's a direct brew from a different order... I wonder what it tastes like... The aroma is like a white wine, not as woody as Yonotori. It is easy to drink with its green apple-like acidity and dry, crisp taste, but the aftertaste is a little vinegar-like 🙄. The acidity is mild and tasty when ponzu is used with bonito tataki (bonito strips) as an entrée 🙂. The second day... The sourness settled down and the taste increased! You can't go wrong with Shinsei.

In December, we drink a lot of Shinsei 🙂. First up is this sake! Yonotori 🐓. I haven't seen it lately, but it's #1 in a certain ranking, surpassing Jyushiyo 😲. There are three series of Shinmasa sake: "No.6", "Colors", and "PRIVATE LAB". Yonotori is one of the "PRIVATE LAB" series, and it was the first sake released in the series. This time we will be drinking "Yonotori" Betsuatsurae Jikkumi✨. It's been a while since I've tasted Yonotori, let's see what it tastes like... The aroma of oak barrels is pleasant at first, followed by the rich sweetness and moderate acidity typical of kijo sake. It is indeed the sweetest and most delicious type of sake from Shinmasa Shuzo. Like mango... like plum wine... 🙄. Not to be outdone by this sweetness, I prepared sea urchin jellyfish as a side dish. The sea urchin jelly is also delicious! The alcohol content is low at 13 degrees and before you know it, it's gone 😱. The Bespoke sake is... I couldn't tell the difference from the regular one, but I feel like I drank a good sake 🙂.

A series of famous peaks that will not stick in anyone's mind ⛰. 〜The Tsurugi Mountains We climbed Tsurugidake (剱岳) in midsummer. It is called the "Rock Hall of Fame" and is a very difficult mountain to climb in one day. It is called the "Rock Hall of Fame" and is a very difficult mountain to climb in one day. I was looking at a certain ranking and found a sake called "holy" 👀. For me, when I think of Saint, I think of Mount Saint ⛰. First I secured "Sei" and then I climbed Seidake in September 😌. Seidake is 3013m above sea level with a course time of 16 hours. It is a very difficult mountain for 1-day climbing 🙄. At first, you walk 80 minutes on the road to reach Seikou Hut. A little further on from there, there is a manual gondola to cross the river. This gondola requires a lot of arm strength, so I ended up taking off my shoes to cross the river😅. After that, it is a steep climb all the way up. The elevation at the starting point is about 700m, so it is a steep climb, but anyway, it is a long steep climb 🔥. It was a pretty tough climb for my post-Corona body 💦. The last steep part of the climb made me exhausted, but I managed to make it to the summit ◡̈)/ ◡̈)/. That steep climb at nearly 3,000m elevation is foul 😅. We hurried down the mountain: 🏃‍♀ I drank a glass of "Sei"... Sweet and fruity with a fresh gasiness. It was a very sweet sake unlike the Seigaku 😆. I bought this sake as a joke, but it was unexpectedly delicious and I was so happy 😂.

Some time ago... I stayed at the Shima Kanko Hotel. This hotel was the venue for the G7 Ise-Shima Summit held in 2016. The guest lounge is, what a surprise, all-you-can-drink alcohol! Sake was prepared "Saku". There were also a few sweets available and I could spend the rest of my life here 😁. I felt bad about only having free drinks and food, so I decided to go to the BAR. At the bar, we enjoyed a glass of Jikin while listening to live music 😆. Jikin is delicious... and the music is pleasant... and makes me sleepy😅. That was my report on the best day of 2023 ✨

I have my priorities set in my mind for when they say so! No.6>Private Lab>>Colors This is the image 🤔 Colors has a lower priority. Among them Viridian and Cosmos are lower because they are easy to get. But this time I was looking forward to see what Cosmos tasted like since it is a recovery sake. I tried it and it tasted so good 😂It's the best Cosmos I've had so far, it seems it's brewed to be aged at low temperature for more than 10 years, and it's undergoing secondary fermentation in the bottle to improve its shelf life. Well, I don't know about you, but this gassy sensation was irresistible to me 😆. I always enjoy the recovery sake and would gladly buy it even if it costs 1000 yen more, but I'd rather not have a disaster 😅.

