Tonight's sake is a Shiraito Brewer's Nigori sake from the famous Shiraito Shuzo, which I had the pleasure of meeting at the brewery during my trip to Fukuoka in late May. When we visited the brewery, the proprietress and her little son were very attentive to us, and we were very grateful for the free tasting, which they usually don't do 😊 We bought a bottle of one of our favorites, so we're going to open it now 🙌! The rice polishing ratio is not stated, but I think it is more than 70% polished. The aroma has a soft lactic acid nuance that is not typical of sake. The taste is easy to drink with a slight sweetness of rice in the supernatant and umami flavor 😋 It becomes completely cloudy when mixed with a significant amount of lees, but it has a smooth mouthfeel and is more delicious 😋😋😋😋😋.

Tonight, I feel like I've been shvitzing at the gym for two days, but drinking this is a negative rebound, but when it comes to horse mackerel and monkfish sashimi, it's a MUST 🍶. I bought this 💁 at a brewery when I was in Fukuoka. It's Shiraito Sillite 70 ✨. Unlike Tanaka Rokujugo, this sake seems to be distributed within the prefecture, but it is a 100% Yamadanishiki Junmai sake from Itoshima, and when I tasted it, I enjoyed this lowest-purity sake 😋. The sake has a very clear and clean structure, with a hint of sourness from the ginjo aroma of the cucumber, and the rice is sweet and full. The finish is very crisp and very excellent. ☺️ It is best when it returns to room temperature from chilled. ⭕️

Participated in a brewery event hosted by a liquor store. Tasted at the second round of the Sekiya Shuzo booth, which is famous for Houraisen. Houraisen Junmai Daiginjo Sora We were served a Junmai Daiginjo Sora, which is hard to find in Aichi Prefecture. It had a luxurious taste with both sweetness and umami of rice. It is the kind of sake that you can drink without limit. The Ichinenfudo series is also delicious, but I prefer Houraisen Sora.

This is the last Maikaze series for this year. It's been quite a while, but we'll be having "Mt. Haruna" for the last time! When the bottle is opened and poured, it has a relaxing sweet aroma. It has a peachy aroma. It also has a slightly banana-like flavor. The palate is smooth, as is typical of Gunma sake, with a slight sweetness that is typical of "Maifu" and a nice astringent taste that plays an active role in the background! The astringency also gives it a mineral taste, which I personally feel is similar to the "Tenpyo Junmai" that I drank before👍. In the latter half, the astringency becomes the main taste, which reminds me of grapefruit. It melts away at the end, so it goes down smoothly! I've enjoyed many Maikaze series this year, including "Akagisan"✨I'm looking forward to next year!

288 Nights Junmai Ginjo Tamakashiwa 100% Gohyakumangoku produced in Niigata Prefecture Polishing ratio 50%. Alcohol content 16%. Sake meter degree: +3.8, Acidity: 1.5 (reference) Fat: 7/25 (bottle opened 8/23) This sake won the Platinum Award in France in 2018, and I tasted and bought it during my business trip to Nagoya on 7/19! Origin of the name *From the label The name "Two Hundred Eighty-eight Nights" comes from the fact that it took Mr. Takakura 288 days from rice growing to sake brewing in 1999, and Mr. Uno, who inherited his will, brewed it faithfully according to his teachings. I didn't notice any particular aroma after opening the bottle, but it had a refreshing-like feeling. The refreshing taste on the palate reminds me of a beautifully dressed young lady in summer clothes with a crisp and refreshing mouthfeel 😍. It's dry, but you can also taste a hint of sweetness, which I think is what makes it so refreshing. The spiciness may be due to the 16% alcohol content. The spiciness comes in the second half when it goes down your throat 🤩. Delicious! On the 4th day of my trip to Osaka, I went to Osaka Expo Park (Tower of the Sun) 🤯 I got a taste of Taro Okamoto's world view 🤯. By the way, last week's horses also maintained great form 💪. Drinking Gifu's Local Sake 2024 in Osaka㉓ Gifu's local sake booth. The brewery pursues "sake that goes well with food and that you never get tired of drinking. It was almost the end of the event, and some of the sake had already been sold out, but a unique label caught my eye. I had noticed it on Hirupeko's post and was wondering if it was sold at Haretoke, but I didn't realize I could drink it here... Mukashi no Mamma Special Junmai. The sourness and umami in the appleiness matched each other, and I was like, "Ummm.... Unlike the impression on the label, it is not so classical and easy to drink. I would have liked to try other Tamakashiwas.

This sake was tasted along with the Junmai Ginjo I posted earlier. We were there when the store opened on the first day of tasting and sales, so all the sakes were unsealed, so we were able to sample them in fresh condition.
