Type: junmai daiginjo, rice: Gohyakumangoku 76% Yamada Nishiki 24%, polishing rate: 35%, alc.: 16% Sweet aroma of ripe bananas. Flavor is juicy and sweet. Sweetness is balanced with gentle acidity. Sake is elegant and clean, it almost feels like water from a spring. Finish is lingering in mounth for quite a while.

After returning home, I wondered what to drink and chose "Karahashi" by Homare Shuzo, which I had never had a chance to drink before! It is a junmai ginjo made from Omachi. The first sip gives the impression of sweetness with no sourness. As you continue drinking, the spiciness comes out and the trinity of sweetness, umami, and spiciness comes together, which is just the right balance and delicious. There are other sake rice varieties in the Karahashi series besides Omachi, so you have to try them 😆.

Karahashi label by Homare Sake Brewery. Unfiltered unpasteurized sake made from sake rice Yume no Kou. Fruity ginjo aroma. The aroma of melon and sweetness, followed by a slight sourness and bitterness, finally fading away with a slight spiciness. Although it is unfiltered raw, there is no bitterness or peculiarity, and the impression is of a soft, sweet, umami taste. I had been wanting to drink this for a long time and got a bottle of "Ousai Macho" from Makino Shuzo.... I'm also interested in the other macho series...I'm sipping it with cod roe tempura and black shrimp tempura...I think it goes well with strong-flavored snacks and dishes. [First brand I've been able to drink in about 10 years👍] I got a bottle of Kiri-Tsukuba's light nigori nama-zake (unpasteurized sake) from a hometown tax payment. It is a popular brand that is consumed almost exclusively locally, but it appears that there was some new sake left from last year that will be shipped in December 2022. ✌️ Although it has been over a year, it has not lost much of its freshness with a slight effervescence, and on the other hand, it has a moderate calmness that is quite nice 😋. It has a sweetness, but the refreshing alcohol taste and crispness are the result of the aluzochu liqueur. Like last month's Onra, it's nice to be able to get a brand that is hard to find through hometown tax payment 😆.

Tonight, we have Kirizukuba Hatsushushibori Light Nigori from Urasato Shuzoten ✨ This one is popular with Ogawa yeast users. I was attracted by the combination of Ogawa yeast, Gohyakumangoku, and light nigori, so I bought it 😅. Let's start with the supernatant. It has a rich sweet aroma of muskmelon red flesh, which is typical of Ogawa yeast, and the taste is very delicious as if you bit into a whole muskmelon 😋 Also, although this sake is alky, there is no stinginess in the aftertaste at all, and the bitterness and spiciness show up and the balance is excellent 👍. The spiciness of the aftertaste is doubled when the lees are involved, making it a sake with a different expression. It is a fun sake 🤗.