We had an ecru festival from the weekend. The drinks we compared this time were... Ecru 2022, Ecru 2021, Ecru 2017 Morocco Earthquake Relief Sake, and Ecru Vintage 2015 Akita Prefecture Torrential Rain Disaster Relief Sake 🙂. In order of preference... Ecru Vintage 2015. It has a pleasant sweet and complex taste 😆 It's not fresh but it's very deep and noble without the punch of an old wine. I liked this one the best: ☝️ Ecru 2017." Woody aroma on the palate. You can enjoy this drink for its aroma. I wonder if the wine-like taste is due to this aroma 🍷. The taste is a milder version of "Ecru Vintage 2015"! The aroma is distinctive. This was a close second, but if you want to pair it with a meal, I'd say #1 🤔. The 2021 and 2022 were just average. The 2021 was better but the vintage is by far the best 🤔. It suddenly got cold. Be careful not to get sick and enjoy the delicious season of Sake.

Today is our 3rd anniversary of starting sake 🎉. The first year I got hooked on Koei Kiku and bought a lot of Snocre and Haro. In the second year, I met Shinmasa and went on a Shinmasa binge. In my 3rd year, I tried many different types of sake, but I think Shinsei might be my favorite 🤔. The sake to drink on the 3rd anniversary of the sake... Shinmasa Hanpukai 2023 Part 2! No.6 A-typeSpark No.6 X-typeSpark It's too good to open the bottle at the same time, but let's go ahead and open it 😆. No.6 X-type Spark It's good 😂. It's good 😂. This tastes better than the regular X-type. I've been a Spark lover lately so this is crazy good 🤔 With No.6 Spark, I feel like it's cleaner than last year's Christmas bottle 🤔. Normally I would prefer a little bitterness, but X-type Spark has no bitterness but just enough sweet and sour! It's a little less carbonated so you can really taste the flavor 😌. No.6 A-type Spark This one tastes better! It has a stronger flavor than X-type and I love it! Shinmasa is still the best sake for me 😂✨✨

First post in 6 months😅. There have been a lot of changes in my work place...🧚‍♀...but I've been drinking sake through it all. I was most disappointed that I forgot to post on 6/6 Shinsei day 😅. So this year I'm taking the liberty of posting 9/9 as Shinsei Day! Shinsei No.6 A-type seems to be quite a rare sake. It is slightly sweeter and more acidic than No.6 X-type 😂. I still think Niimasa is delicious! ...Flaxcat Spark and No.6 X-type stored in the sake cabinet...hadn't been opened yet but it exploded in the fridge😱. I guess it gets too cold when it's on the top shelf... It's too bad that our precious liquor is opened without our permission and the contents are overflowing and gone 😭

Kinryo Setouchi Olive Junmai Ginjo I went to Kompira Onsen in Kagawa ♨♨ A trip to enjoy hot springs and udon noodles! Since we are here, we also decided to visit Konpira-gu Shrine, which is famous for being called "Kompira-san" ⛩. The approach to the shrine is a series of famous stone steps. There were lots of stores, too, which was fun. Then... I found a sake brewery on the approach to the shrine 👀. I went inside and learned a lot more about the brewery than the sake brewery. I bought this sake 🍶. The taste is... More fruity than I expected 😲. It is sweet on the palate, but it also has a sourness that is refreshing and clean. But it is slightly dry 🙄. To be honest, I wasn't expecting it, but it might be surprisingly tasty 🤔 It's a sake full of local love, made with yeast found in Kagawa's olive groves and sake rice grown in Kagawa! Sake like this makes me want to support them 😊.

Today, February 22, is Cat Day (ΦωΦ) As an aramasist, I have to drink flax cat 🤔. Today I drink flax cat and flax cat spark 😌. Flaxcat😻 One sip and it's like... Apple 🙄. Sour and slightly sweet and refreshing. It's still delicious😊. By the way... It is named after the creamy (flaxen) color that is produced when yellow malted rice for sake and white malted rice for real shochu are mixed. Also, in the Shinsei private lab concept of the four gods, they had an image of a white tiger, but since it was finished supple, they changed the tiger to a cat and it became a flax cat 🤔. Flax Cat Spark😹. When you pour it into a glass, you can feel the carbonation! When you put it in your mouth, it is more like champagne than sake 🍾. It's more like champagne than sake 🍾. I definitely prefer sparkling 😌. It has a nice balance of sourness, sweetness and bitterness and tastes like grapefruit! I also love the freshness of sparkling 😆. Speaking of which... Jimny has been delivered \(◡̈)/\(◡̈)/ I was told it would be a year wait, but actually it was 10 months 😊. Now I'll be able to go down the narrowest of roads with ease!

