It is a very crisp junmai sake with a good acidity level. It has a rich and expansive flavor. It is more crisp when heated. When heated, the umami is moderate and you can taste the astringency. I served it with chilled tofu, and it really brings out the flavor of the chilled tofu. Even if you don't serve it with cold tofu, you can still enjoy the taste. The purpose of my visit to Kawanishi Sake Sales was this. Although it is not written on the label, the sake was labeled as unfiltered raw sake at the store. Unlike the label, it is fruity and modern. It has a refreshing and light taste, but the second half is a bit dry. It has a slightly gaseous taste. It is a bit like Eiko-Fuji, but a little spicier. Comparison of nigori sake from Wakayama's favorite brands (1) We compared nigori sake from two of our favorite brands, Minakata and Chokyu. First, let's start with Minakata 😄. The first one has a fresh and fruity aroma like apples and a strong fizzy feeling. It has a full, sweet flavor and a crisp, refreshing taste, and is just as delicious as one would imagine 😍. It's been quite a while since I've had Nanpo, but I don't remember it ever being out of place and I think it's a good brand with a high level of quality 😁.

The first Minakata I've had in probably 3 years, given to me in a 300ml bottle ☺️The 4-pack bottle has a picture of Minakata Kumagusu and the brand story on it, but with 300ml there's no room for that... 😅. It has a thin banana 🍌 aroma with a slight tang of alcohol behind it. After a slightly sweet attack, the aftertaste is a good mix of bitterness, sourness and spiciness. The aftertaste of bitterness lasts quite long. It will go well with both meat and fish without any conflict. The quality of the sake is similar to Kido's Junmai Ginjo. Is it because it is a sake from Wakayama Prefecture?

Saitama Pref. Iruma-gun. Asahara Sake Brewery Co. Biwa no Sasanami Junmai Namaisake. I went to buy the pre-sake I wanted, and since that was the only sake I was sorry to buy, I bought Saitama sake, which I rarely have a chance to drink. When I was trying to decide which one to buy, the owner laughed at me at the cash register, wondering why I was looking at the back label so much. I told him I don't like anything too spicy, and we chatted for a bit. I had it cold. When we poured it into the glass, there were quite fine microbubbles adhering to it. It is clear with a faint yellow tinge. The top aroma is slightly malty and slightly apple-like. The mouthfeel is juicy, full, and smooth. The palate has a slight sweetness from the rice on the tongue and a mild acidity that flows gently through the mouth. The juiciness is followed by a refreshing taste. It has a malted rice aroma that spreads when it passes through the nose. The aftertaste is a bitter and bitter taste with a slight spiciness that lingers for a short time. In preparation for the upcoming season, I bought a copy of Nonbei Yokocho, which I also saw at Sake no Wa ✨. We also bought a cup of sake at a nearby liquor store to check the operation and had it hot ✨. Sipped at room temperature, it is a refreshingly spicy sake with a deliciously mellow flavor. Warmed to lukewarm, it has a tingling sensation on the tongue. Hot-warming lightens the taste and makes it refreshing to drink! I have had hot sake before, but I was indifferent to the brand and taste and drank it with the mindset that the alcohol would not linger the next day, so I would like to taste it this year 🥰.

Next, the fourth type of Vine Dining's "Limited Quantity, Autumn Sake" is "Hiyakomae Hiyaoroshi Junmai Ginjyo Nama Ippon" (Hiyakomae Hiyaoroshi, Junmai Ginjyo Nama Ippon). Stopped by Ozawa Sake Brewery and went to a nearby store. I was attracted by the introduction of "sweet and fruity" and bought it. The drink was sweet and refreshing, and was very easy to drink because it did not leave a lingering aftertaste. The Yaezakura sake I had previously received from Izumikin Shuzo had a similar freshness. Yaezakura was impressive for its acidity and sharpness, while Soten was simply sweet and refreshing. Souten, on the other hand, was sweet and refreshing, and I felt it perfectly matched the image of a clear, flowing river.

I bought this alcohol as a tie-in to the No.6 x type direct pass 🍶. It wasn't exactly the sake I wanted, so the bar was low, but I was surprised when I tried it: ‼️ It is one of the best tasting sakes I have ever had👍. Fruity aroma typical of daiginjo 🍌. It has a good umami taste, a nice acidity, and no bitterness 😀. I'm glad I found a good sake that I like (^...^)
