Yahiko Sake Brewery in Yahiko Village, Niigata Prefecture. The main brand was "Echino Hakusetsu," but it appears that "Yahiko" will be the main brand from now on. This Junmai Ginjo is also made from Yamadanishiki produced in Yahiko Village, and is a good sake, not fruity, but calm and soft. Yahiko Village is where my mother is from, and I spent a lot of time there as a child when I was sent to my mother's home, so it is like a second home to me. Yahiko Shrine, the first shrine in Echigo, is located there.

Yahiko's regular sake, Aozae, by Yahiko Shuzo Sake rice is Koshibuki produced in Yahiko village. Aozae has a refreshing, watery quality. Aozae is a perfect evening sake without any peculiarities. Yahiko Shrine is the largest shrine in Echigo Province. My mother is from Yahiko Village and I used to stay at her parents' house in Yahiko Village when I was a child, so Yahiko is like my second home.

Purchased at Kintetsu Department Store event, Sake Tour. I compared it with Junmai Ginjo and was impressed with this one, so I bought it. Fresh and citrusy? It is sweet at the beginning, but the sweetness and umami come in the second half of the bottle. I have to admit that I've only seen Hyo Hyohi at department store events. Apparently, the brewery that makes the sake is in Awa City, which is different from the address on the label.

The oldest sake brewery in Fukuoka, Ohga Shuzo, has created a GABAGABAHEY raw sake. At the first sip, the fresh and rich rice flavor typical of nama-shu spreads.