After taking numerosis on 2/1... Ria sakenature on 2/2 Tris on 2/3 Doux on 2/4 and compared the drinks 😌. Ria Sake-Naturel" 1~6 yeast. Tasty on the first day of opening...maybe even better than numerosis on the second day 🙄 tastes good and has a good acidity. Trois" No.3 yeast This is the best! It's sweet and tasty. Doux" No.2 yeast It smells like rice in the mouth! Huh? Is this good? I don't know what it is anymore😅 When I compare all of them on 2/5, the ranking changed 😲. Trois or Doux with a solid sweetness, or maybe the Numerosis with a good balance of sweetness and acidity 🤔. The Ria Sake Naturel did not taste as good as the first day of opening the bottle. Maybe because I like the tingling sensation right after opening the bottle. What a... Today I was able to buy this year's Numérosis Domaine Ikeda 😲. Now I can compare it to the one year old Numerosis! Ooooooooo!!! This is no match. By far, the one year laid down tastes better. There may be some BY differences, but if you don't let it sleep, you're missing out 😅. Today is a full moon. It's a good day to drink good sake 😆.

Today is the 2nd anniversary of Sake-no-wa 🎉! It's been a year since I got my hands on Shinmasa and Jikin and started to get swamped in sake: ☝️ But I've been slacking off on sakewa and still have 75 posts to go. I hope this year will be a year of evolution 🙄. On such an anniversary, I'll toast with Sogapeur Effice instead of Shinsei 🥂. This Sogape was a gift from someone at work. I was told it was better to let it sit for a bit, so I held out for a year and opened the bottle this very day! The aroma is mild. The carbonation is not so strong, and the refreshing sourness and sweetness fill the mouth. The aftertaste is a little bitter and acidic, and it's clean and crisp. This is so delicious 😂. Looking back on the past year, the most delicious sakes were... In terms of Shinmasa, of course No.6, Xmas-Type and NEXT5 were also very tasty. Of course, Snoqualet is also good and Sogape is my favorite. And Sengoku... I think I like sour sake 🤔. The thing that made me the happiest was... I got the full complement of Niimasa 😌. The second year was a little less with 30 check-ins and a few posts, but I also bought a sake cabin... and we have a great liquor store in our neighborhood that we've gotten to know really well! That was the best part ✨. I'm going to continue to enjoy my sake life based on your reviews...

I went to Shirakikuya in Takatsuki to buy a bottle of nigori sake from Okunoto's Shirakiku, which seems to be all the rage in the Kansai branch of SAKEWA! It's my first time visiting this liquor store, but it looks pretty good 😌. Maybe I should go there again... I'm glad I was able to buy a bottle of Okunoto Shirakiku because there was only one 4-gouge bottle left. The taste is... It tastes like doburoku, as there seems to be some rice left in it. It's sweet, but you can drink it easily 🙄. The carbonation was refreshing and didn't feel that heavy. But it's 18 degrees alcohol 😲. I got a little drunk 😅 because I was in a good mood and manacled. I'm getting sleepy and can't think of a sentence 💦. Yesterday was the Wakakusa mountain burning 🔥. You can see it from our living room 👀. This year the fire didn't catch fire so I couldn't see the flames spreading, but I did enjoy the fireworks 🎆.

I drank Snowman, Hirotogawa, and the last one was Jikin ✨. I have never had Jikin before. I have never had a chance to get it even though it is from the prefecture next to Nara where I live. Looking at Sake-no-wa, I heard that you can buy it at a liquor store in Toba city if you accumulate enough points 🙄and bought it: ☝️ Such a long time wish for Jikin-sama✨It's the last of the 3 major nigori sakes 😂. From the moment I poured it into the glass, it was full of bubbles and so vibrant and lively! It's very effervescent and this is totally juice 😆. It is so delicious that I wanted to finish it all at once, but I decided to drink it in 3 days. On the first day, it was very fizzy, so it was hard to tell the true taste of Jikimasama 🙄. By the third day, the schwashiness was gone. It tastes apple-like 🍎. I personally like the piquant and shwashy Jikin, but the calmer Jikin is quite tasty too 😌. In the end, which of the three major nigori sakes is better! Jikin is delicious as a drink. Hirotogawa, which is delicious as a sake. Snowman, which has a cute design. Each is delicious in its own way, so it's too hard to decide😅. But if I dare to say... Considering the cost performance, I would say Hirotogawa 🤔.

