It has a mild ginkoku (gin aroma), and a flavor with a moderate thickness that spreads softly. It is brewed with a harmonious flavor in mind.
It is a sake that does not lie in the introduction on the label. I enjoyed it on an autumn evening, well chilled. It is refreshing on the palate, but as you sip and savor it, the flavors come out more and more. I enjoyed it with rice miso, tsukudani (food boiled in soy sauce with plum and laver), and spicy oysters.

This is an original sake created by Ishii Shuzo, the brewer of Toyoake, for the sake project in Toyosu. In contrast to Toyoake, it is a light, silky blue melon with a hint of banana, and while it is silky, it gradually turns tart and finishes with a moderate bitterness. This sake was also given to me by my subordinates as a farewell gift. This is the flagship sake of Ishii Shuzo, a sake brewery that has been cooperating with us in our sake brewing project.
It has a strange feeling of sweetness and bitterness at the same time. There is bitterness in the sweetness, and in the latter half, the bitterness is very strong and sharp.
