This Sake is a nice change from what I have been drinking recently. It has a sugary sweetness similar to a ripe muscat. There is a Medium mouth feel followed by a slight dryness at the finish for a clean aftertaste. Delicious. 😋

At home. Sake tasting party with friends after a long time. We brought our own sake. First up was a local sake from Echigo-Yuzawa, a gem bearing the name of the first head of the Shirataki Sake Brewery. The aroma is gorgeous, and in the mouth you can taste the acidity and umami, with a slight lingering alcohol taste. It leaves a slightly bitter or rough feeling in the back of the throat. The Shirotaki Shuzo is known for its Kouzen Nyosui, which has a fuller aroma and taste compared to the Kouzen Nyosui. The bottle was also unusual, with an innovative volume of 630 ml. This is the first brand I've seen and the taste is great. ‼️

Special Junmai sake with 60% polished rice ratio I bought the jacket because of the impressive cartoonish, retro Showa-era "Oniotome" illustrations. The illustration was done by Minako Sonobe. It is made with "Homare-Fuji" sake rice developed in Shizuoka Prefecture. It has a calm aroma and an elegant, gentle taste with a well-balanced flavor, and it tastes great on the finish!

I went to Fukuroi Sake House Yamaya for Kaiun Tachiharu Asashimusubori, and I was able to buy it without reservation every year, but not this year 😅I screwed up 😅. A love that has lasted over two years has been fulfilled. I had a bottle in Ito izakaya two summers ago and enjoyed it so much that I was looking for a bottle to buy someday. I finally met the devil maiden in love😄. It is slightly effervescent and has a rather firm, juicy sweetness, but the mouthfeel is light and cuts through easily. Tonight's sake is a Shiraito Brewer's Nigori sake from the famous Shiraito Shuzo, which I had the pleasure of meeting at the brewery during my trip to Fukuoka in late May. When we visited the brewery, the proprietress and her little son were very attentive to us, and we were very grateful for the free tasting, which they usually don't do 😊 We bought a bottle of one of our favorites, so we're going to open it now 🙌! The rice polishing ratio is not stated, but I think it is more than 70% polished. The aroma has a soft lactic acid nuance that is not typical of sake. The taste is easy to drink with a slight sweetness of rice in the supernatant and umami flavor 😋 It becomes completely cloudy when mixed with a significant amount of lees, but it has a smooth mouthfeel and is more delicious 😋😋😋😋😋.

Tonight, I feel like I've been shvitzing at the gym for two days, but drinking this is a negative rebound, but when it comes to horse mackerel and monkfish sashimi, it's a MUST 🍶. I bought this 💁 at a brewery when I was in Fukuoka. It's Shiraito Sillite 70 ✨. Unlike Tanaka Rokujugo, this sake seems to be distributed within the prefecture, but it is a 100% Yamadanishiki Junmai sake from Itoshima, and when I tasted it, I enjoyed this lowest-purity sake 😋. The sake has a very clear and clean structure, with a hint of sourness from the ginjo aroma of the cucumber, and the rice is sweet and full. The finish is very crisp and very excellent. ☺️ It is best when it returns to room temperature from chilled. ⭕️

@sakebar Fukuzo This sake is from the same Kobayashi Shuzo Honten as the "Hakata no Mori" I posted a while ago. Mandai must be more famous locally 🤔. It will be pressed on the morning of Risshun 🍶. The aroma on the nose is fruity🍍 and sweet. When you take it into your mouth, it has a deep, mild sweetness and umami that is typical for a draft sake, and it finishes with a slight astringent taste.
