I can assure you that it is a great sake for sake beginners and light users like myself. Ichinokura is a sake that I consider to be representative of Miyagi Prefecture. Whenever I drink with people from there, it always comes up early on. Some of them say, "I can only buy a limited-edition sake called Shouzumi there, and I always buy it every time I go there! There is also a person who says, "I can only buy a limited edition sake called Shouko there. There must be a lot of fans. Although it is said to be dry, it is not that sharp, and has a slightly above-medium mouthfeel. The dryness is so exquisite that it resets the inside of the mouth and brain every 10 minutes or so, so you can't help but have a second serving. When I opened the bottle, I did not expect it to run down so fast. It made me realize that there are many different types of dry sake, and that you can't judge a sake by its description or preconceived notions. I must try it for myself. It is the image of the sake that grandpa brings out every night at grandpa's house in the countryside. It is not the seasoning or brewing that is popular in 2022, but rather a classic or old school style. It's more like an everyday bottle that is gentle, nostalgic, and reassuring. In winter, warm it up. The aroma is exactly what you would expect from a sake without heating it up. Not too sweet, not too spicy. I won't repeat it, but I learned a lot from it.

Fukushima Aizu has such good sake. Fukushima produces such good rice. I know I talk about Niigata-Niigata, but Fukushima is also a rice-producing region. (I thought it looked delicious from the design of the label, but I was right!) Sweet and light, with a strong fruity aroma and no bitterness after drinking. So I tend to drink more of it... I'll be back for more.

Toyama's sake was also amazing. Phantom Taki. It has a Niigata-style base, which I like, but the sweetness is moderate and the freshness stands out. The sweetness was also surprising with a subtle almond-like aroma. Toyama is a great place! I couldn't help but mutter to myself. And the alcohol taste after going down the throat is gentle and characteristic, as if it had been designed on purpose. (I can't describe this part well, so I need to practice.) One of the recommendations from a native of Fukui Prefecture. I was excited to try Junmai Daiginjo! I was excited, but But it was an old sake with an old production date, and its color was amber (laugh). But it was still tasty enough, refreshing and luscious. Kenbishi. You can buy Kembishi anywhere at a reasonable price. I finally drank it. It's sake, but it's like Shaoxing sake. What is this mellowness? It has a sense of maturity like a brandy.