Hirotogawa Junmai Nigori Nama Sake This is a continuation of the three major nigori sakes. After drinking the three snowballs, Hirotogawa! We left some of the snowballs behind and compared them 😌. Hirotogawa... The Hirotogawa has a more pronounced sweetness compared to the Snowball. The soda is a little less spicy and the rice flavor is very well balanced. It is not a juice, but a very tasty drink 😆. No wonder it's so popular 🤔. The third one is "Kakioko" from Okayama! It's an oyster okonomiyaki, and I've been seeing a lot of posts about oyster dishes on "Sake-no-wa" recently, so I was curious and went to try it. Since then, I have been addicted to oysters... I bought a lot of oysters on a special sale day at the supermarket for 200 yen a pack and ate a lot of them that day! Then... I got sick and threw up all over the place 🤮. It seems that there is a fixed daily intake of oysters, and if you exceed it, you often vomit😅. Please be careful everyone ☝️ ...the last of the 3 biggest nigiri is still that one.

This one is a bit more sour and bitter than the Snowman. Of course it's delicious and it's hard to decide which is better. I'd have to go with Snowman by a narrow margin 🤔. Finally, the UA rabbit... I had really high expectations for this sake, as it is a nigori sake from a noble brewery. Mmmm... Yum. 😆♪ I wonder what the aroma is, too. It's the sweetest of the three, with a strong flavor! It's the sweetest and most robust of the three! The label is really cute and I like it the best. What? I thought it wasn't one of the 3 best nigori sake.... 🙄 I know. It's been a while since I've posted about Koei Kiku Snoclet. I heard that this year's Snoclet was a little different, so I compared it to last year's! Let's start with this year's... Mmmm... Yum 😆. Next is last year's. Oh, it's even better 😲. Again, this year's... A little lighter 🙄. For me the difference is on a level that I can't tell without comparing the drinks. Last year's was slightly sweeter, more carbonated, piquant and energetic. This year's is a little less sweet, a little more pronounced sourness, and a little more bitter. This year's is more refreshing. The alcohol content was 2 degrees higher, but I couldn't really tell the difference. I prefer the more carbonated one, and I think I like last year's more robust flavor. ...but both are delicious and there seems to be almost no difference 😁. I let it sit for a day... The carbonation has calmed down a bit. Comparing last year's version of Snoclet on the second day after opening the bottle and this year's version of Snoclet right after opening the bottle, this year's version of Snoclet is slightly more carbonated. The carbonation becomes weaker after a day. On the second day after opening, this year's Snoclet is even milder. I enjoyed the Snoqualmie a lot. My eyelids will definitely be swollen the next morning😅.

My first post of the year, new politics! This sake is a very auspicious sake, as it is shipped on New Year's Day, starting at 0:00 am. The bottle is also designed after the Chinese zodiac, and as a Shinmasa fan, I had to have a bottle. I was worried about whether I would be able to purchase it, as it seems that not many bottles are shipped. I waited for the liquor store to open at the beginning of the new year and immediately purchased it 😂. I was really excited to try it because it is a fresh sake from Shinmasa... It didn't have much of an aroma and didn't seem to be fruity. First I felt a sourness, then a slight sweetness and slight bitterness 🤔. It's refreshing and the taste is a little mild. The alcohol content is 12 degrees and you can drink it like water 😁. I prefer it to No.6 or Amagara, but I'm sure I'll buy it again next year! I'm sure I'll buy it again next year..................... I'm still interested in the bottle design🙄. I heard that this year's theme is Ainu mythology and crests. It also seems that they decided to use the Ainu word isopo kamui as a tribute to the completion of the "Golden Kamui" serialization. Isopo is a rabbit and Kamui is a god. I love that kind of attention to detail, so this sake makes me want to buy the concept as well as the taste.
