I bought this at the brewery's direct sales counter on my GW trip to Nagano! I had a great shopping experience with the courteous staff and went home feeling great! The aroma is what you would call "sake" with a hint of alcohol. It also has a grassy nuance. Immediately after taking a sip, there is a pleasant sourness that lasts until the end. Of course there is sweetness, but if anything, it is more umami. The bitterness is gentle at the end. It has a juicy atmosphere with acidity as if it is made from a sake yeast yeast. Kurosawa is a brewery that specializes in making sake from the "nama-hashiroshi," so I was convinced after drinking it that it was made from the "nama-hashiroshi. I was told at the brewery that the sake has an excellent balance of the four tastes of sweetness, flavor, acidity, and bitterness, and this is exactly what it tastes like. It has a good acidity, but it is not showy at all. It is a sake that goes well with any meal, and I am sure I will become a fan of Kurosawa Shuzo after drinking it. This is their regular product, so they are a brewery of extraordinary quality. It goes well with shime saba (mackerel), salty yakitori, grilled fresh onions, and omelettes! It goes with everything!

Imanishi Sake Brewery is well known for its Mimuro Cedar. I have not seen this sake very often, but I bought it thinking that the sake bearing their name must be very strong. The aroma is subdued, but it is like a rummy. It has a light sweetness and a nice sharpness. It has a slight alcohol taste. Sake from the breweries of Chojamori and Koshino-Kanchubai. I had been interested in this sake for a long time, but I bought it because it was on special price and there was a draft. According to the Internet, the rice is Koshitanrei. I've seen the hi-ire version but only at Ito-Yokado 🤔. I heard it was developed in collaboration with Takaoka National College of Technology, and the 888th sake out of 1200 test brews was so good that they decided to commercialize it. Sourness like wine. It has sweetness but it's not like sake. As the description says, I would like to match it with meat and cheese.

Purchased at Vinos Yamazaki in Kyoto after buying Daina at a liquor store in Saiin After this, I went back to the liquor store on the 2nd floor of the Yaichi main building and to Takimoto - Isetan 😊. I really wanted the Vinos limited edition Isoboast, but the date was a year ago, so I avoided it💦. It's also February 24 😅. I thought about how to read "kunika", "kokka", etc... but when I looked it up, it's "kokkou". Reminds me of Cocco for my generation 🤔. Drink at room temperature. It's lightly colored. Purchased at Yamasho in JR Ashiya station. I mentioned before that this liquor store is based in northern Kyoto and has a wide selection of sake from the Tango area, but they also have Kumi no Ura. It is rather sweet. Muscat and lychee-like flavor. It is fire-brewed but fresh. I'd like to try some of their fresh sake. I'm sure it would be delicious. According to the internet, it's unfiltered raw sake. It's true that it's on the lees for a fire-brewed sake. Sediment is noticeable.
